Am I ashamed to say that these black bean blender brownies were my big project on Wednesday? That I spent most of my afternoon covered in a cloud of cocoa powder picking beans out of my hair?

NOPE. NO SHAME.

Productivity comes in many different forms and mastering the art of making insanely fudgy brownies that are made in the blender— it only takes 3 minutes to get them going! — that use black beans as their base and have no butter is an art.

Like what? I didn’t know healthy swaps to dessert were supposed to taste this good 😯 .

To be honest, I didn’t have the highest of hopes for these when I first started out. I had heard of people replacing beans in brownies for a while, but I was the queenly queen of skeptics because, in my mind, legumes just didn’t have a place in the land of chocolate and sweets. I mean, what’s the point of making a less-than-stellar brownie to sorta-kinda-enjoy when you can sink your teeth into the real deal? That’s my definition of healthy right there, you splurge occasionally on things you love but also get in yo’ fruits and veggies on a regular basis.

BUT WAIT. You don’t even need to separate healthy and indulging because these merge the two perfectly. Instead of sticks of  butter, you use heart-healthy olive oil and black beans (hello fiber!) help hold everything together and keep things SO dense and fudgy. This isn’t your regular pre-made, dried-out brownie from the grocery store. Nope. This is a thick slice of heaven that’s dusted with powdered sugar for that perfect sweet note.

Oh! On an unrelated note, I think I’m finally getting my reading mojo back! Like I mentioned in previous post, having such a hard course load in college has really sucked out my love for reading and I’ve been majorly struggling to get it back. I just finished 500 pages of The White Princess by Philippa Gregory (who also wrote The Other Boleyn Girl) over the last day and a half and really enjoyed it. I’ve always had a fascination with the time period and her novel revolved around Elizabeth of York and her marriage to Henry VII. Since I’ve mostly read about the infamous Henry VIII in the past, it was interesting to see how the Tudors initially got their start in royalty.

I’m heading to the library today to pick up some of the book recommendations that you guys gave me and I can’t wait to spend more time on the couch with my face plastered in the pages with black bean blender brownie smeared all over my face.

    Girl your photos slay me every time. I’ve never used olive oil in a sweet recipe but I can imagine it must make these brownies so nice and moist!

    I think you may just be the only person in the world who could ever convince me to try out black bean brownies. GIRL I did not know you liked period pieces! THOSE ARE MY FAVORITE. I could give you an entire list of books to read. I didn’t think it was possible to love you more than I already did, but you mentioned some of my favorite books in a post about brownies. My love for you is through the roof.
