Weekend Things/MIMM!

Happy Monday, all! I hope you’re feeling rested and ready to take on a new week. This weekend was just what the doctor ordered for me and I felt like I was finally able to relax and set my mind at ease for the first time in ages. Here’s a marvelous weekend recap!

After I got back home on Friday from my day of classes and stats test, I took a looonngg two hour nap to try to shake off some of my tiredness. Whenever I’m under a lot of stress from my classes, I don’t really sleep because I’m up late/early studying or I sleep restlessly since I dream of whatever I’m learning. You would think this would be helpful (studying in your sleep, woohoo!), but it’s the complete opposite since I’m subconsciously trying to solve problems with no answers. I end up waking up early from panic and then feel like I don’t know anything since I could’t solve my imaginary problems. Go figure haha.

ANYWAYS, I promise I didn’t come here to complain! My point is that I slept and it was beautiful.

Kyle and I had a date night planned to celebrate my freedom and went to grab some sushi and watch the movie Transcendence. Not my favorite film, but nonetheless it felt great to get out of the house and actually wear real-people clothes. Sweatpants are great, but after a week and half straight they tend to get a bit old.

After we got back, we spent some time hanging out with some of our European friends. A little while later, I ended up heading to bed while Kyle went out to a tennis party.

Saturday was a shopping day! My housemate, Lakshmi, and I drove down to State Street to peruse the stores and eat lunch with Kelty and her mom. I ordered the chicken caeser salad and it was delicious!

As far as purchases go, I got a steal on two white baking dishes from Sur La Table, as well as the cutest new workout top from Forever21 (only $15!) and a gorgeous new floral cardigan. To test out the larger of my two baking dishes, I made a mouthwatering cheesy chicken and broccoli pasta bake for dinner and it was the perfect post-workout meal. Cheese+pasta= [emoji white smiling face] [emoji heavy black heart] .

forever21 workout top ImageAlso, don’t white baking dishes look gorgeous in food photos? I can’t even explain how excited I get when I get a new prop/dish/etc that helps improve my photography. Even buying new dish towels gets me excited… How cool am I?!

DSC_2159I woke up bright and early on Sunday morning feeling refreshed and ready to go. Since I hadn’t been to the grocery store in almost two weeks, I was in dire need to restock my pantry and fridge. Am I the only one who adores grocery shopping? I honestly could wander up and down the isles for hours checking out new products and imagining what I could make with them. Don’t even get me started about how much time I waste in Whole Foods!

Once back, I ate a quick breakfast before grabbing a triple shot latte and banana bread with Kyle and heading over to the library. I read my physics textbook for almost three hours straight before calling realizing my brain was mush and that my productivity levels had reached a standstill.

We headed back home, ate lunch, and relaxed before driving the gym for a quick workout. I ended up doing 30 minutes of varied cardio before hitting up the weights for a back routine. After getting back, I did a few small blog-maintenance things before walking over to a local froyo shop to bond with some of the girls I’m living with next year! I know a handful of them already, but can already tell that I’m going to LOVE my new housemates and they’re all just extremely down to earth, outgoing, and sweet. Plus we’re living ocean-side (seriously, you open up the windows and all you can see is ocean) on our school’s “party street”, so I’m expecting my upcoming year to be much more relaxing and fun.

Image 2 I ended the night by watching the new Game of Thrones episode with the boy and finishing up some chemistry/physics note-taking.

So that was my eventful weekend! It’s back to the grind now, but my second round of midterms are much more spaced out (aka not 3545345 in one week), so hopefully I’ll have time to completely catch up on my Bloglovin’ feed and spend some time doing “me” things.

Question of the Day: What was the highlight of your weekend?

Cheesy Artichoke Baguette Bites

Cheesy Artichoke Baguette Bites.... what more could you want in life?!

Sometimes you just need cheese. And LOTS of it. You know what I mean? Those days where you just want to stuff ALL the cheese into your mouth and call it a day? Well, now that I’m a big ol’ grownup, I can’t go stuffing cheese into my mouth 24/7 and I have things called responsibilities that dictate my cheese consumption hours. Growing up is rude.

I feel like I’m blabbering, but what I’m trying to get to is that you should eat these.

You can get in maximum cheesiness but in the grownup way. In fact, they even can be categorized by the fancy French name of hors d’oeuvres… So that makes you gain sophistication and class just by eating them, right? Just go with it. I’ve been studying like a madwoman for over a week straight and don’t have enough mental energy to type up a coherent post.

CHEESE.

This recipe is literally bursting at the seams with cheese. Let’s count: mozzarella (1), cream cheese (2), and, of course, parmesan (3). They all melt together in cheesy symphony to make the best appetizer ever! And then you place that delicious mixture on top of fresh baguette slices, toast it, and holy heck. Please, someone catch me as I faint.

Cheesy Artichoke Baguette Bites

These are dreamy straight out of the oven and combine all the best of artichoke dip with everyone’s favorite bread. Remember when I professed my entire apartment’s love for baguettes? I’m 100% serious when I say we actively refer to ourselves as the “baguette babes”. The other day I found this gem on the internet machine and HAD to share it with them. I think my other bread-lovers will all appreciate this photo roundup called “Baguette Me Not“. Here’s a sample picture:

Also, did I mention this recipe calls for pancetta? If you don’t have it or want to leave it out of the recipe, that’s fine. It means we can’t be friends anymore, though. Just kiddin’.

Kind Bar Review and GIVEAWAY!

Hello hello, friends!

Wow, has this week been a doozy or what. And doozy is a cute name for it. My stress levels have been through the roof and I’ve been surviving on 4-5 good hours of sleep a night. But I’m almost done! Just a stats quiz on Friday and my hell week will be over. Hooray! I bring this up because a.) I’m a complainer and need to vent and b.) I have a fun giveaway for a product that helped me get through my midterms!

Reintroducing the Kind bars I’ve been loving lately!

Kind Bar Giveaway!

They’ve been a godsend in terms of convenience and helping me get in the nutrition to fuel me through my week. When I’m stressed, I tend to lose a significant amount of weight by forgetting to eat from being to busy and because food makes me nauseous. It’s weird, I know, since most people stress eat, but I work the opposite way and my appetite is completely shot. Regardless, it’s definitely no bueno and I find it hard to keep up my energy levels. That’s why these bars are perfect for me! Not only are the absolutely delicious (the Dark Chocolate Sea Salt is one of the new loves of my life [emoji black heart suit], sorry Kyle), but they’re made from all natural ingredients that you can actually pronounce. Seriously, I look at the nutrition label and know every single ingredient and have a good number of them in my kitchen cupboards myself!

And guess what! It’s your lucky day because the lovely people at Kind are sponsoring a giveaway for a box of my favorite Dark Chocolate Nuts and Sea Salt and two boxes of their newer Kind Healthy Grains bars! That’s a total of 22 bars that taste fantastic and make the perfect grab-and-go snack!

Kind Bar review! Kind Healthy Grains review

I was sent the Healthy Indulgence Cube which not only has the coolest box design ever, but allowed me to sample eight different fantastic flavors. Out of the eight, there wasn’t a single bar that I didn’t love and I would definitely recommend them to anyone who is looking for a snack that is all natural non GMO, gluten free, low glycemic, high in protein and fiber, and low in sodium! Whew, that’s a lot of good packed into one delicious package! Here’s my thoughts on my top three flavors:

Dark Chocolate Nuts and Sea Salt
Okay, okay. I know this is the third time I’m bringing them up in this post, but I can’t help it. These are just downright amazing and have the perfect sweet and salty blend of flavors that make them one of my favorite bars of all time! This bar contains three different types of nuts and is gloriously drizzled with lots of dark chocolate. What more could you want?

Peanut Butter Dark Chocolate
Continuing with the dark chocolate trend, this flavor comes in at a close second. You can’t really go wrong with the classic pairing of PB and chocolate, so I knew it was going to be a winner the second I saw it!

Blueberry Pecan
I love this bar as a refreshing change from my dark chocolate obsession! It’s perfectly sweetened and reminiscent of blueberry pie.

So here’s the part you’ve all been waiting for- the giveaway! Anyone can enter (you don’t have to be a fellow blogger) and the giveaway will last for a week! Trust me, you don’t want to miss out on these!

Ready? GO!

Weekend Things

Helllllooo all you party people! I hope the weekend it treating you right and you’re getting in a lot of relaxing and downtime. I wish I could be saying the same, but this last week (and this weekend especially) have been pretty hectic for me as I have a crazy week ahead of me school-wise. The schedule for now is an Ochem midterm Monday, lab quiz Tuesday, microbiology midterm Wednesday, and a stats quiz Friday. Yikes- I know. Feel free to send me positive thoughts, I’m here with my arms open wide for them!

Anyways, let’s look into some marvelous weekend things!

One nice thing about this weekend is that I’m back in my hometown. Kyle wanted to come back to celebrate Easter and his brother and dad’s birthdays, so we made the two hour car ride back home. It ended up working out nicely since I’ve been productive with my studying and was able to make it to my cousin William’s 21st birthday dinner. Kyle ended up coming with us since he’s a friend of Will’s and we had plans to go out to an old-school ice cream parlor for his dad and brother, but I ended up staying at home since it wouldn’t have been responsible for me to spend more time away from my textbooks. Womp womp womp. Dinner was tasty, though, and served family-style so I got to eat a whole lot of everything! Some of my favorites included chicken fettucine alfredo, a seafood pasta, and calamari ( [emoji heavy black heart] ).

My parents were there as well and I got a picture of the two most important guys in my life! As well as their matching shoes because, according to my dad, “They’re cool, young people shoes!”. Hmm… okay dad  [emoji smiling face with sunglasses].DSC_2070 DSC_2068DSC_2076

Other than that, I’ve been taking advantage of our latte machine to help fuel my studies. Let’s just pretend that having 6 shots of espresso in one day is good for you. Ignorance is bliss. Or coffee. I guess coffee and bliss are just synonyms so whatevaaa.

Oh! And exciting news! I’m hosting a giveaway from Kind this upcoming week for a big ol’ package of Dark Chocolate Nuts and Sea Salt (my favorite, omnomnom <3) Kind bars and two boxes of their newest product, Healthy Grain Bars. Stay tuned for the opportunity to win lots of free stuff! WAHOO!

Healthy Dark Chocolate Walnut Cookies. These are only 100 calories each and SO good!

When I say healthy, I mean healthy in terms of cookies. Because really, what’s a cookie without a little sugah and buttah? Can you even call it a cookie without the two?

So here’s what we’re going to do. We’re going to take just a leeeettle sugar and buttah, throw in whole wheat flour and heart-healthy oats, and top everything with dark chocolate and walnuts. The result? The BEST “healthy” cookie ever. Seriously.

I had my “assistant” helping with my cookie baking today. And by helping I mean eating.

Cookie Baking assistant

Kyle was just filled to the brim with compliments for these cookies and I don’t know if it was the sugar or what, but he was especially expressive with his feelings for my baking today. Imagine me sitting at our kitchen table, trying to get some work done, with Kyle next to me, glass of milk and cookie in hand.

  • “I really really really really like these.” (Yup, 4 whole “reallys”.)
  • “I’m on a cookie high!”
  • “LOOK HOW GOOD THIS BITE LOOKS”
  • “Cookie eyepatch. I’m crazy!!”

KYle cookie

The boy has good reason to love them so much, though! These cookies are ridiculously good and you can’t taste the reduced sugar or whole wheat flour in the least! They have the most wonderful hearty and fluffy texture and are bursting with walnuts and fat chunks of dark chocolate chunks. Honestly, they don’t taste healthified in the slightest and they may just be my new favorite cookie. And for only 100 calories each? That means you can stuff 5 in your mouth!! Uhhhm. YES PLEASE.

Make these. I promise you’ll love them :).

Today I’m linking up with WIAW to share these tasty cookies! Head on over for more great eats!
