Fluffy Greek Yogurt Biscuits- less than 110 calories each!

Is there anything better than a steamy-hot biscuit that’s straight out of the oven? Dab on a pat of butter and a drizzle (or river, #realtalk) of honey and you’re in comfort food H-E-A-V-E-N. 

WAIT. I’ll tell you what’s better than that. A biscuit that’s been healthified with greek yogurt and less butter, but still has all the fluffy goodness of those fattening refrigerated biscuits. And yes, I’m looking at you, Pillsbury.

To be honest, I never was much of a biscuit girl until I started dating Kyle. Since I’m half Norwegian and half Japanese, the dinner table usually revolved more around potatoes and sushi. Kyle is, well, the most all-Americain boy you’ll ever meet and his great grandmother would make the family the most unreal biscuits and gravy. I’m talkin’ about a deeeelicious homemade gravy that’s seasoned to perfection with chunks of flavorful sausage in every bite. Then you top a warm and flakey biscuit with a huge ladelful and ERRHHHMAGAAA.

Kyle and I have the recipe (a closely gaurded family secret, so it won’t be making an appearance on the blog), but it never turns out exactly as good. It’s close, but not quiiiite there. I’m pretty sure the secret ingredient is a great-grandma’s love. I guess I’ll just have to wait till I’m 90 and then give it another go 😉 .

So anyways, I’ve been having biscuits on my mind lately and decided to whip up a batch since I had all the ingredients on hand. Supah simple, friends. A mixture of whole wheat and white flour, an egg, a leeeetle buttah, and some nonfat plain greek yogurt. You mix err’thing together, pop em’ in the oven, and shaaazammmm! Biscuits! Who would have thought? 

Not only are these easy, but they are lightened-up with only 110 calories each and with loads less fat than normal biscuits, making them more of an everyday treat for me! Let’s pretend I don’t smother my biscuits with honey for the “healthy” sake of this recipe 😉 .

Fudgy double chunk dark chocolate flavor with salted caramel swirls on top that stare deep into your soul? Yes please. I kid you not, this salted caramel lave brownie cake is richer than Bill Gates. 

Let’s backup a few days to Halloween. Kyle and I left early from Santa Barbara and drove down to our hometown to surprise his family with a visit. UCSB during Halloween is basically chaotic madness and we chose to leave our little Isla Vista for the fun of giving out candy to all the adorably dressed little kids in his neighborhood. You would think by now I would be sick of candy (especially accounting for Kyle’s mama buying 900 pieces of candy to hand out with plenty extra), but I’ve just been plain sick, which has taken a major toll on my appetite. I thought it would only be fitting if I got in my chocolate fix with these babies.

This recipe is guaranteed to satisfy any chocolate or sweet tooth craving you could possibly have and make one heck of a potluck dessert. You serve these basically straight out of the oven and they are gooey perfection. Excuse me while I wipe fudgy deliciousness off of my keyboard because the melty chocolate is just a leeeeeetle outta control. This is madness! NO. This is Salted Caramel Lave Brownie Cake!

What was I saying? Sorry I get hypnotized by freakin’ salted caramel melting itself into that perfectly crackled top and soaking into layers of chocolate.

Also, I think it goes without saying that I won’t be calculating the nutrition for this post. This recipe is goooood for the soul and a little sugah and buttah is fine once in a while. And by once in a while I mean for breakfast, after-breakfast coffee break snack, post-lunch dessert, pre-dinner appetizer, and for real dessert. Then we all can collapse on the sofa and breathe a happy sugar-coma sigh of happiness. K?

Thinking Out Loud: Meet-Ups & Malevolent Toasters

Oh hai there, Thursday, you’re finally here! I’m pretty excited for this weekend since Kyle and I have some fun things planned. Let’s get on to some Thursday randomness hosted by the lovely Amanda!

1. Shockingly, I’ve never met up with someone I’ve come to know from blogging before!

When Kailey contacted me on Twitter to meet up at the local farmer’s market (We live reeeeallly close to one another), I jumped at the opportunity! Oddly, I was a little nervous about meeting someone in person, but those nerves were soon put to rest because she is just the c-u-t-e-s-t piece of sunshine ever! We grabbed some Starbucks, strolled the stalls (she got free carrots AND a free Japanese sweet potato from the vendors… score), and just chatted for an hour and half or so. It was wonderful!

2. TAYLOR SWIFT’S NEW ALBUM IS OUT. 

So I don’t think I’ve ever mentioned this on the blog before, but I love Taylor Swift. I understand why people don’t like her and I’m not saying her music is super deep or of the best quality, but I DON’T CARE OK. She’s my homegirl and I listen to her songs on repeat. This is her first new album in 2 years, so I was more than ready to hear a bit of her new style and pre-ordered it well in advance 😯 . I have to say, though, that I kinda miss her old country-ish music.

3. Do you guys still want monthly income reports?

I haven’t posted on in the last few months because 1. I’ve been super busy and 2. I don’t know if you guys are getting much out of them since I feel like I’m repeating things like a broken record.

4. I’ve been feeling kind of antsy about my hair lately and have been thinking about going slightly lighter with some pretty caramel highlights put in. I wouldn’t be going bleach blonde or anything, but sometimes a girl needs change. Thoughts?

 5. The toaster scares the hell out of me.

I get startled extremely easily and I honestly can’t stand next to the toaster if I know it’s going to pop the toast up soon. Like, toast comes viciously SPRINGING OUT of this malevolent machine and gives me a heart attack. ARE YOU KIDDING ME TOASTER. STOP IT. Just me? 😯 😯 😯 . It’s probably just me, huh.

6. Is it Fall yet?

While the rest of the country gets the joys of crunchy leaves, boots, and sweaters, I’m still in sundresses and sandals. It’s hard to enjoy your pumpkin spice latte (#whitegirl) when you sweat while you’re drinking it…

WIAW: Busy Busy

Hi friends! Today’s WIAW is going to be short and sweet since it’s been a long day and my bed is looking pretty tempting at the moment.

Breakfast:

Made in a hurry since I was trying to catch up on as many blogs as possible before my 8 am. Life has been pretty busy lately and I miss being able to sit down in the morning and see what everyone has been up to! Breakfast included scrambled eggs with a piece of whole wheat toast with peanut butter.

Coffee Break:

I was pretty much dead by the time I got out of my first class, so Kyle and I headed over to a small cafe that’s located within the engineering part of campus to grab a double latte and coffee cake (lurrrrveee).

Lunch:

A few classes later, I picked up a small chicken cous cous soup with a whole wheat bread stick from one of the eateries on campus!

After we ate, Kyle and I headed over to the tennis courts and played for an hour or so with me before he went to practice with the club tennis team. I came back home to finish an essay (yuck), but was equipped with some chocolate and coffee (yum), so things were a bit more bearable 😉 . I have a few more sentences of my concluding paragraph left before I’m all done. Woo! 

So that’s basically my day of eats! Hope yours were faaabb!

Thinking Out Loud

Wowweee, this week has been busy. I meant to do a weekend recap in photos, but couldn’t find the time to put it together. My molecular genetics midterm was this Monday, so I amped up my studying for the few days before the exam with hours and hours of flashcards, textbook reading, practice questions, and drinking coffee. Emphasis on the coffee 😯 . At this point, I think my veins are running on black coffee. Luckily, I think my midterm went pretty well!

Anyways, since I had focalized my attention on genetics, I need to catch up with my other classes, general blog maintenance, creating/photographing/blogging about recipes for both AOME and for my contributing work at Savory Style, working out, and socializing. Ack. I need more hours in a day.

So anyways, let’s get on to some Thursday randomeness, made possible by the lovely Amanda from Running with Spoons.

1. Farmer’s Markets are theeee best.

I’ve been going to the local Farmer’s Market every Sunday with Kyle or some of my girlfriends and just plain adore it. There’s a certain happiness in the atmosphere that comes from pleasant people spending a lazy morning promenading up and down the stalls with smiles on their faces. And don’t forget the free samples <3.

2. Taylor’s dog… OMG. 

Okay. HOW CUTE IS THIS DOG?! He belongs to Taylor (Kyle’s little brother’s girlfriend –> I love her) and I get lots of adorable snapchats of him. If anyone else has a snapchat, let me know!

3. Cookies from Sophia

One of my housemates works at a local coffee shop and is constantly bringing us unsold cookies from her shifts. Imagine me stumbling downstairs in an irritable sleepy stupor and coming across two big bags filled with mountains of cookies. And I’m not talking your everyday run-of-the-mill cookies, I’m talking about Reese’s PB with big chunks of chocolate, sugar cookies made with cream cheese so that they’re incredibly fluffy and delicious, mint chip, and oodles of other flavors. Needless to say, my morning coffee has never tasted better. 

4. I’ve come across a new food obsession…

…popping my own popcorn on the stove top and smothering it in garlic salt and parmesan. It’s SO much better than the microwavable bags of the stuff and fabulously entertaining. It’s not unusual to walk into the kitchen and see 3 or 4 of us girls just standing around the stove laughing and clapping our hands in excitement while we watch the popcorn explode. It’s the little things, my friends.

5. Internet shopping is great in a million different ways, but in the end it just makes me want to buy all the things 😯 .
