10 Minute Garlic Parmesan Ravioli

So here at my apartment, we call ourselves the “baguette babes”. No joke. My three housemates and I just really like baguettes.

Here’s an actual quote from two days ago that I had to write down because I knew it would be a perfect example for this post. Courtesy of my housemate Lakshmi:

“Is that a baguette!? I’m going to shit myself.”

As you can see, we also are very eloquent college students. 

It’s come to the point where no baguette is safe from our reach. If you go to the store and buy one, you better hide it at your boyfriends apartment or else is will be gone in literally an hour. Also, shhhhh. Don’t tell them I do this.

It doesn’t matter if you didn’t get a single delicious and carb-loaded bite dipped in balsamic vinegar and olive oil (just drooled on my laptop), that baguette is open territory. Kinda like the hunger games, only with less violent killing, ya know? Who knows how far we’d go when it comes to baguettes, though, so I’d play it safe and not come between us and our French bread.

So anyways, I bring up baguettes because nothing goes better with them than fresh pasta. Even better? Delicious pasta that’s done in 10 minutes flat. You think I’m joking? BEHOLD:

See! I told you! Look at all that gorgeous, sparkly parmesan. 

The concept behind this dish is that sometimes, simple is better, and nothing beats the classic combination of olive oil, garlic, and cheese.

To make it even more fabulous, I used non-dried ravioli noodles stuffed with two types of fillings: tomato mozzarella and basil pesto. Not only does it taste incredible, but the fresh noodles cook in only two minutes. Hallelujah!

Also, aren’t they just the cutest? Bobbin’ around all poofed-up in that water like nobody’s business. D’aw.

Hearty Chicken Noodle Soup

Recipe for hearty and healthy chicken noodle soup!

It’s been a while since I posted something for you all to take a look at. I’m really happy that you all seem to have liked my previous guest post on a Guy’s Opinion on Body Dysmorphia and What I Find Attractive in a Girl.

This one isn’t about something similar at all, but vastly important nonetheless! This post is about my hearty chicken noodle soup!

Before I go on, let me just say thank you to my wonderful, beautiful girlfriend, Christine (He’s totally trying to earn brownie points here. I’m on to you.- Christine), for letting me submit another guest post!

I’m still new to blogging, although one blog post more experienced since last time, so keep that in mind as I just go for it.

Now, on to the soup! This is a recipe that I have been making a lot (probably once a week) up at Santa Barbara. It’s tasty, makes 4 big man servings (or 6 normal sized bowls), and it’s easy to make and store! Perfect college food, eh?

The story behind this soup begins with my younger brother’s Eagle Scout Court of Honor, or, more specifically, the dinner at said event. Basically Christine and I were left with several pounds of leftover pulled chicken. This sweet-savory chicken was originally intended for sandwiches, and both Christine and I originally planned to use it for just that. However, eating it in sandwich form for a few weeks straight didn’t seem too appetizing, so the plan quickly changed when Christine suggested that I try to make some chicken noodle soup for dinner one night.

We discovered two things that night: an amazing, easy to make chicken noodle soup recipe and a great use for all of our frozen, pulled chicken! I have been making and tweaking the soup ever since, and now I am going to share the recipe with all of you!

Recipe for a chunky, hearty, and healthy chicken noodle soup!Note: Christine and I quickly learned that putting chicken noodle soup in a bread bowl is NOT the same as a chowder. It was necessary to speed-take pictures/stuff it in our mouths because that malevolent bread kept on soaking up all the liquid. You have been warned.

This hearty chicken noodle soup is wonderfully filling and has a well-blended chicken and vegetable taste, along with great textures and colors! It truly has a great combination of flavors which mesh and work together really well. The onions and celery really help to create the vegetable portion of the flavor, which balances out the stronger chicken flavor. The carrots give each bite the perfect amount of crunch. And if you make it with a saucy chicken, like Christine and I did originally, it is especially tasty.

Recipe for chunky, hearty, and healthy chicken noodle soup!Additionally, it’s an extremely flexible recipe. I have prepared it with several slight variations in attempt to make it more or less chunky, salty, and sweet and each time it has come out slightly different but delicious nonetheless!

Healthy Skillet Lasagna

Sometimes, all you need in life is a steamy plate of pasta with gooey, melty cheese bubbling on the top.

I mean, I usually prefer the flavors of asian cuisine, but I do love me a good plate of pasta- one of my favorites being lasagna. There’s something so comforting about throwing everything and the kitchen sink into a pan and letting all of those delicious ingredients meld together in a savory symphony. 

There is, however, a secret ingredient in this that TOTALLY blows it away and makes all the difference in lasagna for me! 

That being said, I’m usually pretty picky about exactly how I like my lasagna and have yet to taste one better than that of my Grandma’s. I actually find it pretty funny that the original recipe came from a tiny asian woman instead of an Italian cookbook! She uses this cottage cheese instead of ricotta, which makes the lasagna more savory than sweet tasting and, in my personal opinion, much tastier.

Another thing I love about this recipe is that is was so easy to lighten up, yet still stay mouthwatering!

It’s packed full of protein, has less than 400 calories per hefty serving, and you could easily add some chopped vegetables to get in an extra serving of veggies. 

Fast, healthy, and delicious! This healthy skillet lasagna is my kind of dinner.

Healthy Garlic Lemon Shrimp Orzo

Delicious and healthy garlic lemon shrimp orzo! Under 300 calories and 20g protein

Hey lovelies! TGIF! Today started off on an active note with a morning hike in the heat and ended with some fantastic food.

Before hitting the hills, Kyle and I got breakfast at Starbucks. I had a regular Americano with a morning bun and banana. The morning bun was delicious! Sweet, but not overly so. I would definitely recommend it! Kyle had a ham and swiss sandwich that exceeded our expectations as well :)

Since we’re really smart, we thought of turning on our runkeeper apps to see the elevation changes and distance hiked AFTER being halfway done, but we’re guessing that we covered a little over 4  miles. It was a sweaty, sweaty, sweaty one! We started off with shirts on, but as soon as it was time to trek back up hill, we were ready to rip em off and get our tan on. We live in a really unique area with a chaparral environment. It almost a savannah-like feel to it but the ocean is just a half mile away or so. The trails can take you all around the area, even down to the beach, so Kyle and I are planning on spending a half day or so exploring within the next couple of weeks.

Let me tell you, there’s nothing better after a long hike than a glass of ice cold water! Next time we’ll remember to bring some with us, hopefully.

I’ve been eating this garlic lemon shrimp orzo for the past two days and am in love with it’s simple yet delicious flavors. The lemon and garlic work together fantastically and the dish comes together quickly- perfect for busy weeknights!  

It’s also man approved by Kyle, who says that he could eat this all day long! I love finding recipes that are simple, healthy, and genuinely tasty!
