Happy happy day! Herbed Lemon Garlic Shrimp is in our lives!
Because it is Tuesday and the week has only just begun and we need some liquid sunshine in the form of juicy lemons in our lives. And because, HEALTH! Lean protein meets flavorful sauce and it’s like WOAH. Calm down shrimp, ya’ll are getting a little outta control. I like it.
So how’s summer treating all of you guys? Any other students out there who are out for the summer? Tell me your plans!
At the beginning of the year, I thought I would be continuing a summer internship at the American Heart Association in LA. I work in the sector in Santa Barbara and thought it would be a good way to keep busy. After some consideration (including thoughts on my big life update), I decided to forego those plans and spend the summer working on growing the blog and my photography biz.
I want to immerse myself in food and be able to have more than a few minutes to photograph the food I cook. There were so many times during the school year where I was getting stressed over cooking because of the time it took to get everything done, photographed, and cleaned up before starting the process of typing out all the thoughts in my head and getting the post ready for the next day. Not cool. And definitely not what I want my blog to represent for myself personally. This little spot on the web is my happy place and I want to go back to my roots of cooking for myself first and the blog second.
So yes! A relaxing summer that’s filled with new recipes and reestablishing myself as the foodie I am are my basic plans. Throw in photography sessions and freelance work and I have enough to keep myself happy-busy.
Like I mentioned in my last post, I’m also working on getting back in shape. I’ve relapsed into a habit of unhealthy eating that includes waaaaay too much eating out (Freebird’s nachos, I am staring you down right now) and generally not moving enough. I’ve been feeling sluggish and my body-confidance is not where it usually is. I’m jumping back on the bandwagon and have been hitting up the gym around 5 days a week to get in some cardio and lift weights to hopefully build back some of the muscle I’ve lost. That means protein! And no, Christine, the protein in ice cream doesn’t count. Cue the sad violins.
I’ve been searching for a great low fat, high protein recipe that doesn’t lack in flavor and have found my soulmate in Herbed Lemon Garlic Shrimp <3.
Fresh flavors come together and make a dinner or lunch that fills you up without weighing you down. The lemon gives the perfect tang and the garlic loses it’s bitter spiciness and caramelizes to fragrant perfection. I like to serve this over brown rice or pasta to make a perfectly balanced meal that won’t have me feeling hungry 5 seconds later. Plus, you can easily double this recipe to meal prep so you can eat healthy all week long! Party!
This recipe is done fast. Almost too fast (if that’s a thing). Make sure you have your ingredients prepped beforehand because the cooking process is fast and you’ll have dinner done before you even realize it.
