WIAW: Don’t Eat Oats in a Rush & Ribs. Mhm.

 Happy Wednesday, all! I’d like to say I’m happy the week is moving by so quickly, but the prospect of having to take my physics midterm next week is putting a damper on my excitement for the weekend. On the bright side, Kyle and I are celebrating our 3 1/2 year anniversary the night after my exam, and he’s planning out a special date night for the two of us! I know, I know. Three and half years doesn’t seem like a long time for a lot of people, but we’re young’ins so it’s a milestone for us! 

Anyways, I’m sure you didn’t come here to hear me complain. Let’s get to the food. Onwards! 

Breakfast:

I had planned to go to the gym before my 9am class, but caught up reading blogs so I ended up being in a time-crunch. Breakfast was a hot bowl of brown sugar banana oats while I rushed madly around my apartment getting my things ready to go. I’m sorry, but trying to stuff super hot oatmeal down your throat really takes away from their enjoyment level.

At the gym, I did a quick 20 minute warmup on the elliptical before doing an ab routine. I’m really lazy about training my tum, so any day where I focus solely on them is unusual for me. Also, I’ve realized that I don’t ever refer to my midsection as my “stomach”. It’s always tum. In our apartment, my best friends and I have developed a habit of shortening words. For example: my roommate Lakshmi asked me today if I had any chocolate. I ask her if she wants a “bun”. She immediately knows what I mean and I hand her a leftover chocolate bunny from Easter. 

Coffee Break:

After my gym session and first class of the day, I had an hour break before I had to run over to my physics lecture. I took the time to go grab a coffee cake and cup of jo to snack on as I read my stats textbook outside. Today was an absolutely gorgeous day and it got to the point where it was almost too hot. I’m typing up this post on my bed and am hoping I’ll be able to sleep comfortably when it’s so warm!

Lunch:

After my physics class finished at 12:15, I was starving. I headed over to grab an enormous salad and homemade whole wheat bread stick from our college’s main eating area. The salad was only so-so, but the bread was to die for! I’m constantly on the lookout for healthy alternatives that actually taste good, so I’m hoping to recreate a similar bread recipe at home!

After lunch, I had a 2 o’ clock stats section that went by quickly. Then, it was back home to throw some ribs in the crockpot, inhale an orange, and drive to my bio lab. Luckily, it was a super short and easy one that just focused on the lifecycle of various plants and identifying different plant parts under a microscope. Usually they’re much more intensive, so it was a nice little break from the norm. 

Dinner:

Once I got back, I took the ribs out of the slow cooker, reduced the sauce they cooked in, and dinner was served! They turned out fantastically and Kyle could not get over the sweet and salty flavors. I grew up eating asian-style ribs (soy sauce+brown sugar lovin’), so that’s how I usually make them if I get the chance! Look at all that sticky-sweet goodness!

The rest of the night was spent reading various textbooks and watching the newest episode of The Following with Kyle over some S’mores ice cream. It was a busy, but productive day!

    As always, everything looks delicious! My whole school has a method of shortening everything to the point that it’s basically our language and mKes no sense to most people. CoHo=coffee house, profro=prospective freshman, memchu=memorial church.

    at least you have light at the end of the tunnel after the test, right?

    Those ribs look amazing….I’ve always been scared to try cooking with them so I need to give it a go. Soy + Brown sugar = so underestimated. On skirt steak it is epic!

    I know what you mean about a rushed breakfast being nowhere near as good as a calm one. I have a feeling that’s part of the reason my brain wakes me up so crazy early — so that I can fully enjoy my favourite meal of the day in peace before the craziness of the day sets in 😉 And 3.5 years? EeeeeEEeE! You guys are my absolute favourite 😀

    I think I’ve eaten ribs once in my life and I have no idea why. My parents never made them growing up which is why I never make them..? That’s my guess but anywayyyy yours look deliciousssss. I also have a habit of shortening words ..it’s just easier!

    lol bun! Happy Anniversary!! :) You two seem perfect for each other!
    Mmm those ribs look really good! I don’t think I’ve eaten ribs more than twice in my life but boy do they taste good! I enjoy just ripping the meat of with my teeth, very much similar to a starving animal.
    Best food today: the oatmeal and sausage i just had for breakfast!

    I only took Physics 20 but it made me want to jump off the 22nd floor. I understand your pain! You are studying like a rockstar, though, so I don’t think you need to be worried. :)

    Speaking of “understanding”…I was too hot today too. And it was 17C (63F). I don’t think I want to know what temperature it was there. 😉

    The best thing I’ve eaten so far today is my bowl of oatmeal with blueberries, blackberries, and peanut butter! I’m going to be in the same place you were in the morning. I’m spending too much time reading blogs and need to start getting ready to go to class! The view you had on your coffee break is stunning by the way!

    Those ribs look amazing and I’m not usually a big fan of ribs. Best thing I ate so far was breakfast I guess, which was a PB& J sandwich. Since we’re leaving on Saturday for a week, grocery shopping hasn’t been a priority and it was super obvious when I went to go make breakfast today!

    “Too hot” –> as someone who lives in Houston… hahahahaha. 😉

    Anyway… corn is possibly my favorite thing to put on a salad. It adds just a little bit of sweetness and crunch! Also your ribs remind of me of my dad’s… which are literally the best ribs ever. Also, you should teach me how to make ribs so I can make them for myself this summer. (Real people problem #90189: having to make your own food. -.-)

    3 and a half years is definitely something to celebrate, so congrats! And my friends and I abbrev so many things that it gets out of hand sometimes. (see what I did there? haha)
    Also, those ribs…get in mah belly…

    mmmm everything looks soooo good!! I haven’t had oats in a few days do to the EXTREME heat here (its 95 today!) but man do I miss them! I think I need to switch to overnight oats….
    Congrats to you and your man on the anniversary! My hubby and I are celebrating 5 years of marriage this year, which isn’t a big deal, but it is when you’re only 25! Haha we have no plans yet, but you can bet we are going to live it up :)

    Such a busy little bee! The image of scarfing down some oats on my way out the door gives me anxiety hehe A) because they might be too hot!! and B) I hate eating in a rush… total food buzz kill for me. Your food photos are gorgeous, as usual! Especially the ribs. Um, YUMness. And HAPPY 3.5 years to you and Kyle! As a fellow young’in, I know what a huge deal that milestone is. Super exciting and I can’t wait to see what he has planned for your date night this weekend! I hope it involves more s’mores ice cream!!

    So many pretty colors! I think the best thing I’ve eaten (so far) today was some red quinoa with kale, roasted veggies, and an egg. It’s rainy and cold in NYC and it was nice to have a warm, comforting lunch.

    Whenever I have to eat my oatmeal, I never get that taste satisfaction feeling and my stomach ends up hurting. Oats are meant to be enjoyed. 😉
    Woah, coffee cake and coffee sounds the perfect side to a textbook (Although I’d rather not be reading a textbook).
    Ribs.. I haven’t had them in ages!

    These look like some delicious eats! YUM! The best thing I ate today was some fresh homemade avocado guac with feta cheese!! Oh YUM!!

    Ooooh look at that pic of the ribs! I don’t even like ribs and they look so yummy! Scarfing oatmeal was totally me this morning. Late for school, as usual. It totally ruins the enjoyment of them! ps CONRATS on 3.5 years! That’s, like, a quarter of my life haha!
