3 Year Anniversary Recap!

Hi guys!

I know, I know, I’ve been a bad blogger lately. 

My life right now pretty much revolves around college and studying, so I feel as if there just isn’t anything interesting to blog about! (Do any of you guys get in this rut?)

Anyways, here’s an update on what’s been going on in my life lately! 

On the 6th I had my 3 year anniversary with Kyle.

I didn’t get out of class till 8:30 at night, so we put off our big anniversary dinner till today. Kyle, however, offered to make dinner for me when I got back and went all out with rib eye steak and LOBSTER. It was absolutely delicious and we had leftover steak for the next day. Steak leftovers? Not bad for college students! 

Not only did he cook me dinner, but he put in the extra effort to make the meal lovely and intimate with candles and flowers. I can’t even express how much I love and appreciate him!

We also exchanged anniversary gifts and I loved how thoughtful his present is. He knows I love custom things, and ordered a beautiful, handcrafted ring from Etsy for me!

My present to him was a leather messenger bag. I swear that boy has been talking about getting one since high school, and I knew he would love the “mountain-man-y” colors and material. He loved it and has been using it everyday!

Tonight we will be going on our “official” anniversary date to Cold Spring Tavern. If you’ve been reading my blog for a while, you might recognize the restaurant since we’ve gone there twice before for another anniversary and Valentine’s Day. We’ve decided that it’s “our place”!

I’m ridiculously excited for tonight and feel so unbelievably blessed to have Kyle in my life. I could go on and on about him and all of his wonderful, wonderful qualities! 

These past three years have been the best of my life and I can’t wait to see what the future holds for us!

Kyle, you’re my rock, the best thing that’s ever happened to me, and I love you with all my heart and soul.

Weekend Things and “Kyle Kooks”

Hope everyone is enjoying their Saturday, mine is going a little slowly due to a late Friday night, but it was worth it for the fun!

My Friday started off with an early 8-9 a.m Biochemistry lecture, but it wasn’t too difficult waking up for class since it was my only one of the day (woohoo!). The lecture takes place in a building that’s only a 30 second bike ride from the campus gym, so I donned my workout clothes to class as to not give myself any time to talk myself out of a much-needed sweat session.

In the end, I’m glad I got myself up and going because I had a great 35 minute elliptical workout followed by leg day and left feeling energized and ready to take on the day!

 I spent the rest of my morning on my computer reading blogs (I should have been reading class notes) and browsing possible recipes. At around 12:30, Kyle and I headed over to grab some lunch at one of the closer dining commons in relation to our apartments. While some young adults find it harder to eat healthy at college, I’ve always found in much easier. There are plenty of fresh and healthy options, and the salad bars are stocked with anything and everything you could possibly want in life. It’s a beautiful sight to see.

That afternoon, Tiana and I headed out to play some tennis with two foreign boys who we recently met and also live in our apartment complex. One is English and one is Irish, and I think that all girls can relate when I say accents are the CUTEST thing ever. We didn’t play too seriously and it was a blast getting to know some new friends and talk about the cultural differences they’ve been experiencing! 

DSC_1374 DSC_1376 After coming back home, eating dinner, and getting ready for a fun night out, me and several other friends headed out for a night of dancing! Since we live in a college town, we can easily walk to neighboring parties and party-hop our way to a great time. 

 Like I mentioned before, my Saturday started off slowly and was pretty uneventful. I spent a few hours studying and reviewing notes, but the highlight of my day was curling up with Kyle to watch a movie (we re-watched Temple Grandin- such a fantastic movie) and eat Mud Pie ice cream. I love documentaries and movies based on true stories that make you think, so this film was a winner! 

 Tomorrow’s plans include a workout, Farmer’s Market, and studying/completing school work at Starbucks. Fun stuff! 

Oh, and before I forget, I’m trying to persuade Kyle to start a mini-series of his adventures in learning how to cook. Primarily because I can then make him feed me and we could call it “Kyle Kooks”. Adorbs.

The Dreadmill & Need for Coffee

So yesterday’s chemistry midterm was ridiculous. The whole time you could hear people muttering curse words as they saw each new problem. And when the proctor announced that we had only 10 minutes left, the class was in uproar! It was almost kind of funny because it took the teaching assistants a good amount of time to get everyone to be quiet again. The good thing is that the entire class is based on averages, so if everyone in the class does poorly there will be a haaaauuugggee curve ;). I’m not overly worried about it.

Anyways, I’m so glad to be done with it! Now I just have to worry about a potential math pop quiz today and my chemistry lab.

After my midterm yesterday, I came back and took a solid two hour nap before lounging around for a while. Eventually, I put on my workout gear and headed to the gym to do a super quick workout. I ran two miles at an 8:34 pace before completing an ab circuit twice through. For some reason the 2 miles I ran were SO hard. I usually hate running on the treadmill so that might have played a role in the difficulty, but I guess I just wasn’t feeling the late workout.

Ab Circuit (Repeat x2)

  • 20 leg lowering
  • 30 bicycle crunches (I hate these!)
  • 1 minute plank
  • 50 scissor kicks
  • 15 leg raises on the captain’s chair

After my workout, I went back home for some dinner with Kyle. I’m never hungry right after I workout so I didn’t have much of an appetite. Dinner was roasted pork loin, a baby sweet potato, and a big ol’ salad. I called it a night at 11:30 after working on some online calculus homework and slept like a baby till 8 this morning! That’s a pretty big accomplishment for me ;).

I think the last couple of days have finally caught up with me because I’m exhausted. I decided not to try to squeeze in a workout since I feel pretty meh. Breakfast was good though! I had some fruit salad with cottage cheese for some protein and split some whole wheat pancakes with Kyle. And coffee. Lots of coffee. :)

WIAW #3

These last couple of days have been jam-packed with studying for my chemistry midterm today. I’ve been pretty consistent about getting in my workouts, but I always feel like my health suffers when it’s midterm season. There never seems to be enough time for exercise and I don’t get nearly enough sleep and drink way too much coffee. At least my eats have been pretty good! Which brings us to my third WIAW post! Time seems to be flying and I can’t believe I’ve been participating in them for 3 weeks already :).


Breakfast: An egg white omelet with ham, onions, bell peppers, mushrooms, green onions, tomatoes, and nonfat plain greek yogurt on the side in place of sour cream. Along with that I had a banana that I dipped in peanut butter and jelly with plenty of coffee to keep me going.

Kyle was so excited to show me how healthy of a breakfast he had gotten as well. What a cutie! Look at that charming banana smile.

Lunch: I had a late lunch of a Subway sandwich around 2:30. Honey wheat oat bread, chicken breast, and all the veggies they could cram in! Baked chips for the crunch and grapes for a little sweetness. I’m not really too much of a chip person (I know, I’m weird), but I firmly believe that no sandwich is complete without them!

Snack: I was feeling munchy so I sneakily picked out a good amount of M&Ms from Kyle’s trail mix. Yes, I’m that person. Where can I pick up my Best Girlfriend of the Year Award?

Dinner: I wasn’t all too hungry for dinner, so I ended up only nibbling on my pasta. It was good though! Spaghetti noodles with marinara sauce and sautéed italian sausage and bell peppers. Along with that I had a salad with some Thousand Island dressing (I could honestly DRINK that stuff).

Dessert was in the form of a delicious oozy-gooey pumpkin cake which I shared with Kyle. I asked if we should have ice cream or a latte with it, to which he replied with “Why or?”. That’s my boy.

I’m hoping to get in a run today later in the evening after I take a long post-midterm nap.

Out in the Sun

Today started off with sleeping in till 8:30, quite a feat for me! I guess the last couple of days have started to catch up to me. While I didn’t have time to get in a workout since I slept later than usual, today involved lots of walking as I attended a concert called Extravaganza put on by my college. But first, brunch!

Brunch:

Oatmeal with raisins and some honey, a banana and dollop of crunchy PB, egg whites with ketchup, and enough coffee to drown a small town. I love brunch. It’s like breakfast on steroids!

After eating I went to go make a masterpiece of a poster for my friend’s birthday before heading home to slather some makeup on :).

The weather was perfect for a day in the sun and I can tell from my horrible sandal lines that I got my tan on despite all the sunblock I put on. I can’t wait to get that “glow” that only seems to come with summer.

We ended up not staying too long because the music wasn’t all that great, but we made up for it with some delicious nachos that were out of this world! Cheese, chicken, steak, guacamole, pico de gallo, onions, and pinto beans? Sign me up! We didn’t eat till around 3:30, so that baby has been keeping me full all throughout the evening. I also saw and caught up with an old friend which is always lovely :).

971405_10151681545286913_807625857_n Once I got home, nothing sounded better than a nap (so much sleep today!) and I woke up around 6:30 feeling a bit out of it since it was so late. “Dinner” was a bowl of cereal since I was still stuffed from the nachos.

Apart from that, I finished a French essay and watched the new Game of Thrones episode with Kyle on my laptop via HBO Go. Coffee and chocolate were a must!

Although it’s a  bit late, I think I’m going to try to get some studying in for my chemistry midterm on Wednesday so I feel more comfortable and prepared. I absolutely hate feeling like I’m not ready for an exam and I’ve already procrastinated enough for today ;).
