What I Ate Wednesday…

Hi friends!

Sorry to be MIA these past few days. I’ve been busy doing photography-related things and spending my evenings with Kyle and so I haven’t had time for blogging. I notice that when I don’t blog for a while, I end up losing my passion for it and it’s always harder to start up again. I’ve been writing here for around three years now, and sometimes I feel like there isn’t that much for me to talk about or I’m in a funk with cooking and don’t feel like having my food ready at 5:30 p.m to get that pretty lighting for photos.

To combat those sentiments, I’m writing a WIAW post. I haven’t participated in What I Ate Wednesday for months, but there’s something about sharing my daily eats that gets me more excited to share actual recipes. They also meld together the day-in-the-life rambles that you guys have asked me to post more of and food (<3), so it seems like the perfect fit! If you guys like, I can make this a weekly shebang!

Breakfast: gala apple + pb

I wasn’t too hungry when I woke up this morning, so breakfast was super light. I’ve been going through an apple and peanut butter obsession and I’ve been eating at least one apple a day. I’m currently working through a jar of crunchy pb, but it’s not my favorite. Smooth for the win!

Morning Snack: plain Japanese yogurt

My mom introduced me to this yogurt and it is to die for. I’m not even sure what makes it taste so good, but it’s much smoother and lighter than American yogurt and is perfectly sweet. I topped mine with vanilla almond granola and am trying to restrain myself from eating multiple a day since they are pretty pricey.

Lunch: one-pot lemon garlic shrimp orzo

Here’s a preview of a recipe that will soon be coming to a blog near you! I need to make a few adjustments to it to help keep the asparagus from over-cooking and reducing the liquid by juuuuuuuuuust a tad, but overall I love the flavor! And the fact that it’s made in one pot? YAAAAASS.

Around 6:20 in the evening, I left my freelance work and editing photos to go photograph a senior portrait/couple session. I had the best time and left feeling inspired and with a rejuvenated heart! There’s nothing like doing what you love with fantastic people.

Dinner: sukiyaki and rice

Dinner was another ode to my Japanese side in the form of sukiyaki, or as I like to say, sukiyummy 😉 . It’s essentially a kind of medley of vegetables and meat in a salty-sweet sauce that you eat over rice. I had one of my green tea lattes to go with it!

Evening Snack: Japanese  yogurt

Evidently, I don’t have an ounce of self-control because I ended up eating another one of my Japanese yogurts with granola. I can’t help it and foresee a trip to the Asian market in my near future since I am officially addicted.

So there ya have it! A full day of eats. I’m already feeling like I’m getting back into my blogging groove and am excited to share my new one pot wonder with you guys on Thursday! Woo!

    Welcome back :)! I hear you on falling out of the blogging groove when you don’t have time to post much for a while. It can really be hard to get back into it but like you I feel WIAWs are a good way.
    Unlike you, I’m team crunchy PB -but- I’m very specific here. I noticed some peanut butter is crunchier/has bigger chunks than others and I only like a certain kind ;).

    Welcome back! I’ve been feeling a bit less motivated on the blog front lately. Maybe it’s a summer thing, cause sitting at the computer just doesn’t sound as fun when it’s bright and sunny out!

    I much prefer creamy PB over crunchy, too! Every time I have crunchy peanut butter, I feel like someone just accidentally missed a step in the process haha.

    And those yogurts sound super yummy- what a healthy after-dinner snack!

    I go through the same feelings when it comes to not blogging & then trying to start back up again. It’s hard to get back into the swing of things.

    I’ve never heard of Japanese yogurt before. I wonder if they sell it here in Kuwait. Heck, I wonder if theres even an Asian store here. Hah!
