Sweet! Salty! Gorgeously grilled pineapple and juicy chicken that’s been marinated in a teriyaki-like sauce. I die.

After running my half marathon on Saturday, there was nothing I wanted to do than sit back, put my feet up, and flip through some cook books to help get my brain turning on some possible recipes to create. I knew I wanted to fire up my new grill and host a small BBQ, but was at a loss at what I wanted to create. The classic burger combo was a given, but I wanted something a little extra special! After seeing a gorgeous photograph of a pineapple and knowing that you can’t really go wrong with anything that has sweet and salty flavors, I started to throw together some of my favorite asian ingredients to make these Hawaiian Pineapple Chicken Kabobs!

On Sunday around noon, I went through my pantry and put together a combination of soy sauce, fresh garlic and ginger, brown sugar AND honey (because you can’t go wrong with any of those ingredients), and some other yummy flavors and marinated a good amount of cubed chicken for a few hours. We got lucky with the weather (it’s been surprisingly drab for Southern California) and it was a gorgeously sunny day and the sound of the crashing waves in the background made for the perfect BBQ soundtrack!

After the chicken and marinade had some time to get to know each other, I had almost too much fun skewering the chicken, bell pepper, and pineapple together before handing off a big platter of them to Kyle. I’m lucky that I have a mechanical engineer who helped me (aka I watched him do all the work) assemble my awesome new grill and got it all heated and ready to go!

Within a few minutes, we had dinner ready to go and a group of our friends were digging in to the kabobs, rice, and salad. The perfect Sunday afternoon if ya ask me!

    Funny story I was working on a Hawaiian Chicken Recipe last night going up tomorrow. Great minds think alike I suppose. PS I love grilled green onion. I don’t know what it is but I can’t ever seem to get enough of it.

    OH my gahhhh. First of all, congrats on finishing the half!! Second of all… love kabobs. They remind me of growing up and my dad grilling up some chicken aaaand summertime of course.

    I love grilling everything during the summer! And these pictures are absolutely gorgeous. I love that when you got back from your first half marathon you wanted to put your feet up and flip through recipes :)

      In my mind, grilling and summer go together like two peas in a pod! And yup haha! Anything that didn’t require moving sounded pretty darn good to me 😉
