Happy Wednesday, all!
Since I started blogging a little under a year or so, I’ve noticed that every Wednesday, I’m hungrier than most days. Today I realized that I can directly blame What I Ate Wednesday for keeping me fixated on all the delicious eats everyone shares! I honestly don’t think I can read any other WIAW posts without something to munch on without my inner hangry coming out.
So anyways, on to the food!
Breakfast:
After sleeping like a dream, I woke up and parked myself in front of my laptop with a latte (x2) and a piece of homemade dark chocolate bark.
When my stomach had some time to wake up, I toasted up a whole wheat english muffin topped with fig jam (on one side) and a combination of the jam and Norwegian goat cheese on the other. Don’t judge it till you try it! The sweet and salty duo makes my heart sing :).
I spent the rest of the morning taking care of some blog-related things and replying to emails. I’m trying to update my “Contact Me” page and was able to get some social media sharing buttons to go at the top of my posts! I know they seem like small things, but making small progressive changes to Apple of My Eye always gets me excited! I also worked on creating a new pasta dish, which ended up being a delicious lunch!
I’ll be putting up the recipe soon, but I roasted the asparagus separately with garlic, which gave the recipe a special twist.
Around 5, I drove over to the gym with Kyle to get in a workout. After barely exercising for the last two weeks, it felt so great to be able to move! Before leaving my house, Kyle snapped a few pics of the new workout top I got for a steal ($14 including shipping!!!). I’m completely enamored by it and love the back! I might try sewing on some padding to the bust since it doesn’t offer too much support, but I don’t think it looks too off when I wear a bright colored sports bra underneath. The more obnoxious the colors for me, the better!
Since one of my readers (hi, Autumn!) requested I share some of my workouts, here’s my strength training routine for the day. Remember, I fine-tune my workouts for what works for my body and you should always be cleared by a doctor before starting up a new fitness routine! I’m not a licensed personal trainer and am just sharing what a typical day at the gym looks like for me.
I started off with 30 minutes of interval training on the elliptical and 10 minutes of biking before completing the following workout!
After finishing our sweat-sesh, Kyle and I headed to his house for a home-cooked meal of meatloaf, rice, bread, and salad. It was the perfect meal after a hard workout and I had this plate x2.
Dessert was leftover apple pie. Drool. I would honestly eat pie for every meal if I could!
So that pretty much sums up my day of eats! Lots of tasty food to help fuel my body and keep me going strong :).
Question of the Day: What’s the best thing you ate today?
Arman @ thebigmansworld says
Can I say how awesome you are for starting your day with chocolate not as breakfast but just because? Epic.
That Norwegian cheese looks amazing- does it have a specific name? I’ll need to hunt it down. My Scandinavian friends introduced me to dark rye bread with butter AND cheese. Epic doesn’t even describe it.
Christine Skari says
Pretty sure the best time for chocolate is ALL THE TIME ;).
It’s called gjetost/brunost and it’s delicious! It has a really great earthy taste and it’s my favorite type of cheese. Us Scandinavians just LOVE our bread haha!
Ksenija @ With An Open Mind says
That’s my girl, starting the day with coffee and chocolate <3 Seriously, we would go along, I am also a huge fan of the jam & cheese combination, you should so come over and visit me in France 😉 and we would have baguette, cheese and jam every day!
Regarding the workout top: keep it as it is, it looks fabulous with the pink sports-bra underneath!
Emma @ Life's A Runner says
Can I just have this exact day of yours? Everything from the latte and chocolate before breakfast (because everyone needs waking up dessert) to that workout to your top sounds beautiful. Glad you are SO enjoying your break!
Christine Skari says
Thanks so much, love! The extra R&R is suiting me just fine I must say haha 😉
Liz @ I Heart Vegetables says
Ohhh I love that workout top!!!! So bright and colorful

Starting the day with a latte and homemade dark chocolate bark = best way to start your day. Fo sure!
Everything in here looks mouth-wateringly delicious but I’ve got my eye on the pasta dish. Lookin’ forward to the recipe!

Coming up within the next few days! It’s simple, fresh, and delicious :)!

Christine Skari says
Thanks, Heidi! I just got my blog re-done by the lovely Tasha from mycutelobster and LOVE how it turned out! She was a gem to work with :).
Autumn Wieland says
lol Thanks Christine for the workout!
That tank top is really cute and i think the bright bra makes it better! Getting new workout clothes/accessories gives me a new spark of motivation!
Actually I’ve put cheese on sweets like a doughnut or something and it was good! its kinda like putting a little salt on your dessert!
Beth @ The Small Victories says
What does Norwegian goat cheese taste like and how can I get my hands on it? o.0
Also, LOVE the tank top! The brighter the colors the better.
Kelly @ Kelly Runs For Food says
A little chocolate first thing in the morning never hurt anyone 😉
I love your new workout top and I think it works perfectly with a bright sports bra. I missed my workout this morning, so yours looks like a great one! I definitely get gym envy haha.

I completely know the feeling of the Wednesday snack monster… I try to get most of my blog reading done in the morning, but you’d better I’m currently sitting here with a lovely arrangement of snacks around me 😆 That being said, I suddenly have the biggest craving for pasta… not sure why 😉
Juli @1000lovelythings says
Oh coffee and chocolate is like the best combo ever! I started my day yesterday exactly the same though I only had plain dark chocolate :-).
Your pasta dish looks incredible. Though I’m not a big pasta fan I would love to steal a fork through my screen 😉
Best food today? Cinnamon Chia Pudding! Delicious!
Have a great day, Christine!
Lauren says
Haha, that’s awesome that you started your day with chocolate! I find it hard to have anything sweeter than a smoothie in the morning because my energy level plummets. I’m interested in trying the combo of fig jam and cheese, yum!
Tiffany @ Triple Crème Decadence says
I am so happy to see that you like Gjetost! It looks odd but is so delicious. I love that work out top. I love anything with a chevron pattern!
Erin @ The Almond Eater says
Ummm I pretty much throw myself a party whenever I’m able to figure out anything blog related haha so I feel you! Does Norwegian goat cheese taste anything like regular goat cheese? If so, I bet I’d love it!
Kate @ Baking in Yoga Pants says
Ohhhhh my gosh, yes! I always want ALL the food on ‘What I Ate Wednesdays’! That apple pie looks out of this world.
Natalie @ lovenataliemarie says
Oh how lovely a home cooked meal and a home cooked dessert is. I’m so jealous you get to eat that pie! I would kill for a slice. 😉
I can’t wait to find out the recipe to that pasta dish. I love a good pasta and asparagus!
Looking beautiful in your gear.
Leigha @ Minougirl says
Your day just sounds like rainbows and butterflies (I mean that in a good way!) Seriously LOVING all these eats. I love it when you post life updates because aren’t all bloggers nosy like that? Great job on the blog work! That is the best feeling!!

Ummm all of your food looks DELICIOUS!!! Esp. that latte.. want! 😉 Love the workout top – you look adorable!
Kirsten @ Fit + Fab says
Can I have you as my live in chef? Or some sort of home delivery system?
That back on that top is amazing! Who made it?!
(the more obnoxious the colors and patterns at the gym the more we’re viewed as pros at what we do… I’ve done the survey — sort of… not really, but it should work like this!)
