Happy weekend, all!

I’m happy to announce that I’m home for the weekend to relax and catch up on some of the hometown I’ve been missin’.

Early this morning, I went to the gym and got in a great workout. It involved 30 minutes of the elliptical, 15 minutes incline walking, and this awesome Youtube chest circuit workout. I only had dumbbells available to me since I went to the smaller gym that belongs to my apartment complex, but my muscles are already feeling pretty immobile and I’m sure I’m going to be ridiculously sore tomorrow!

e0e1ef21096c2279f8f132accd9bbcc8After my time at the gym, I walked back home and put together a hot bowl of my favorite Banana Brown Sugar Oats made with those Costco Quaker oats I’ve been raving about. They never gets old and I even brought some home so I wouldn’t  have to miss out them haha! 

image copyAfter breakfast, I showered and cleaned a bit before packing my bags. Kyle and I grabbed some Subway to go and enjoyed it on the car ride home. One thing I didn’t enjoy so much? Driving in the pouring rain. I mean, California really needs the water, but it was terrifying at some moments when there was so much spray that you couldn’t see clearly. Not something I’d like to do again!

After arriving back home, I scarfed down some leftover Chipotle and watched some Netflix under the blankets on my couch while watching the rain pour down. I couldn’t think of a better way to spend the evening. Another perk about being home? The latte machine!

imageMy mom had made me reservations for a massage at 7, so I went in and had a glorious time being pampered and got a bit of time in to relax after the last few hectic and stressful weeks. The one not-so-pleasent part of the massage came when the lady forget that I requested not to have my feet touched. I’m extremely ticklish and had to literally bite my tongue and dig my nails into my hand in order to not kick her in the face while she was massaging them hahah. Luckily, when she started on my right foot, I couldn’t help but jerk slightly and she remembered that that was a big no-no.

I’m hoping to keep this weekend pretty low-key and don’t have too many plans other than getting some studying done, blogging, gyming (because that’s a verb…), and spending some time catching up with everything you guys have been up to!

Thinking Out Loud…

It’s been a rough week for me, so nothing sounds better than being able to spew out random thoughts and call it a post! Thanks for hosting, Amanda, always love how easy the writing comes!

I’m tired.

Like I mentioned before, this week has been rough for me. This whole year, actually. Right now I’m going through the toughest year of studies for biology majors and I feel like I’m in a constant state of exhaustion and lack of sleep. Most days, I have class in the mornings, and in the evenings, I either have long labs or go to the library till 11:30-12 at night with Kyle to study and get work done. That means I’m running around from 7 a.m till 12 at night most days and am fitting in at least 35 hours a week to my Organic Chemistry class alone. Along with that I have two other bio classes, bio lab, and French. And weekends? What are those? Just extra long study days with no class. It’s ridiculous. 

Anyways, that turned in to a small rant. Hopefully your eyes didn’t glaze over too much haha! But in all honestly, I’m incredibly stressed and have been having a few breakdowns and a hard time mentally with all the work I have on my plate, which is something that’s hard for me to admit. 

I’m still absolutely in love with the post my best friend Kelty wrote.

The promise of Vietnamese food for dinner is the only thing that gets me through Wednesdays.

For both Kyle and I, Wednesdays suck. We both are stuck in morning classes and have labs so our day is pretty packed and we’re on our feet for most of the day. Since I have lab from 7-10 p.m, Kyle and I have a tradition of going to one of our favorite restaurants to get some delicious food to power us through! 

My freelance writing gig is going well!

I haven’t talked about it too much on the blog, but a while back I was contacted to work for a fitness website as a freelance writer and recipe developer! So far, I’ve created three recipes for them (along with photography/writing/etc) and am excited to see them go up on the site. Here’s some examples of the goodies I’ve made!

I’m loving my new camera lens. 

I’ve had my eye on the Nikon 50mm f/1.4 lens for a while, and finally broke down and planned on going to the camera store to buy one. Since I was home for weekend, my dad wanted to come with me (hi, dad!), and surprised me by insisting that he pay for it.

So I realize that this post isn’t very coherent or organized, but hey, cut me some slack! I just had a big Organic Chemistry midterm yesterday and wrote a long research paper on worms that kept me up till 2 last night and working all day. My brain juices are a bit depleted ;).

Never Merely Pretty

Quick note: If I had to choose one post for my readers to read, it would be this one. I’ve been looking forward to putting this up on Apple of My Eye for a long time. Meet Kelty, my best friend and one of my biggest inspirations when it comes to keeping a positive body image. She is the most caring, thoughtful, and loving person I know and has a lot of wisdom to share. Listen to her words. Take them to heart.

Hi everyone! My name is Kelty, and I’m Christine’s roommate/soulmate/dance partner/partner in crime. I’m a second year Feminist Studies and English major, and a women’s rights and LGBTQ activist.

Something that comes up a lot in my field of study, as well as in conversations with friends almost daily, is body image. I tend to be asked about body image a lot; among my friends I’m known for my own body confidence and positivity, and I’m constantly encouraging others to also “practice radical self love.” Of course, that isn’t to say that I never have a bad body day, or that I always feel fantastic about how I look. Unfortunately, we live in a culture that profits from us hating ourselves. Learning to love yourself is not just a journey- it’s a battle. However, throughout my (barely) twenty years of life, I have figured out some tricks and tips that have really helped me with my battle. Every person is different, but I think a lot of us tend to do the same things to ourselves. So here are some weapons I’ve used against self hate, I hope you can use them too!

P.S. These are mostly for women. I know men can have a hard time with self esteem too, but women are told every single day that our worth is based on our looks, so those are the people I’m addressing today.

1. For the love of all that is holy on this earth, stop comparing yourself to other women. I have days where I have a hard time following my own rules, but I am very proud to say that I have gotten to a place where I almost never compare myself to other girls anymore. But it’s so easy to, right? To measure every feature on a beautiful girl and decide that since you do not fit those measurements, you must not be as beautiful, or as sexy, or as important. Eradicate this way of thinking. Here’s the thing. You don’t look like her. You just don’t, and you never will. You look how you look, and unless you want to invest a pretty penny in plastic surgery, that isn’t going to change. The sooner you accept that, the better. In fact, don’t just accept it, embrace it. I have fat thighs and a hourglass figure that I got from my mom, and a round face and bright eyes from my dad, and the biggest ass you’ve ever seen from both of them. My ass is a family heirloom. I will never be thin and tall! I was built to be short and sturdy, and that is a fate I cannot escape. Everything about me is built from generations of curvy, pale people who share my name. Your big feet carry you forward, your spotty skin feels warmth from the sun, your stretchmarks record your beautiful growth, your dark skin should never be made to feel that it needs lightening cream or shade from the sun. You don’t look like other girls. You just don’t. Accept it. Embrace it. Love it.

2. Get naked. Women tend to have this fear of our own bodies. We bleed and leak and smell and gather fat in places that make us lumpy and uneven and asymmetrical. And for some reason, this freaks us out. The more time you spend looking at your naked body, the better. It’s hard to love something you never let yourself see. Take time every single day to be naked and don’t shy away from mirrors.  Personally, I like to sleep naked every night, because there’s actually nothing better than waking up all warm with soft covers on your skin.Sometimes it’s hard if you don’t have a fantastic roommate like Christine who doesn’t care at all if I wander around naked. I got lucky on that one. When you’re alone, take some time to actually look at your body, look at the parts of you that you try to cover every day, look at the parts of you you hate when other people touch. Don’t be scared to touch yourself everywhere and anywhere. Touch yourself in ways that feel good! I cannot emphasize enough: your body is yours and yours alone. You should be the number one authority of what it likes, what it needs, and what it wants. I know that my body likes strawberry ice cream and having my hips squeezed. What does your body like?

3. This is very important and should be repeated several times a day, especially when you’re naked. Tell yourself how much you like yourself. Tell yourself how much you like your body, how much you like your face, how much you like your laugh, and your brain, and your little quirks. This can be really hard, especially when one of those days come along where there is not a single thing about yourself that you want to praise. Here’s the secret. You’ve got to do it anyway! If you don’t actually feel this way, lie to yourself. It’s okay, I give you full permission to lie about this. It’s the classic “fake it til you make it.” If you get into the habit of saying loving things to yourself, it will become exactly that: a habit.  It’s behavioral therapy. Condition yourself to say beautiful things to yourself and to stop saying negative things. Trust me, this really works. Just practicing telling myself good things has gotten me to a place where I naturally think to myself “I’m so cute!” at least twice a day while looking at myself. Don’t be afraid to shower yourself with compliments, there are literally zero consequences to this. There are no repercussions to feeling good about yourself.

Let me repeat that: There are no repercussions to feeling good about yourself!

Here’s the thing about being women in our society. Every day, we have a million messages thrown at us telling us that how we look is the most important thing about us. That it doesn’t matter if you’re smart, it doesn’t matter if you’re driven, or funny, or talented, or kind, or inspiring, if you don’t fit our standards for beauty. I’m going to challenge you, if you’re willing. I challenge you to question every assumption you make about your body and the bodies of others. Think about the fact that every opinion you have about appearances is shaped by companies trying to sell you things, shaped by messages sold to us, shaped by the parts of our culture that are still stuck in sexism, racism, and classism. And forget everything you’ve been taught about what makes a body “good” or “bad.” It’s your body, and you only have one. I challenge you to love every inch of it. 

“This is about my own someday daughter, already stung, stained, with insecurity, begging, “Mom, will I be pretty?” Will I be pretty? I will wipe that question from your mouth like cheap lipstick, and answer, “No. The word ‘pretty’ is unworthy of everything you will be, and no child of mine will be contained by five letters. You will be pretty intelligent, pretty creative, pretty amazing, but you will never be merely ‘pretty.'”

Meals on Repeat

When it comes to the meals Kyle and I usually make, things get pretty repetitive. You wouldn’t think so since I do so much cooking for the blog, but when I’m not creating or testing a new recipe, I just want to relax and eat a fast and easy meal.

Anyways, Kyle and I went on a big grocery store haul today, which prompted me to think about what meals are regulars in our apartments. Here’s a quick roundup of our favorites!

Kyle is a huge salmon fan, so we get a big fillet or two every week. This recipe is delicious, fast, and bursting with flavor! We usually serve it with brown rice and roasted veggies.

Chicken, Veggie, and Sweet Potato Bake

We’ve already had this twice this week! Ridiculously easy, healthy, and gives you the perfect post-full feeling. To make it, we just cut up and season a butt-ton (it’s a measurement, okay?) of onions, carrots, sweet potatoes, and whatever else strikes our fancy, then layer an ass-haul (let’s keep the glute references going) of chicken breast (hahah..breasts… Yes, I’m 5 years old) and bake for 35-40 minutes at 400 degrees. Sweet Baby Ray’s BBQ Sauce on the side for dipping!

Fresh, light, and addicting. One of those dinners where you just can’t wait to eat the leftovers!

Grandma Ople’s Apple Pie

By far the best apple pie I’ve ever made and, I kid you not, I’ve made this pie at least 30 times. Seriously. It’s the top rated dessert on Allrecipes.com and is just outrageously delicious.The only adjustment I add is putting in some sea salt to make a salted caramel pie. Are you drooling yet?

Brown Sugar Banana Oats

I eat this at least once a day. I’ve realized that part of their tastiness comes from the oats I use for them. At Costco, they sell GIANT containers of Quaker Oats that are somewhere between quick cooking and steel cut and that have the best texture. I tried making the same banana brown sugar oats with the quick cooking version, and they was only a quarter as good. So go spend the $10 bucks at Costco to get a year’s supply of those oats! You won’t be sorry!

Avocados and chocolate? What the heck? I’ll I can say is, don’t judge it till you try it. 

I first became a big fan of the combination when I tried my Dark Chocolate Avocado Truffles back in August. They became one of my most popular recipes and have gotten rave reviews from readers who have tried them! They were featured on Greatist, as well as adapted by The Detoxinista, where a huge number of people have reported that they tried them and were amazed at how rich and delicious they taste :). Anyways, these Fudgy Dark Chocolate Avocado Cookies are just as good and oozing chocolate flavor and decadence. I mean, just check out that chocolate gooey-ness! The avocado completely replaces all the butter that normal cookies are made with and add a wonderful richness without adding any avocado flavor.

It’s a cookie miracle!

I can’t stress enough how tasty these are. And not in your “this is pretty good for being healthier”, but genuinely mouthwatering. If you dished these fudgy cookies up to a bunch of kids or brought them to a potluck, no one would be able to tell that avocados make up the primary fat source!
