Hello lovelies, happy Wednesday! Like usual, I’m excited to share my eats from Tuesday and participate in the What I Ate Wednesday fun! But first, my workout!
I mentioned in my last post that I felt like I was in a slump in regards to my workouts since I got back from vacation, and I got some great tips from you guys! I’ve looked into taking some group classes and have pinned some workouts from Pinterest as well :). Today I made up my own circuit, and man, was I sweaty by the end. After 25 minutes of intense incline walking, I set up a nice little workstation to kill my legs (in a good way!) and finished the circuit twice through before calling it a day.
On to the eats!
Breakfast: a whole wheat english muffin topped on one side with peanut butter and the other with jam and Norwegian goat cheese (I promise, it’s DELICIOUS!). A banana on the side and plenty of coffee to wash everything down.
Lunch: quinoa salad with chicken, onions, carrots, black beans, corn, and brussel sprouts!
I also nibbled on some pineapple. Mhmm!
Dinner: a delicious whole wheat spaghetti dinner made with chicken, tomatoes, garlic infused olive oil (drool), asparagus, and parmesan! This one turned out really well, recipe below :).

I followed dinner with a latte and coconut white chocolate shortbread cookie from Hawaii. Society says not to drink coffee at night for no reason, but I don’t give a pickle, you hear?! Guess I’m just a certified badass. Actually, I’ll probably regret it when it’s 3 o’clock in the morning and I can’t sleep. Womp womp womp.
The life of a badass is one of constant struggle.
That’s about it for today, can’t wait to see what all of ya’ll have been munching on!
Happy eats to everyone!

xo Christine
So much lovely food! I love your pasta dish too, so vibrant and healthy!
Thanks Jemma!
As delicious and awesome that your pasta dish sounds, I’m really all about your lunch. Love the combination of ingredients
Both were great! My lunch was basically everything healthy in life inside a bowl hahah 😉
Wow, Maui really like their coconut spiked products don’t they! I also admire how you can have coffee/caffeine so late- if I have anything caffeinated post 3pm, I end up having restless sleep. One of my best mates actually feels more sleepy AFTER having caffeine- the other day she was over for brunch and I made her a latte, and literally halfway through she would not stop yawning!
Haha yes sir, they do! And I love the island for it ;). Trust me, I stayed up way too late and paid for it the next morning!
Oh MAN that pasta looks yummy! So does the lunch- okay so does everything! Love that workout too!
Haha both were quite tasty!
This pasta dog does sound fantastic, as does lunch! I love meals that are colorful and flavorful.
I love colorful meals as well
I actually don’t have much of a problem falling asleep after drinking coffee, no matter how late it is. Actually, sometimes I even notice that I’m more tired AFTER coffee than I was before it. Still, I try to play it safe and stick to decaf if I’m craving the taste late at night.
I can go either way, which is kinda weird! If I have a latte, I’m up all night. Regular black coffee doesn’t have the same results, though! If I were smart, I’d drink decaf like you 😉
That leg workout looks great and the pasta looks REALLY delicious!! Just pinned both! Happy hump day!:)
It left me so sore for the next two days! Thanks for pinning 😀
Mmmm I can only imagine how delicious that coconut white chocolate shortbread cookie was!
Oh gosh, I wish I could send you one! SO delicious!
Norwegian goat cheese sounds very interesting! And so does your cookie from Hawaii!! I don’t drink coffee at all so I know it would have me running around like crazy at night but you are definitely a certified badass. 😉
It has a little bit of a nutty taste :). Hahah thanks for acknowledging that 😉
My kind of workout! I may try this one today. Also loved the quinoa salad mix. Looks delicious.
I have to comment again – so impressed with how far your food photography has come
I really need to check out that book!
It was a good one!
I really suggest you look into it! It has helped me out a ton :). I can’t believe how much my photography has improved either hahah!
First, I love the fact you said “whomp, whomp” because I say it about 10 tens every day. Second, I drink coffee at night, too, but I make mine decaf! Not so badass lol. Third, my Italian blood got excited at the THOUGHT of garlic infused olive oil. Oh.my.gosh!
Hahah it is the soundtrack to my life ;). So jealous that you’re italian!!
You should send me some of that Norwegian goat cheese…and some of that quinoa salad…and your spaghetti…and your photography skills because your spaghetti photography is fantastic. (As is the rest of it!) I definitely have issues drinking coffee late at night; I’m so jealous of the people who don’t!
I will send you a feast ;). I wish I could too! I love the taste of it
Looks like a great day of eats! The goat cheese combination is intriguing!
Salty and sweet- one of my favorite flavor combos!
I love cheese and jam, such a great combo!!!!
Isn’t it?! 😀
I have been liking quick pinterest workouts as well. I’m going to try out yours soon! Sounds awesome. I like the wall sits
May have to build up on those.
I see PB Fingers have that jam and cheese combo all of the time and my interest is definitely peaked. If I am ever able to eat cheese again I am totally trying that out.
Let me know if you do! It’s a tough one- especially the walking lunges and box jumps!
That’s where I originally got the idea for it! She puts hers in a sandwich with eggs, right? mhmm!
THAT CHICKEN PASTA. Omg drooling.
SIMULTANEOUS DROOL.
For some reason coffee doesn’t do much for me. Maybe the coffee I drink isn’t strong enough…but I drink it every day. Your pasta looks delicious and I love the graphic for your leg workout!
Thanks! I love picmonkey to death
Oh I am obsessed with those Hawaii cookies! We actually gave them away as favors for people at my wedding. They are so delicious! I’m jealous you have some! Your pasta looks so good!
So glad you feel me on how delicious they are! That sounds like an AMAZING party favor! I might have to steal that idea from you
Mmmm look at those delicious treat! Lately I’ve been into pineapple, so refreshing and light! And this is random, but that coffee mug is way cute
I would drink so many cups with it
Oh my gosh, I LOVE CUTE MUGS. I actually am really picky about what I drink my coffee in (I know, I’m a freak haha). They have to be a certain size and fit in my hand perfectly ;). Glad I found a sister in that!
Nice circuit! I’d probably cut out the box jumps for fear of falling on my butt, haha. I can also drink coffee any time of the day. Way to be a rebel
Box jumps can be pretty scary! Hahah thanks 😉
Yay for your circuit! Question – box jumps -is that at your gym or are you at home? I want to do more of them but I don’t really have a box to do so… Tough stuff. Plus, that picture is absolute precious and let’s be pinterest friends so I can pin it. Thanks!
Suck it, society.
Haha!
Yes to this spaghetti… That is one food that I was raised on and don’t have too much of nowadays – yours looks fantastic!
Like you, I also can drink coffee at any time fakeblondehairdontcare.
The box jumps are at the gym! They aren’t really boxes, more like stools! They are so effective, though, and really get my heart rate up! Perfect for circuits :D. Haha can we PLEASE be pinterest friends? Pinterest is my life… therefore, you=my life too. YAY.
Norwegian goat cheese?! I need that!
It’s so good!
Jealous of your coffee
It was delicious 😀
Wow, props to you if you’re able to sleep after nighttime coffee! If I even drink it in the afternoon, I’m up all night!
It’s one of my superpowers haha! Coffee Woman to the rescue!
Norweigan goat cheese, hey? I want it! I love all cheese so I’m sure I’d be a fan.
I’m sure you’d love it! So tasty
That circuit looks tiring! And your food photography is amaaaazing! I guess that book really helped!
It really did me in ;). It helped a ton!
All the food choices look great! Love the leg workout! Pretty similar to my own!
Thanks girl!
I’ve had a super busy week and my workouts had to take a backseat- thanks for sharing this one- quick but challenging!
Let me know if you try it out! Left me sore for a good couple of days 😉
Brussel sprouts are on thing I have never tried.
They are great roasted, especially with bacon (if that’s your thing!)
Amber: I LOVE them like that!! Mhmm!
Love em’!
The spaghetti looks great!! I love me some pineapple too… one of my favorites! Have a great day!
Thanks Karey, you too!
Regardless of the fact that asparagus makes your pee smell, that garlic chicken spaghetti dish looks fabulous!! Glad to hear that you got your mojo back in terms of workouts!
Haha isn’t that the weirdest thing? Thanks Kailey!
Oh my, coffee at night would have me PUMPED! This post made me seriously crave pineapple, yum
Pineapple=best invention ever 😉
Yay for spotted bananas! They are the best!
I agree! So much more flavor!
The pasta looks awesome! I love garlic 😉 And so does the quinoa salad…..
I love garlic as well! I can never get enough of that stuff in recipes
Coffee is okay any time of the day!!!!
That pineapple looks really good too…I LOVE some fresh pineapple!
