Hey guys, happy Wednesday! I’ve been slacking lately on keeping up with What I Ate Wednesday every week, but I’m hoping to change that. Without further ado, here’s the daily noms!
Greek yogurt with tons of fresh fruit before I headed out to the gym for a meet-up with one of the personal trainers there! I actually had a pretty cool experience talking to him and am excited about some upcoming advancements in both my health and fitness education. More on that at the end of the post!
Snackage:
No utensils needed! Go on and just stick your fingers right up in that good goop. Wahoooo!
Lunch:
Kyle and I went to a Thai restaurant for our midday meal and got the usual Beef Pad Thai (OMGSOGOOD) and ordered the chicken fried rice as well. We’re a pretty good sharing team and have switching plates down. A Thai iced tea on the side, of course!
That meal REALLY did me in. I’m basically a baby in that as soon as I eat a big meal, it’s nap time and I get cranky. I honestly don’t even know how Kyle puts up with me sometimes haha.
Post-Nap Recovery Ice Cream
That’s a category, right?
Dinner:
Miso-glazed salmon with brown rice and sautéed asparagus. Yum.
So now that you’ve seen my entire day’s eats, we’re basically bffls for life right? Wait, best friends for life for life? Whatever. We be rollin’ like peanut buttah and jelly, yo.
SO. Back to my day at the gym. Since I just joined up a new one, I get an initial evaluation of fitness goals along with a free personal training session. I’m really lazy about contacting someone about actually using them, so I was lucky when a personal trainer approached me yesterday mid-walking lunge. I felt extremely flattered when he asked me if I competed since I’ve never really considered myself that strong or toned looking. Anyways, he was pretty eager to set me up with an appointment to do my evaluation, which is what I did today. We had a great talk ranging from the importance of strength training for bone density (don’t even get me started, I can rant for hours about it), getting certified as a personal trainer, and even theories about the existence of God/religion in general. It was a pretty deep talk for only having met for 5 minutes the day before haha.
He offered to give me all his study supplies/text books for basically every certification that exists, which is awesome since the tests themselves cost a bundle. His passion for his job is astounding and I had a wonderful time talking about subjects that really speak to myself as well.
I also had a body fat percentage test done, which turned out really interestingly for me. I’ve gotten one done before, and was a bit dismayed over my results, which placed me as average. While I didn’t get caught up over it, I expected to have been placed at least in the “athletic range”. However, as he was taking my measurements he exclaimed that my skin is extremely thick (weird, I know) and so the numbers he was getting were no where near correct. I’ve never noticed it before, but he had me pinch my skin and then his and he’s right, I’m a freak! Woot!
It was exciting to find out that I have a much lower percentage than what my previous results told me :).
So feel free to hurl your insults at me because I literally have thick skin!
What was the best thing you ate today?

You never know what you’re going to get with machines measuring your body. My scale can alternate a few pounds in a matter of 30 seconds!
I love slow churned ice cream! It’s so much lower in calories, but without any weird artificial ingredients
Christine says
I know! With all the advancements we’ve made in technology, there’s still so much inaccuracy!
Haha exactly! I justify it by eating twice as much 😉
Sarah @ Sweet Miles says
That looks delicious!! Thank you now I’m STARVING Way to go on the lower numbers though! That’s always exciting!! And thick skin can’t be such a terrible thing
Christine says
It was so good! Haha I know, if that’s one of my biggest fitness problems, so be it 😉
Lisa says
That Pad Thai looks all kinds of delicious! Interesting on the body fat percentage, I’ve never had mine tested before. Best thing I ate today was Breakfast:)
Christine says
It was so good! I love sweet and salty combinations :).
Eating 4 Balance says
That’s so interesting about having thick skin and it affecting your body fat percentage. What a great surprise! I bet you are one of the few people who walk away from those things happy 😀
Love your sign off 😉
Christine says
Haha I guess I’m just that weird outlier! haha thanks for noticing ;). I was wondering if anyone would catch it!

I’ve been dying to try that pb!
Christine says
It’s so good! I hear it’s at Walmart now

Isn’t that Light and Fit Greek yogurt amazing? I love the vanilla flavor. I swear it tastes like frosting!
Christine says
It’s the best! My favorite greek yogurt by far. Sorry, Chobani, you have nothing on Light and Fit! The vanilla flavor is my go to one!
Beth @ Mangoes and Miles says
Congrats on a lower body fat percentage…or thick skin? That sounds so weird, hah. Sounds like you two had some pretty deep conversation–it’s always nice finding complete strangers who you can talk forever with!
Also, this: “That meal REALLY did me in. I’m basically a baby in that as soon as I eat a big meal, it’s nap time and I get cranky.” –> Exactly. Me. It’s wonderful, because I just ate a ton of good food, but so terrible for everyone else around me, haha.
Christine says
Haha I know. I’m so weird :).
YES! I’ve found someone who’s the same in that regards as me haha. We both sound like such wonderfully pleasant people to be around 😉

Pad Thai! Oh man, one of my biggest weaknesses for sure!

Delicious!

I love that ice cream. YUM. And it looks like I seriously need to get my hands on some of that PB! I love that you’re not letting the % get to you. I always tend to obsess over numbers, and I need to be told that they are not always an accurate representation of health! Thanks for the reminder (:
Christine says
Both the ice cream and PB are so good! No worries girl, I think it’s easy to fall into the number trap. It’s one of the main reasons that I never weigh myself!
Brittany @ DulceVie says
Ooooh my gosh that icecream looks so good! Have you ever heard of Artic Zero’s icecream? It only has 150 calories and 0g fat for one pint. I have yet to try it, but it sounds amazing
Christine says
I have actually! I’ve never tried it but I’ve seen it at a local grocery store. I’ll have to look into it

Okay, so many amazing things here, so I gotta make a list:
* That breakfast looks amazing! I’m so jealous of your CA produce.
* Thai iced tea and pad thai sounds like the BEST LUNCH EVER. I used to work at a Thai restaurant and the food was insanely amazing.
* Your boyfriend kind of looks like Zac Efron!
* As far as I’m concerned, cookie dough ice cream is the only kind of ice cream.
* I have always wanted to get my BF% tested! Did he use calipers?
Christine says
I’m so glad someone can understand my obsession to thai food! Argghh so good!
Hahah tell me about it! I’ve ALWAYS thought that Kyle looked like him and he also gets compared to Clark Kent (Superman) a lot. He doesn’t mind that one bit ;).
Yup, he used calipers! It was really quick and easy.

You look adorable nomming on that Thai food, love the necklace I am also somewhat obsessed with body fat and muscle percentage. My boyfriend and I bought this ridiculous scale that sends a wave through your body when you stand on it and supposedly this measures those for you based on the amount of time it takes to travel to the top of your head and back. I’m not sure if it’s actually legit, but the numbers make sense and I’m currently working on decreasing my fat and upping my muscle, duh I suppose everyone works on that. Congrats on joining a new gym, that’s always very exciting!
Christine says
Thanks girl! It was a present from the sister :). That sounds so weird! I guess if it works, don’t question it 😉
Ttrockwood says
Body fat testing with calipers or a “pinching” device is notoriously unreliable and more likely than not incorrect. The best most accessible way to meaure is actually stepping on something that looks like a scale and sends a low level electrical current thru your body. Some doctors now have them.
