Breakfast: a bowl of greek yogurt, cottage cheese, grapes, strawberries, blueberries, almonds, and granola!

DSC_1065Snackage: a delicious and fairly nutritious oreo shake made with a new and exciting find: healthy cookies that don’t taste like poo! And trail mix from Trader Joe’s. Cashews and bebeh PB cups are my JAM!

Marvelous in My Monday #1

Marvelous is learning more about photography!

I bought the eBook Tasty Food Photography from Pinch of Yum and it has been a godsend in terms of explaining how to improve my photography and how to properly use lighting and props. I just started putting some of the thing I’ve learned into action (see my photos below!) and I can already tell that it’ll improve my pictures drastically! I had no idea how much of an affect using the manual setting on your camera can have and am excited to put my Nikon to good use.

Marvelous is the fabulous inspiration and ideas that come from Pinterest! I may or may not have already coerced Kyle into agreeing to bake me one. Seriously. He agreed to do it. All of us definitely deserve a cake and pampering when Aunt Flow is tearin’ up our house haha.

Marvelous is new workout clothes!

I’m still in love with my pair of Nike Frees and the addition of my two new Lululemons make me a happy camper. Anyone else as obsessed with cute athletic wear?

Marvelous is roasting up a kabocha! I’m half Japanese and kabocha has been a part of my life for a while now. I never get over how delicious it is, though! A drizzle of olive oil, salt, pepper, and diced garlic is all it takes to make these perfect little bites of heaven. They make the perfect side or snack and a quick recipe with roasting time will be up soon!

I’m grateful that the change has gone relatively smoothly and I haven’t had any problems since the first couple of days! I’m so happy with the layout of Apple of My Eye and feel like it expresses my personality pretty darn well :). Also, a couple of you have expressed interest in moving from wordpress.com to wordpress.org (a.k.a self hosting) and the graphic design behind my blog. I’m in no way an expert about either, but if you need some help, I can try my best to walk you through it! Feel free to email me at christineskari@gmail.com for any reason :).

{Healthier} Roasted Almond, Dark Chocolate, and Craisin Cookies

Let me tell ya, this fitness lovin’ and nutrition preachin’ diva has a sweet tooth.

Healthy breakfast or pre-workout cookies that taste great!

I’m a firm believer that chocolate and sweets are good for the soul and that a healthy diet isn’t complete without them! When it comes to my health, I’ve managed to keep my head on my shoulders when it comes to my body image and my relationship with food- something I attribute largely to not depriving myself or labeling certain food groups as “bad”. That being said, I jump at any opportunity to create healthy recipes to keep my body properly fueled and at its best. When I whipped up these cookies, I knew I had a winner!

Kyle even prefers these to the sugar-ladden Reece’s peanut butter cup cookies I made him sample (hard life for that guy). Man-approved!

I was lucky to get them into the oven since the cookie dough was so good, but I’m  loving the final product as well! The majority of dough is made from 100% whole wheat flour and good ol’ fashioned oats, which provide a good source of fiber and leave me much more satisfied than a normal cookie ever would. Not to mention the dark chocolate and craisins work in perfect harmony to create a sweet, but not overly so, healthified treat! DSC_1075 I usually don’t eat anything out of the ordinary before lifting or cardio, but I’ve gotten into the habit of eating one as a snack before my workouts and I’ve noticed a definite increase in energy and more motivation to get my sweat on. Plus, eating cookies just makes me plain old happy :). So, let’s get to the recipe!

Lululemon Haul & 4th Of July Fun

Hey guys! I’m back from my mini vacation and I had a great time! Prepare yourself for a photo dump!

Lucky girl!

Kyle and I drove up to Santa Barbara for a 4th of July party with some friends and had a great time catching up and celebrating! There was a good amount of traffic, but we made it up just fine.

Being the party animals that we are, Kyle and I were in bed and fast asleep by 10:30. What can we say, we’re old people at heart ;). The next morning we got up and ready casually and headed down to eat a continental breakfast. I kept it simple and had some oatmeal, coffee, and fruit. How good does that oatmeal look? I love me some raisins!

IMG_2681 IMG_2682After breakfast, we headed down to State Street so I could use a Lululemon gift card that I had gotten. Let me tell you, I used that card and more. Let’s just say my wallet won’t be thanking me ;). It was too hard to resist all their glorious workout clothes and I felt like a kid in a candy store! Luckily for me, I have the best man in the world who patiently waited an entire hour for me and helped me make the hardest decision of my life: what color top to get. I reallllllyy wanted a top in orange, but they didn’t have my size with the No Limits tank. I ended up going with a striped blue one after a long debate with Kyle. I also ended up getting a pair of Inspire Crops that are ridiculously comfortable. I honestly feel like I’m not wearing anything and they don’t slide or ride up even when I squat or lunge. They’re also thick enough so I can wear granny underwear without it showing through the material ;). WINNING!

We wanted to beat the traffic, so we grabbed a quick lunch at a Hawaiian restaurant.

Guest Post: What I Wish I Knew Before Training for My First Half Marathon

Hey everyone! Happy 4th of July! I’m taking a short trip up to Santa Barbara with Kyle for a friend’s party and won’t be able to post for a couple of days. I’m so excited that Beth from Mangoes and Miles accepted when I asked her to write a guest post! She’s an AWESOME blogger and has such a unique and enjoyable writing style and takes amazing pictures to boot. I look forward to reading her posts immensely every day! Hey guys! I’m Beth from Mangoes and Miles, where I talk about food, running, my adorable puppy, and my (dreadfully boring) life in general. I’m a daily stalker reader of Christine’s blog—I love her upbeat attitude, her California adventures, and she and Kyle are just the cutest things. (Amirite?)

So when Christine asked me to write a guest post, I was the happiest little clam. She’s been wanting to run a half marathon for a while now, but hasn’t quite mustered the courage. I’m hoping that I can nudge her a little in the right direction through this post. 😉

In March of this year, I decided I wanted to run a half marathon. I’m not really sure why; I didn’t really like running prior to it (although I did it every now and then for kicks and giggles), but I wanted to give myself a performance-based workout goal to motivate me to get off my butt and do something.

I trained diligently above and beyond what my schedule called for the first seven and a half weeks of my training, and then I didn’t run at all the last two and a half weeks…and I almost didn’t even run my half. I was tired, overtrained, and burnt out.

Thankfully, I did finish, I enjoyed myself immensely (though I was cursing myself at mile 9), and it made me realize how much I truly love running. (I’m now registered for two more halves and planning on my first marathon in May next year!)

But there were a few things that I wish I knew before I started training, and I’m here today to share them with you so that you don’t end up like me.

1. Build up some kind of endurance base before you start training.

When I first started training, I had only been running about 2 miles every other week. Not exactly in the best shape. Attempting to move from that to the training weekly mileage was a strugglefest.

Most plans start with the weekly mileage in the teens, and it’s very, very hard to do that week after week (and keep building on that!) if you haven’t trained your body for it. (Yes, you may need to train your body to train.)

2. Stick to your plan.

I never thought a two mile run was a “real” run. And I wanted to push my long runs, so I would add a mile here and there on those. Those extra miles quickly added up, and ended in plantar fasciitis (inflammation in the heel) and a few hip injuries.

Once you decide on a training plan, stick to it. It’ll be really tempting to try to push your mileage one, two, three miles every run, but don’t. Adding too many miles too quickly will lead to overuse injuries, and possibly even sideline you for your race—and that would just be a bummer.

3. Get decent shoes—or even better, get fitted for shoes.

The one thing I think is an absolute necessity for any runner is a good pair of shoes. Any quality running store will analyze your gait and fit you for free. I started off running in Nike Free 3.0’s, which, while they have their uses, are not meant for long distance running.

Trust me on this one, the investment you make now will pay off later when your feet and legs are happy and well-supported.

4. Every run doesn’t have to be at breakneck speed.

Until very recently, I always had the mentality that I would need to run faster than the day before, and if I didn’t, it was a terrible run. But, just like adding miles too quickly, this can easily lead to burn out and injuries.

Your body needs rest. It can’t function at its maximum effort, day in and day out, for weeks on end without any sacrifices.

Now, almost all of my runs are at a comfortable pace, enough that I have to work to maintain it, but not to the point where I’m breathing heavily—or even audibly. Not only does my body feel much better, but I enjoy my runs a lot more, too. And then when it comes to speedwork days? I end up running much faster than I ever thought I could.

5. A little anxiety is natural.

Full confession: part of the reason I didn’t want to run my race anymore was because I didn’t know if I could finish. What if I didn’t? What would my parents, my friends, think of me?

The truth is, if you’ve put in the work, you will finish. Even if you have to walk. (I had to walk. There’s no shame in it.)

So get your butt out there, get your runs in, believe in yourself, and have the time of your life. The feeling of crossing that finish line after 13.1 hard-fought miles is so incomparable to anything I’ve ever felt before. It’s so worth every hard run, every moment of self-doubt, every early morning. It’s a feeling I wouldn’t trade for anything else.
