What I Ate Wednesday…

Hi friends!

Sorry to be MIA these past few days. I’ve been busy doing photography-related things and spending my evenings with Kyle and so I haven’t had time for blogging. I notice that when I don’t blog for a while, I end up losing my passion for it and it’s always harder to start up again. I’ve been writing here for around three years now, and sometimes I feel like there isn’t that much for me to talk about or I’m in a funk with cooking and don’t feel like having my food ready at 5:30 p.m to get that pretty lighting for photos.

To combat those sentiments, I’m writing a WIAW post. I haven’t participated in What I Ate Wednesday for months, but there’s something about sharing my daily eats that gets me more excited to share actual recipes. They also meld together the day-in-the-life rambles that you guys have asked me to post more of and food (<3), so it seems like the perfect fit! If you guys like, I can make this a weekly shebang!

Breakfast: gala apple + pb

I wasn’t too hungry when I woke up this morning, so breakfast was super light. I’ve been going through an apple and peanut butter obsession and I’ve been eating at least one apple a day. I’m currently working through a jar of crunchy pb, but it’s not my favorite. Smooth for the win!

WIAW: A Day in the Life

Ayooo party people. It’s Wednesday! Halfway through the week… I’m pretty thankful that the days seem to be flying by! While this year is a bit academically easier (no more physics/ochem/bio/labs at one time), I feel like I’m constantly running around and juggling to balance school/friends/the blog/and my new job.

Anywhoooo, one thing that makes Wednesday a little more fun are all the What I Ate Wednesday posts by my fellow bloggers. Here are some of my eats:

My alarm rudely woke me up at 6:40 in the morning and I stumbled to the bathroom and took of some smeary eyeliner from last night (oops), put some makeup/clothes on, and made my way downstairs to get my boots on and went off to meet Kyle at one of our local coffee shops. They were having a special for $0.50 lattes (OMG!), so we knew we needed to fuel up with some espresso to fuel us through our 8 ams. I got an [unpictured] medium one with an extra shot of espresso for a bit of a kick.

After a loooong molecular genetics class, I grabbed a brown sugar crumble oatmeal from Jamba Juice and spent some time working out practice problems for said genetics class. An hour later, I was off to a free hour-long tutoring session. Lunch followed quickly after and consisted of a chicken salad with sweet onion dressing from Subway.

I had 15 minutes to eat before I had to bike over to my psych class. I swear all my classes are on opposite ends of campus, so I’m biking 25-40 minutes each day. At least I’m getting my workouts in! After getting back home from psych, I took a much needed nap to get some rest in while I waited for the lighting got a bit better to take photos of one of my new favorite recipes- Chocolate Chip Cookie Baked Oatmeal. YOU GUYS. It’s to die for! Recipe will be coming soon :)

Besides stealing a few bites between shots, I snacked on a delicious plum from the Farmer’s Market while editing the photos.

An hour or so later, Kyle brought over some asian-style salmon, rice, and salad for dinner before we drove off to the library for a hot date. Before leaving, we picked up another latte from the same coffeeshop. It almost felt like a crime not to since they were 50 CENTS EACH. I REPEAT. 50 CENTS!!! If you can’t tell, I was just a little excited about it.

So there ya have it! I’m currently typing this up in the library as a way to take a break from studying. I’ll probably have some sort of sweet treat before bedtime to round out the night.

Let’s Catch Up/WIAW

Hi friendly faces! Long time no chat. 

I had a super relaxing weekend, but screwed myself over slightly because this week has been jam-packed with work. I had a prelab and lab report due today (along with my 4 hour lab) and juuuussttt finished writing my final essay for my comparative literature class. My final for the class is this Thursday, so I’ve been studying a bit when I’ve had the time.

I went home for the weekend…

Lots of relaxing, hiking, playing with Kyle’s chickens, and working on my photography. I’ve decided to try my hand at actual people photography (don’t worry, my first love will always be taking copious amounts of food pictures) and Kyle was nice enough to pose for me while I worked on my lighting and composition. I have to admit, taking pictures of boys is no where near as fun as girls. No feminine poses or tossing long locks of hair in the sunset with this one 😯 . If anyone has any advice on portrait photography/editing, I would love to learn more!

Breakfast: 

Oats cooked with cinnamon and vanilla extract and topped with brown sugar.

Lunch:

Kyle and I met up for lunch and split a Panda Express feast. I know Panda isn’t “authentic” Chinese, but myyyy gooodness. I could eat orange chicken all day long.

Dinner: 

Since I had a busy day and was working on my essay, Kyle cooked up dinner. He made a quick lemon chicken pasta and cut up some lettuce for a side salad. Yum!

WIAW: Not Feeling It

Hello friends! Happy Wednesday. 

Today’s post is going to be short and sweet because I’m exhausted and feeling stressed and kind of overwhelmed at the moment (to put it lightly). I have finals next week and have my stats test Monday and my physics, ochem, and bio exams in a row on Wednesday-Friday. The thought of how much friggin’ material I have to learn and review is making me feel sick to my stomach. 

On that fun note, onwards!

Breakfast:

Hold your horses- big change up here from the usual brown sugar banana oats! I added blueberries and pecans! Try not to get too excited.

Lunch:

Not super proud of this one. Lunch was a big bowl of Honey Bunches of Oats and a can of plain… tuna 😯 . I didn’t even bother to put in it a bowl, just ate it with a fork straight out of a can. Partly because my housemates don’t do their dishes (can you tell I’m in a pissy mood?) and partly because I’m a college kid and don’t need to keep up real-people appearances. I’ll spare you a picture since it looks like cat food. Meow.

Dinner:

The good stuff! A Thai tea and pineapple fried rice because I had just taken a demoralizing test and needed to eat my feelings out.

Overall I’m feeling kinda blah. I haven’t gone to the gym in over a week since I’ve been so busy with class and studying. Kyle and I were at the library from 5 p.m till almost 1 in the morning yesterday night and my legs are ITCHING to move. I might treat myself to a workout tomorrow if I can.

OH! And exciting news as of today. I had two recipes from Apple of My Eye featured on The Huffington Post (!!!!!!!!!). I die. This means I can be a full-time blogger now, right? 😉

Anyways, off to do more work. Hope you’re having a good week so far!


WIAW: Eats and Octopus Fun

Hi friends! How is life going for you?

This quarter has been flying by for me (a good thing, the sooner this year is over, the better!) and it’s time for yet another rendition of WIAW. Eats lately have been decent, but a bit rushed and I haven’t had too much time for cooking.

Breakfast:

Brown sugar banana oats. Are you tired of seeing this picture and breakfast yet? Confession: I recycle pictures of my oats and other foods I eat regularly because I ALWAYS end up getting food on my camera. And because it’s hard to whip out a photoshoot when I have yummy oats sitting right there with melty brown sugar. And because my camera battery is hardly ever charged over .0052%.

After breakfast I biked over to our local gym to get in a quick workout. I didn’t mention it on AoME, but last week I got a pretty nasty cold and that, coupled with an ochem midterm I had on Monday, left me with zero motivation to work out. I did a quick 25 minuted of cardio before a leg workout and am definitely feeling it everywhere in my body haha. This girl will be sleeping well tonight!

I finished my workout and went to my physics lecture before grabbing some lunch in the 45 minute break I had. I was planning on going with a sandwich from Subway, but our university center was overflowing with visiting high schoolers and the lines were ridiculous. I opted for a build-your-own salad since the line there was much smaller.

Since salads never keep me full after a hard workout, I also got a double shot latte and a Fiber One bar to have along with it.

After lunch I had a section for my stats class, followed by an unsuccessful trip to the molecular biology counseling office to figure out some nitpicky things about my schedule next Fall. Then, it was home for a small break before I had to go to my lab. 

Luckily, it was a fun one that involved playing with some sea critters and a squid dissection (interesting) and a worm dissection (not so interesting). The dissections weren’t too in-depth and went by smoothly since I had done other more tricky cat and pig dissections back in high school. The highlight was definitely holding an octopus, though. They feel SO bizarre and I couldn’t help but squeal the entire time, hence the scrunched up shoulders haha.

After lab, Kyle and I picked up some Freebird’s nachos to split along with fresh strawberry lemonade to share. SO GOOD. SO MUCH FOOD.

And as of now, I’m snacking on some coffee and dark chocolate while doing some studying. Brain energy!
