Friday Favorites

Andddd a big happy Friday to all of you! After a SUPER busy week, I’m relieved to have it finally be the weekend. Today’s plan include editing some photos from a super small wedding (!!) I did a few days ago, a best friend session, doing some blog work, going to work at my internship (more on that later), rushing back to photograph a graduating senior session, cooking and photographing a recipe, and NETFLIX! I probably should do some studying, but I always find Friday nights the most challenging in terms of getting myself to sit down with a heavy textbook and actually pay attention to what I’m reading.

Here are some of my favorites for the week!

Long Runs:

run photo

Okay, so I may be stretching the whole “favorite” thing when it comes to actually getting myself running, but the high you get towards the end of it and after is incredible. And when I say incredible, I mean I lie on the couch staring blankly after I shower and can barely walk but feel faaaan-reaking-tastic. My half-marathon is coming up in a little less than a month and we’re starting to tackle some long runs. This last Sunday I ran my first EVER 10 miler (still gawking as I type out that number…) with my housemates Lana and Taylor and with my next-door neighbor, Tom. The 9 other boys that live in Tom’s house were all gone partying at Coachella, so he spent a good amount of time hanging out at our house and on a whim decided to come out and run with us. I kinda hate him for being able to just bust out 10 miles easily, but also loved having him there since he brought in some new conversations and fun to the run. One thing I’ve noticed with running is that after you get past the 6 mile distance, you kinda start to get bored. Lana and Taylor and I always run together and have basically talked about everything there is to talk about, so having some male conversation helped the time pass faster!

Neighborly Notes:

“To the lovely ladies at _____,

I donate these bananas to your house banana bread making efforts, so long as you share some of the banana bread with me.

Thank you, neighbors!

-Tom

P.S: This is in no way some form of gender inequality, except that my whole house sucks at baking. We are grateful for your skills.”

You better believe I made the best damn Banana Bread Muffins with Walnut Streusel and Vanilla Glaze ever. Not bad for a college student, right? No one was downstairs when I walked into their house, so I left a simple note saying:

“Ask, and you shall receive”. 😉

‘Nuff said. Cost Plus World Market is the land of rainbows and butterflies <3.

I ended up getting the cutest little milk bottle decorations (I put some fake flowers in it that were left from my flower crown-making obsession), two huge mason jars for an upcoming post I’ve been meaning to get to, two monogrammed mugs, a gold plate, rustic spoon, and two bowls. It’s like Christmas, I tell ya.

Love Culture is probably my favorite online site to shop for cute clothes. It really caters to my the beacy, bo-ho style and the prices are great! I randomely clicked over during a bloring lecture (shhhh, don’t tell my parents I do this 😉 ) and was excited to see that they’re having a huge sale!

Question of the Day: What are some things you’re loving this week?

Our Little Love Story

Good morning to all of you! I’m currently sitting at my kitchen table listening to the crash of the early morning waves and soft puppy snores of Charlie, the little dog we’re fostering for the weekend. Oh, and did I mention I have a giant latte in front of me? Life is good.

I want to start off this post by extending a giant hug to all of you guys who participated in my poll the other day on what YOU guys want to see more of on the blog. The option of wanting me to write more about my personal life and give an insight on the “behind-the-scenes” workings of Apple of My Eye won by a landslide and that brought a huge smile to my face and made my heart get a little flustered. It makes me all sort of giddy and excited to know that you guys want me to invest more of myself into my blog and I’m going to do my best to get more personal on the site!

For today, I thought it would be fun to tell you more about my relationship with Kyle. He pops up on the blog from time to time and even has a small sub-section under my “About Me”. I guess you could say that means we’re pretty serious 😉 .

So how to start with this little love story? We met for the first time our freshman year, but didn’t end up “getting together” (aka him popping the WILLYOUBEMYGIRLFRIEND LYKE FOR REALZ question) until early November of our sophomore year. I was in the same classes as a lot of his friends and even had some smaller flings and crushes on them (hehe shhhh), so we oftentimes were in the same general area of campus during passing periods and lunch. And yes, our relationship was forged in the bustling drama of teenage lunchtime. #intense. I even distinctly remember trying to set him up with a few of my friends. We ended up going to one of our school’s formals together as “friends”, which helped spark the whole dating thing.

Update: he also just mentioned to me that he also tried to set me up with a few of his close friends, so I guess you could say we’re glad that neither of us are apparently very good at matchmaking haha.

 Kyle Relationship Post Formal

Like all things high school, our relationship was a bundle of awkwardness, general not knowing what the heck was going on, and getting to know each other throughout the rest of our time in high school. Highlights include having the WORST (we laugh about it all the time now, he actually apologized for how bad it was after it was over haha) first kiss ever, many more formals and proms, homecoming court, our school’s senior Europe trip, and more.Kyle Relationship Post Prom#1 Kyle Relationship Post HS 551090_4162109134485_335640478_n Kyle Relationship Post Europe

Kyle Relationship Post Eiffel for him

I captioned this “Eiffel for him” on Facebook and was pretty damn pleased with myself ;)

While it feels a bit strange for me to describe a relationship that started in high school as a “love story”, we’ve been able to grow up together through those crucial teenage years and because of that, we have an incredibly strong bond (he’s without a doubt my best friend) and a shared history full of happy memories. And the most unbelievably wonderful thing that still blows my mind is that it doesn’t stop here. Throughout the upcoming years we’ll only continue to grow closer and closer and more deeply and sincerely in love with each other. A lot of gross, sticky-sweet love talk, but my sentiments completely resonate with Brad Paisley’s song “Then”:

Towards the end of our senior year of high school, everyone was frantic over applying and choosing colleges. At that time, Kyle and I had only been dating for about a year and a half and we agreed that we weren’t going to base our college choices off of each other. We both had a pretty clear idea on what we wanted to do (he has always been set on engineering and I’ve always loved biology) and neither of us wanted to hinder or bias the other in choosing the best college fit. We were planning on staying together and trying to manage a long-distance relationship, but life had other (happier!) plans for us.

At the time, I had absolutely no idea that Kyle had even applied to UCSB. I was pretty sure that I wanted to go to Santa Barbara because my parents had met there (more on that later!), my sister was currently enrolled there, it has a great biology department and gorgeous campus, and it was close, but not toooo close, to home. It wasn’t till Kyle randomly texted me that he had committed to UCSB that I even had the faintest idea that he was considering it! I read the text, promptly screamed and dropped my phone, then frantically called him. It turns out that he had decided on a whim to send in his application to the school as a “why not” kind of thing and once he got his acceptance letter, he started to look into the school more closely and realized that UCSB was ranked #7 in the WORLD in Engineering/Technology. We had both been offered spots in their  honors program, which also helped sway his choice. That upcoming academic year, we both were placed only a floor apart in one of the huge dorms and, instead of trying to work out a long distance relationship in which we would have been miles upon miles apart, he was a 30 second walk up the stairs and down the hallway. Go figure 😉 .

Ever since then, we’ve been inseparable and have been tackling the college world together! We’ll be graduating next year and have plans to find our first official apartment together (even though we lived literally 5 steps away from each other last year in apartments with our friends) and to continue with our education as Kyle pursues his masters in Material Engineering (he has a FREAKING AMAZING internship at SpaceX this summer, so we’ll see where that takes him) and I work on my higher education as well *being vague on purpose, this deserves its own lengthy post*.

To end this, I thought it would be fun to bring a little bit of Kyle into the post. He pops up often, but I don’t think you guys have ever heard much from him directly. I’ll try to describe him a little before he takes the reigns!

First off, please excuse me while I gush a little. Kyle is wonderful and amazing and great and I could go on and on and on incoherently with love-y adjectives, but I’ll try to slow down and describe him a bit more thoroughly. To say that Kyle is supportive and loving is a huge understatement. I have honestly never in my entire life met someone as genuinely kind, understanding, altruistic, trusting, honest, supportive, humble, intelligent, committed, dependable, responsible, gahhh if you haven’t quite grasped it yet, he’s almost weirdly perfect. I also think he’s pretty cayuutteeee and I’ve never been known to complain about those broad shoulders 😉 . He’s the kind of guy who always opens the door for you, insists on carrying anything weighing over a pound (seriously, it’s like he doesn’t think I have arms or something), brings me coffee without me having to ask, laughs and goes along with my obnoxious and terribly corny puns, spends hours searching through sites like Etsy to find that one personalized gift he knows I’d love, is patient and understanding when I’m being irrational and hormonal, and so much more. He makes me feel unbelievably loved and makes me a better person on a daily basis.

So without all that sappy-ness, here’s the boy!

Kyle:

I tend to have a harder time writing than Christine does, especially coming up with smooth intros (this being a perfect example). First let me say she is incredibly loving, fun, kindhearted, intelligent, hardworking, driven, exciting, passionate… the list goes on and on. She brightens up every part of my life and makes me strive to be better. She more important to me than I could ever hope to write down. And yes, her corny puns are actually funny. And in case you were wondering, yes, all of her recipes are as absolutely delicious as they look (I’ve tried pretty much all of them, be jealous). She is amazing at so many things and I am SO lucky and blessed to be able to have Christine be a part of my life and to be a part of hers. She’s one of those people you know will go far in life within the first minute of meeting her. She’s the kind of friend you always want by your side. I can go on and on, but I’ll cut it short by saying she is everything I could ever ask for in a girl and I love her very very much. She asked me to write a short snippet on why I think we work so well together, and I guess it’s because, in addition to sorta kinda liking each other, we can literally do anything together. From running, eating, cooking, watching netflix, going to the gym, doing school work, which we do way too much, we are always happier together.

So there you have it! A brief look into our relationship. In short: we’re both incredibly happy each other and very much in love.

(A big thank you to this guy for loving me unconditionally and putting up with all my craziness!)

Morning Protein Berry Parfaits

This is a sponsored post written by me on behalf of Renew Life Formulas for IZEA. All opinions are 100% mine.

Ahhh the morning! There’s nothing more exciting to a foodie like me than waking up to a bright and shiny new day of EATING. You literally have a clean plate (hehe I won’t lie, I laughed at my own pun just now) to work with and the best part of the morning- breakfast – is tantalizing close. What should we eat? The world is our oyster!

Morning Protein Berry Parfaits-2

Oh, how about a lovely little protein berry parfait? Perfect, I’ll take 10.

Breakfast is all about balance for me. Balance in terms of health, where I want to get my nom on (please excuse that I just used that phrase, I’m kinda embarrassed) but also want to my meals to be filled with nutrients (both macro and micro!) to help keep my body running at its best. Lucky for me, the kind people at Lifestyle Shake were kind enough to provide me with a big tub of their Renew Life Skinny Gut Vanilla Shake which is just a POWERHOUSE of a supplement. It comes with 20 grams of organic, grain-free protein fromseeds and legumes to help build muscle, 10 grams of prebiotic organic fiber, including acacia fiber, to help curb appetite by helping you feel full, organic fruit and veggie antioxidant blend plus vitamins and minerals, and full-spectrum digestive enzyme blend to support healthy digestion and help optimize nutrient availability*. Not a vanilla fan? Try the Renew Life Skinny Gut Chocolate Shake!

Morning Protein Berry Parfaits-4

Another type of balance for me is the actual consistency of food. I’ve always had this weird dislike of eating regular yogurt straight out of the carton because it just seems so boring and the lack of anything but gelatinous texture makes me feel like I’m eating baby food. Not the case in this quick breakfast recipe, though! My creaaamy greek yogurt and protein powder blend practically begs to be topped with fresh fruit and sprinkled (smothered) with deliciously crunchy walnuts. Thump thump thump. Do you hear that? That’s the sound of my heart trying to burst out of my chest for the love of that combination. Be still, my friend.

To make this breakfast, simply mix your favorite greek yogurt flavor with some of the protein powder and layer it into a glass of your choice! I choose to sprinkle walnuts in every section for that extra texture, but if you aren’t a big nut person, feel free to replace them with something more up your alley.

While Apple of My Eye is my personal place to post whatever is on my mind, I’d love to get more of an idea of what my readers want to see. I would appreciate it so much if you could take the 0.1892 seconds to answer my supahhhh quick poll below! Muah! You guys are the best <3.

Oh, and if it matters to ya, your votes will be completely anonymous!

Creamy Banana Avocado Protein Smoothie

Creamy Avocado Banana Smoothie-3

Here I sit, hanging out in the hammock in our tiny oceanside backyard and sipping on this creamy banana avocado protein smoothie after the 6 mile run I just finished. While there are rain clouds looming above me, my spirit can’t be dampened, especially when I have a hipster paper straw to sip out of and another serving of this deliciousness waiting for me in the blender. Life is goooood!

I know, I know. I made these grand proclamations in my previous posts about being totally on top of my game when it comes to my blogging and being super ambitious and fabulous and posting 3 recipes a week and whatnot. Standing on my soapbox and preaching golden promises… none of which have come to fruition 😉 . I thought having only 3 days of class a week would give me tons of free time, but I’ve found myself running around trying to balance all the things I’ve got going on right now! More on that in a future post, but I have some exciting life changes to announce later! Super vague, I know, but it’s a pretty big change-up for me and I want to take the time to sit and get everything down in its own post. In summary, I have been neglecting my little corner of the internet machine but am trying my best to stay up-to-date with posting and keeping up with all you lovely readers! You guys rock for staying with me even when I get a bit shady with my posts. Muah <3.

Creamy Avocado Banana Smoothie-2

So let’s talk smoothie. More specifically, creamy green smoothies that have the consistency of a milkshake, but have ingredients that do amazing things for your body and helps you detox from all the nachos and oreo brownies you may or may not be consuming out of your half-marathon-induced hangry-ness. What? Just me? Unhealthy eating or not, one sip of this smoothie and you will be addicted. It’s liquid gold and I can practically feel my cells and insides thanking me!

While I never really think of smoothies as actual “recipes” due to their simplicity, I always love sharing easy, fast, healthy, and delicious combinations with you guys since it make cooking and eating well more obtainable. My half-marathon training has been going well (the race is coming up fast!) and I’ve been in the mood for supahhhh simple foods that satisfy and refresh me that I can have done and ready to eat/drink in just a few minutes. When the nutella is just a little too accessible (it’s currently staring at me from the top of the fridge), you need to have healthy options just as easy to grab!

Sip away, my friends, sip away.
