Thinking Out Loud: Summer, Pups, and More!

It’s been a hot second since I’ve participated in the lovely Amanda’s Thinking Out Loud, but I’m feeling chatty today and thought I would throw it back to an old favorite.

Let’s jump right into it!

1. SUMMMMMER!

Anyone else all caught up in the summer joy? It’s been a beautiful one so far and the sunshine, blue skies, and warm evening breeze make for my own personal heaven. I know that in comparison to most other places, California doesn’t really have seasons, but summer is special and this native can tell a big difference 😉 . Don’t judge!

Along with the weather, I’m also in love with the slow-paced life that summer brings with it. Well, at least for another year since by then I’ll be out of school and working like a real-person. Summer break at UCSB is about 3 months long, so I have plenty of time to concentrate on making up on lost sleep from the exhausting school year and really do what makes my soul happy. Likeeee taking the extra time to fix myself a beautiful + nutritious breakfast in the morning to enjoy with a homemade latte.

Chorizo Huevos Rancheros

Chorizo Huevos Rancheros- a healthy savory breakfast option that's BURSTING with flavor!

A crunchy baked tortilla that’s chock full of fresh veggies, flavorful chorizo, and topped with a perfectly cooked egg! These Chorizo Huevos Rancheros are the perfect way to start your day!

I never want summer to end. The toasty warm weather, relaxing vacations in Hawaii, the lazy mornings spent chopping fresh veggies to make a delicious and hearty breakfast. In other words, I want every day to be chorizo huevos rancheros day!

I’m going to be honest here and throw out that I’ve been more of an oatmeal-for-breakfast kinda girl for the last few years, and this is one of the first times I’ve gone the extra mile to make something savory to start the day. It’s not that I necessarily enjoy sweeter things for breakfast more, it’s just that I have my whole oatmeal routine down.

It goes something like this:

Take out the Quaker oats container. Throw a few handfuls into a big bowl, add water and a sliced banana. Microwave for two minutes (laziness reigns supreme when I haven’t had my morning latte yet). Stir in a splash of vanilla extract and a mountain of cinnamon and sprinkle brown sugar on top. Done and done. Easy as that.

While these do take a bit more time than my morning oats, they are so worth it. The crunch from the baked corn tortilla that’s supplemented by a giant burst of flavor from all the chopped veggies. That drippy egg yolk that gloriously breaks in slow-mo and drizzles over every part of the dish. Oh! And good amount of queso to top the whole thing off and add a soft and creamy texture. Can you hear my heart pounding?? I think I’m in love. 

I pass these off as a breakfast food, but c’mon, look at how versatile they are! They’re a cross between a deconstructed omelet and crunchy taco, which automatically allows them to traverse the breakfast-lunch-dinner boundary.

As usual, I had Kyle by my side throughout the cooking process to help be my official taste tester and overeater. It’s a hard job, but he’s always up for a challenge. I actually put him to more work than usual this time and had him cook up the eggs and left him busy trying to form a “good-looking egg”, which he obviously took to mean perfectly circular. Kyle  is the type of guy that gets borderline obsessed with trying to figure out how to fix or make things a certain way. Like I mentioned before, the engineer in him gets him fixated on any and all projects. Sunny side up eggs are no exception.

25 minutes later and with scraps of egg and cookie cutters lying around (don’t ask, he tried to use them as a mold), I forced him to give up. While the perfectly circular egg eluded us, this recipe was still a big success ;).

After the most stressful year I’ve ever had, I’m living in a beachside house with a great group of girls and even though I’m taking summer classes, my earliest lecture doesn’t start till 11 in the morning and I have three day weekends. Every week, you guys 😯  .

So now that I have an entire morning to catch up on blog reading over a filling and tasty breakfast, you better bet that I’m taking full advantage of it!

One of the perks of living with so many friends is that there’s always someone who is willing to be a taste tester. After finishing up shooting pictures of my newest creation, two of the girls wandered into our kitchen and snuck a bite. Their verdict?

“THIS TASTES LIKE DESSERT!!”

And yup yup yup, it’s that good my friends. Tangy, fresh, sweet, creamy, and healthy. What more could you want? My game plan is to double the recipe and store some of the easy strawberry compote in the fridge to quickly top my oats in the morning and save time and gain yummyness.

Also, can we all give a big hurrah over all the summer fruit that’s in season? My mindset right now is eat all the berries and I’ve been devouring cartons on cartons of blueberries and strawberries like nobody’s business. Berries beware. I’m on the loose.

Most mornings, I’m lazy when it comes to breakfast. My go-to meal to start my day lately has been microwavable brown sugar banana oatmeal, which takes all of 30 seconds to throw together and another two minutes in the microwave. While it’s delicious, easy, and fast, there are days (especially the day after lifting weights) where I find myself hungry an hour later and know that I need more in the protein department of things. 

Enter: Healthy Edamame Sweet Potato Hash!

Not only is it absolutely delicious and bursting with all the good things in life (read: bacon), it packs in a ton of different nutrients, flavors, textures, and, of course, protein!  

Let’s break down the cast of characters:

Sweet Potato: the sweet potato brings in that mouthwatering sweet and salty combination, as well as the vitamins B6, C, and D, which help in preventing heart attacks, warding off the cold and flu, and maintaining energy levels, moods, and building healthy bones. Not only that, but they also contain fiber, which helps to keep you full and your poop happy! (Did I really just type that…)

Edamame: not only does it have a vibrant coloring (I want my next Kitchenaid Mixer to come in the shade “edamame”), but it’s also rich in protein, vitamin C, manganese, and copper! Manganese helps your metabolism, regulates your blood sugar levels, and helps keep your nervous system alive and kickin’. Hooray, manganese! Copper plays an important role in managing energy, boosting your immune system, and strengthening your bones. You go, Glen Copper!
