Track Workout and Obnoxious Spandex

Today started off on a sweaty note with a trip to the track to get in a great workout! I fought the boredom of running in circles by breaking it up with various strength training exercises. Let me tell ya, it gets 20 times harder to run after some flying lunges! It was great getting in two sneaky miles and went by in a flash. Let me know if you try it :)

I think someone needs to help me. I have an obsession with bright spandex. Obnoxious is my favorite color!

After my workout, I made some breakfast. As usual, Pinterest inspired me to try something new and I baked an egg inside an avocado with a pinch of pancetta (Italian bacon) and broiled a grapefruit. I used some of the eggs from the chickens Kyle’s family has and they were delicious! I also had a small orange on the side which was perfectly ripe :). While everything was in the oven, I decided to foam roll a little since I’m still sore from Friday’s workout. Foam rolling is simultaneously the best and worst thing ever.

IMG_0768 IMG_0772The avocado was so good! Next time I’m going to season the avocado as well as the eggs since it needed a bit more salt and dice up some fresh garlic for some added flavor. The latte on the side was glorious :).

Now I have to rush to get ready to go grab some Hawaiian food for lunch with Kyle! I’ll post again later with some more news since I’m sure all of you are riveted by my exciting life ;).

    Girlie, I see absolutely no problem with those spandex. They’re fabulous! :)

    Ahh the egg inside the avocado looks SO good. I saw that once before. I’m making an executive decision right now to try it as soon as I get an avocado!

      It is really good! Make sure you salt the avocado before you crack in the egg for some added flavor 😉

    well you know I’m obsessed with your workout clothing. No shame. My favorite pair I have is pink and white tie dye. Love them. I don’t wear them often- spandex ride up like crazy when I’m running so I look like I’m wearing rundies. Too far 😉

    Ooh the idea of baking an egg in an avocado is frankly genius! Definitely going to try that one, it looks yummy! And love how you’re rocking the bright spandex! I don’t have the courage to do that yet, but maybe someday 😉

      It was so good! The little bit of bacon in it also does so much to enhance the flavor. If you try it, salt the avocado before you put the egg in (and salt the egg!) since it helps bring out more taste. Haha thanks girl! I LOVE bright colors!

    Wear those spandex proudly! they’re adorable! I love that egg inside an avocado idea! and i’ve never thought to broil grapefruit and I’m already obsessed with the idea I cant wait to try it! I love grilled pineapple, so I’m thinking this will soon be another favorite.

      I love Pinterest because it keeps me trying new things :). The grapefruit is especially good with a small sprinkling of sugar on top! I don’t really like sour things so I prefer it broiled so that the natural sugars caramelize… mhmmmm 😛

      Grilled pineapple is the bomb-diggity! 😉

    I rowed crew for the first 2 quarters this year, and I’ve basically corned the market in obnoxious spandex. It’s the greatest.

    Bright colors!!!! Absolutely nothing wrong with that!! Very creative breakfast..I never would have thought to bake the egg in the avocado. What did you do before Pinterest?

    I guess I was the loser who could never quite get into wearing spandex. Lol. I had three pairs of dark blue spandex for volleyball in high school. One for games and two for practice. I hated having to watching out for underwear lines with them… And my game spandex were particularly short and always riding up. I always had to pull them down :(

    I have to admit that it made diving for the ball much easier though compared to basketball shorts.

    Those egg avocadoes turned out wonderful! I pinned that recipe on Pinterest awhile back with the intention of trying it out on my dad who loves both avocado and eggs :)
