Feeling meh about intros today, so let’s jump right to it!

1. I seriously can’t get over bagels and lox right now.

My mom and I have always loved the combination and about a year or so ago I introduced Kyle to their gloriousness. He’s been hooked ever since! We have a reeeaalllyyy good bagel place near my house in my hometown and their poppy seed bagels are to die for. Usually we just order plain bagels and pimp them out when we get to one of our houses, but today we tried one of their in-store bagels. It came with salmon, capers (not a fan), tomatoes, and cucumbers. While it was good, we decided that we much rather prefer the simpleness of lox and onions. One little trick we do is to soak the onions in a bowl of ice water to take away some of the acidity and leave the crisp, cold, and delicious. If you’ve never tried it before (I’m looking at you, Julia), it’s a total must!

2. So apparently there are two hurricanes en route for Hawaii within the next few days.

That’s right, not one, but TWO. The forecasters say they aren’t expecting too much trouble from Hurricane Iselle and Julio, but still. Also, have you ever thought of who actually gets to name hurricanes? Hm. I’m really liking Julio. It kind of just rolls off the tongue. JULIOOOOOO.
Kyle and his family had their flight canceled to the Big Island for tomorrow evening, but were able to get it rescheduled for early tomorrow morning instead. I’m flying up next Wednesday to meet up with them and will be staying five full days before I have to rush back to my chemistry lab. I honestly caaaan’ttt wait!

4. Oh oh oh! My newest recipes for Savory Style are up right now!

I made the best Gooey Peanut Butter Chocolate Dream Bars and Sparkling Blueberry Mint Lemonade. That lemonade may just be my new favorite drink EVER. Honestly, it’s to die for! I’m also really happy with how the photos turned out :). The little paper straws and mason jar just kill me. So cute!

5. Last call for requests for things to touch on in my next income report! 

It takes me about a week after the month has ended to put them together since many ad networks don’t finalize earnings till then, and I’m hoping the stats will be updated by Friday. Let me know if you guys have any questions or concerns! Here are a few of the ideas I’m thinking about writing about along with the actual moolah report:

  • Props and little photography tricks I use
  • What backgrounds/boards I take my photos on 
  • Intro to affiliate links

 So far, I’ve had a few requests to share more on different ad companies and when/how much traffic I had when I started using them. Let me know if any other topics spark your interest and I’ll share what I know!

Again, I’m not pretending to be some blogging superstar with these reports! I’m just hoping that other bloggers will be able to take some knowledge away from my trial and error. I’m learning as I go as well!

WIAW: House Bunny, Eating Alone, and Income Report!

Oh hello, Wednesday, you snuck up on me! Actually, this whole summer has been sneaking by. I swear, I know it’s pretty typical for bloggers to do the whole “OMG HOW IS IT ALREADY [insert month], but really. August?! While I still have over two months off from my normal college classes for summer break, the weather is already starting to cool down and I feel like the Santa Barbara coast really didn’t heat up too much. I mean, I really shouldn’t be complaining with the temperature still being in the low 70s most days, but I’m not ready for the heat to be over with! Bring on the pumpkin spice lattes, though. I’m always ready for those 😯 .

Anyways, here are my eats for the day!

Breakfast:

I usually make them by cooking 3/4 cup oats on the stovetop with half a sliced banana, cinnamon, and vanilla extract. Then, I top the whole shebang with light brown sugar and occasionally some walnuts. Mhmm.

Lunch:

Just a salad from a build-your-own-salad bar on campus before my chemistry lab.

My sister, Marie, goes to UCSB and lives about a 5 minute walk away from me in her own house with some of her friends. A couple of days ago, they got a house bunny and it is the cutest.thing.ever. Seriously, she weighs only one pound and fits into the palm of your hand practically. When you pick her up she just looks like a little snowball and she absolutely melts my heart.

Snack Round Two:

I was feeling pretty peckish all afternoon, so I heated up some chicken and rice soup and ate it while watching an episode of The Kardashians. My brain cells probably melted a little, but sometimes some mindless tv is the perfect way to unwind.

Dinner:

Chicken teriyaki+asian salad+miso soup+California roll

Today’s dinner was a little weird since it’s one of the first times that I’ve gone to a sit-down restaurant by myself. I drove back home from SB for the next few days alone since Kyle is already back in our hometown, and I grabbed some food after loading up the car on my way out of town. Granted, the restaurant wasn’t formal at all, but it still felt strange! Also, all this food was only around $10 😯 . Score.

Starbucks:

I got a vanilla latte with nonfat milk for the ride home. I always feel better with something to sip on when I drive at night to help keep me focused, especially when I’m driving alone. While I prefer caramel macchiatos more, it was a nice treat!

On another sidenote, I’ll be putting together my income report for July soon and was wondering if there’s anything you guys would like me to touch on! If you don’t know what I’m taking about, here’s my first income report from June that explains what they’re all about :) .

Easy Gluten-Free Peanut Butter Cup Cookies

So melt-in-your-mouth peanut butter goodness like whhaaaaaat.

There are a couple of things I want to say about this. First off, EASY. Almost stupidly easy. One bowl, no flour, no baking powder. Just throw your ingredients into a mixer or hand-mix and all of a sudden you have a delicious bowl of cookie dough that tastes like the filling of a Reeses Peanut Butter Cup. And no, I’m not kidding. Secondly, gluten free. I’m not claiming to know much about baking/eating without gluten, but holy heck, you won’t miss it at all. I know a lot of GF treats sometimes leave a little to be desired, but these are incredibly soft and bursting with peanut butter and chocolate flavor that go perfectly with a glass of milk.

This summer has been the summer of cookies. Which also lends itself to being the summer of buckets of sugar and five tons of butter. Which also also should lend to me spending a good amount of time running or hitting up the gym, but my exercise lately has been reduced to beating together my butter and sugar. Also I’m lying because I have a Kitchenaid. Chewing counts as working out, right?

What was I saying again?

OH YEA. It’s the summer of cookies! From my No-Bake Cookie Dough Energy Bites to my Chunky Cookies and Cream Cookies (<—I die. SO good), it’s been a good season for sweets and these peanut butter bites are no exception. They are little pillows of fluffy goodness and are chock full of melty chocolate chips and crunchy pieces of crushed peanuts. I actually had to make two seperate batches of these before I was able to snap some photos of them since they magically dissapeared overnight. Apart from me being a little irritated at having to have to heat up the house a little with the oven, it meant that I could make some more of the best peanut butter cookie dough ever and enjoy it with a triple shot latte that Kyle brought me. The BEST. Is anyone like that as well? I usually make myself so sick off of stuffing my face with cookie dough that when the final product comes out, I’m left lying on the ground in a (magnificent) sugar coma.

And I’m okay with that.

Let’s Catch Up/WIAW

Hi friendly faces! Long time no chat. 

I had a super relaxing weekend, but screwed myself over slightly because this week has been jam-packed with work. I had a prelab and lab report due today (along with my 4 hour lab) and juuuussttt finished writing my final essay for my comparative literature class. My final for the class is this Thursday, so I’ve been studying a bit when I’ve had the time.

Let’s catch up!

I went home for the weekend…

Lots of relaxing, hiking, playing with Kyle’s chickens, and working on my photography. I’ve decided to try my hand at actual people photography (don’t worry, my first love will always be taking copious amounts of food pictures) and Kyle was nice enough to pose for me while I worked on my lighting and composition. I have to admit, taking pictures of boys is no where near as fun as girls. No feminine poses or tossing long locks of hair in the sunset with this one 😯 . If anyone has any advice on portrait photography/editing, I would love to learn more!

Breakfast: 

Oats cooked with cinnamon and vanilla extract and topped with brown sugar.

Lunch:

Kyle and I met up for lunch and split a Panda Express feast. I know Panda isn’t “authentic” Chinese, but myyyy gooodness. I could eat orange chicken all day long.

Dinner: 

Since I had a busy day and was working on my essay, Kyle cooked up dinner. He made a quick lemon chicken pasta and cut up some lettuce for a side salad. Yum!

Healthy Chocolate Peanut Butter Fudge

I actually can’t stop eating this right now.

So good. So so so good.

I was skeptical at first, but I have been turned into a healthy fudge believer. Like, do those words even belong together? It’s seems like some sort of food miracle. Hallelujah! 

I’ve actually never worked with coconut oil before. The last time I was at my parent’s house, I noticed an unopened jar hiding in the back of the cupboard. It was just taking up space, so I stole it my mom let me take it back to school with me. SCORE. I opened it up yesterday and took a small taste. I was totally thinking it would be, well, coconut-y tasting, but it’s actually super mild and neutral tasting. And guess what? It helps make the most amazing (healthier) fudge ever!

This is one of those recipes where you keep finding yourself taking leeeetle “taste tests” throughout the cooking process. I think I ate a solid 1/3 of the batter before it even made it into the pan to solidify and I walked around the house for 30 minutes before realizing that I had brown fudge smeared all over my forehead. And not like a little dab, either. Full blown poop-face was happening. But it’s okay, don’t stress. It’s a delicious sacrifice that I am willing to make.

This is a one-bowl recipe that I slightly adapted from The Nourishing Gourmet to include honey as the sweetener. The one catch is that it needs to be stored in the fridge or else you’ll be dealing with a (tasty) healthy chocolate mousse instead of fudge.
