Hello lovelies, happy Wednesday! Like usual, I’m excited to share my eats from Tuesday and participate in the What I Ate Wednesday fun! But first, my workout!
I mentioned in my last post that I felt like I was in a slump in regards to my workouts since I got back from vacation, and I got some great tips from you guys! I’ve looked into taking some group classes and have pinned some workouts from Pinterest as well :). Today I made up my own circuit, and man, was I sweaty by the end. After 25 minutes of intense incline walking, I set up a nice little workstation to kill my legs (in a good way!) and finished the circuit twice through before calling it a day.
On to the eats!
Breakfast: a whole wheat english muffin topped on one side with peanut butter and the other with jam and Norwegian goat cheese (I promise, it’s DELICIOUS!). A banana on the side and plenty of coffee to wash everything down.
Lunch: quinoa salad with chicken, onions, carrots, black beans, corn, and brussel sprouts!
I also nibbled on some pineapple. Mhmm!
Dinner: a delicious whole wheat spaghetti dinner made with chicken, tomatoes, garlic infused olive oil (drool), asparagus, and parmesan! This one turned out really well, recipe below :).

I followed dinner with a latte and coconut white chocolate shortbread cookie from Hawaii. Society says not to drink coffee at night for no reason, but I don’t give a pickle, you hear?! Guess I’m just a certified badass. Actually, I’ll probably regret it when it’s 3 o’clock in the morning and I can’t sleep. Womp womp womp.
The life of a badass is one of constant struggle.

Wow, Maui really like their coconut spiked products don’t they! I also admire how you can have coffee/caffeine so late- if I have anything caffeinated post 3pm, I end up having restless sleep. One of my best mates actually feels more sleepy AFTER having caffeine- the other day she was over for brunch and I made her a latte, and literally halfway through she would not stop yawning!

I actually don’t have much of a problem falling asleep after drinking coffee, no matter how late it is. Actually, sometimes I even notice that I’m more tired AFTER coffee than I was before it. Still, I try to play it safe and stick to decaf if I’m craving the taste late at night.

I can go either way, which is kinda weird! If I have a latte, I’m up all night. Regular black coffee doesn’t have the same results, though! If I were smart, I’d drink decaf like you 😉

Norwegian goat cheese sounds very interesting! And so does your cookie from Hawaii!! I don’t drink coffee at all so I know it would have me running around like crazy at night but you are definitely a certified badass. 😉

First, I love the fact you said “whomp, whomp” because I say it about 10 tens every day. Second, I drink coffee at night, too, but I make mine decaf! Not so badass lol. Third, my Italian blood got excited at the THOUGHT of garlic infused olive oil. Oh.my.gosh!

I have been liking quick pinterest workouts as well. I’m going to try out yours soon! Sounds awesome. I like the wall sits May have to build up on those.
I see PB Fingers have that jam and cheese combo all of the time and my interest is definitely peaked. If I am ever able to eat cheese again I am totally trying that out.

Oh my gosh, I LOVE CUTE MUGS. I actually am really picky about what I drink my coffee in (I know, I’m a freak haha). They have to be a certain size and fit in my hand perfectly ;). Glad I found a sister in that!

The box jumps are at the gym! They aren’t really boxes, more like stools! They are so effective, though, and really get my heart rate up! Perfect for circuits :D. Haha can we PLEASE be pinterest friends? Pinterest is my life… therefore, you=my life too. YAY.
