Baked Garlic Parmesan Fries

Healthy baked garlic parmesan fries! SO crispy and they taste fried!So in our family, potatoes are a big deal. I’m half Norwegian and it almost seems like a civic duty to love potatoes. I kid you not when I say that potatoes are my dad’s all-time favorite food and that making him happy is done by just handing him a potato dish. He’s a simple man.

And now I just spent 15 minutes going through all my photos to find this gem:

Yes, the man is sitting on the couch, relaxing, and nomming his way through a cold baked potato from last night’s dinner. Plain. No sour cream. No butter. No salt. But his happiness level is through the roof and I can’t help but laugh out loud whenever I see this picture. 

Really, with all this potato-heritage I’ve got going on, it was only a matter of time till I came up with a healthier version of french fries. And VOILA!

Beautiful, crunchy, garlic-y, parmesan heaven. These thick-cut potato fries are just as crispy as their fried counterparts and ohmygosh just bursting with flavor. Honestly, I almost can’t believe that these didn’t come out of a deep fryer! 

The secret behind the insane crunch factor is sprinkling the uncooked potatoes with a bit of sugar. Weird, right? Well, it must be osmosis, because the potatoes sweat out all their liquid which means extra crispy fries!

Oh, but one quick thing. These are best eaten hot fresh out of the oven (I mean, what isn’t?) for maximum crispiness. They taste great the next day as well, but don’t have the same french-fry like texture to them. Eater beware!

Weekend Recap: Workouts, Food, and DIY Project

Hi, friends!
So it’s the end of the weekend and I’m heading back up to Santa Barbara to start a new quarter of school. It’s been such a nice break and I found a nice medium between relaxing, catching up with blogging, working out, and spending time with friend and family.

Here’s a quick picture-saturated recap of my weekend!

Workouts with this handsome guy! We were really good about getting to the gym and went five times in the last week. Five days of intense cardio+weights are making me enjoy today as a rest day even more haha!

After lunch, Kyle and I headed over to Home Depot to pick up some supplied for our project. I’ve had my eye on making a faux table for my food photography that’s similar to the one that Lindsay from Pinch of Yum has for a while and finally got to making it. 

Here’s a picture of Lindsay’s board and I’ll put up a picture of our final product soon! It turned out SO well and I’m completely smitten by it! I feel so lucky to have a handyman to help me with my blog projects :).

Kyle’s family keeps chicken and geese in a small barn in their backyard and I always have a fun time playing with them when I go over. If you can actually “play” with chickens haha. It’s almost bizarre how docile their chickens are, they stand by you waiting for you to pick em up and pet them!

Dark Chocolate Brownies with Peanut Butter Frosting

Can we just take a look at these for a second, please?

Actually maybe we should take a few minutes. Or hours. I could stare at these babies 4eva. 

Gooey. Stuffed with big chunks of dark chocolate. Topped with the most delicious peanut butter frosting you’ve ever had! Seriously, I could swim in that frosting and probably ate a good quarter of it straight out of the bowl before topping the brownies.

It’s a frosting-casualty that I’m willing to sacrifice.

You know, me and brownie go waaaaaay back. They probably come in second as my favorite dessert (apple pie will always hold the gold medal in my heart), and I ain’t no brownie snob either. Give me a pre-made box of brownie mix and I’m as happy as a clam. A clam with brownie batter smothered all over its shell. What am I talking about again? 

Oh yeah, these.

They’re made entirely from scratch, but come together ridiculously quickly. I can probably have the batter done in less than 10 minutes, and that’s with me stealing bites every 4 seconds. Yes, that’s right. 4 seconds to be exact. The base layer of these gorgeous little love bites comes from Something Swanky. I found her recipe off Pinterest (also you should follow me so you can see all 9 million recipes I’ve pinned) a few months ago, and don’t think I’ll ever use another brownie recipe again. Thick, fudgy, and with big ol’ chunks of chocolate. What more could you possibly want? 

And now I really need to get back to talking about this frosting. I want to spend all of my waking hours combining butter and powdered sugar and peanut butter and happiness and then eat it out of the mixer with a spoon the size of my face while watching Game of Thrones on the couch. Very specific, I know, but that’s my dream in life.

It’s just so light and fluffy and perfectly sweet that I can’t even handle it. I just want to nosh all over it SO HARD. And you will too, once you try it.

The Pros and Cons of Fitness Trackers

She contacted me with a request to guest post, and wrote up a great article about the pros and cons of fitness trackers! Being an avid iPhone app user myself, I got a lot out of reading it :). Great things to consider!

As you may have noticed in browsing through the app stores on your smartphone, there are numerous apps out there that can serve as fitness aids. How (and how often) you choose to use them, however, can be of concern. Personally, I find it difficult to keep up with some of the apps that require you to, say, input every single thing you eat as a means of tracking calories. While it certainly can be useful, there’s also the almost-nagging element of it all. “If I really want to exercise, why don’t I just do it?” I often think to myself, scrolling through the apps that promise to help me stay motivated. It can clearly work for some people and for some companies.

In referencing both, there are studies that show fitness apps definitely have a market—and a growing one at that. To that end, it’s not terribly surprising to see that new smartphones are taking advantage of the health-centric craze.

In particular, there’s Samsung’s upcoming Galaxy S5, which comes with a built-in heart rate monitor and activity tracker. That’s the word according to Verizon Wireless, which makes note of how the tracker will follow your steps, keep up with calories burned, and allow for the gamification of exercising. For those unfamiliar, gamification refers to how certain apps have introduced video game- like qualities to something far removed from that context. In this case, you’ll earn “badges” on the GS5 app based on your exercise routine. For those who have used activity tracker RunKeeper, it sounds like it’ll be similar in its approach in that you’ll get a virtual pat on the back for your longest run, most calories burned, and the like.

But does this approach work? To that end, I ask, “What about those of us just wanting to exercise every day without worrying about anything else?” It’s a question I’ve been pondering lately, and one that I’ve decided to finally answer today after doing some research and trying out many of the available apps myself.

In my opinion, here are the pros and cons of fitness trackers:

Pros

1. They take care of any possible guess work – This probably seems obvious, but it needs to be mentioned. Unless you have come up with your own formula to track how many calories you’ve burned, distance you’ve traveled, etc… you’re going to need one of these apps.

2. They keep you motivated – Going beyond mere fitness trackers that, well, simply track your movements, there are some that really make sure you’re exercising. Take GymPact, for example. It’s an app that you can actually earn money (albeit in nominal amounts) from working out. Your bank account can also take a hit if you don’t exercise.

3. They’re intuitive – Again, there are definitely more complicated apps out there that can be a pain in the rear end. But something like the aforementioned RunKeeper app, which tracks more than just running, keeps up with your activity and the calories you’ve burned with just the touch of a few buttons. It’s not exactly rocket science.

Cons

1. They can feel like work – Getting back to the comment from Adam mentioned earlier, this is where apps really fall flat for some people. Again, if you’re just trying to exercise without adding anything to it, chances are you’ll give up on an activity tracker.

2. They drain your battery – Another common gripe with these apps is that they can suck the battery life out of your phone. This is particularly true if you exercise for a long period of time and have music playing through your phone.

3. They can cost money for the best options – A majority of fitness apps, especially the best ones, can be yours for free. However, if you want to get the most out of them, you may need to throw down some cash. There are those that cost money upfront, too.

If you haven’t caught on by now, this whole debate really boils down to whether or not you feel like you need to monitor any portion of your activity. If you are the type to run and/or bike the same route every day, you probably already have a good idea of how far you travel and maybe even the calories

The beauty of this recipe comes with its simplicity. You take a bunch of fresh and healthy ingredients, throw them together, and you’re bound to end up with something good! Adding a small but tastebud-worthy twist comes with roasting the asparagus with garlic beforehand, giving the dish an extra flavor boost. 

And I mean, seriously, could healthy comfort food get any better? Cheesy goodness blended with savory chicken and an extra crunch of texture from the garlic-y asparagus.
