This recipe is inspired by all the good things in life. It all started with a container of LLOYD’S® Barbecue Beef that I picked up and then the wheels started to turn as I brainstormed on what else to add. Cornbread? YES. Enchilada sauce? WHY NOT. Cheese? DUH. Then I baked everything together and as the ingredients were getting all comfortable together in the oven, the smells alone were enough for me to declare this a winning recipe.
This is what my dreams are made of. In them, I am lying on the sandy beaches of Hawaii with my tamale pie relaxing with some sour cream sunblock on. I am skiing down the alps while serenading my tamale pie to my badly tuned version of Con the Partiro in which I get 95% of the lyrics wrong. I am in Vegas eloping with my tamale pie (sorry Kyle). And the best part is that if I wake up, all is not lost and I can wake up and eat my tamale pie while watching Pretty Little Liars on Netflix. And yes, I am embarrassed to say that I got sucked into binge watching it and can’t seem to stop even though I think it’s a pretty bad show but I AM COMMITTED NOW OKAY.
Moving on.
You guys probably already know about my newfound love for skillets. It started back in December when my sister and I bought a few mini skillets (the cutest…) to make mini berry cobblers and ever since I bought a full-sized one, I’ve been creating a lot of my recipes based on whether or not I think I can successfully make them in my good ol’ cast iron friend. There’s something that screams comfort food and heartiness and pulling out a steaming skillet from the oven makes me feel like I’ve really accomplished something of foodie importance for the day.
The base of this recipe is an old fashioned buttermilk cornbread recipe which is baked to perfection in the skillet, then topped with enchilada sauce, LLOYD’S® Barbecue Beef, tons of cheese, and put back in the oven until everything gets married together in salty-sweet harmony.
