The game involves stuffing as many of these skinny dark chocolate strawberry muffins into your mouth in one day as possible.

Don’t you like games like this? I sure doooo. But really, I think I have a new favorite healthier muffin! I’ve tried a good number of “healthy” muffins in my time, and I’ve found a lot of them to be disappointing. Dry, lack of flavor, general “meh”-ness. These are anything but that! Prepare yourself because these pretty little gems are fluffy, but dense at the same time and perfectly sweet with bites of dark chocolate and strawberries.

My heart is pounding in my chest and I’m pretty sure it’s the sugar rush, but I’m going to play it off as infatuation with all the flavor and those bites that are perfectly studded with chocolate chips (as in a ratio of 5 chips per inch of muffin, please). I mean, COME ON PEOPLE. AHH.

I think I tortured my housemates with this recipe. Oftentimes I’ll make a recipe at night and photograph it the next day since my class schedule is all over the place and I need certain natural lighting for my photos. My friends know this and won’t touch what I make without the ready… set… EAT from me. I left these out and was gone for most of the day, and came back to a living room full of girls saying “CAN WE EAT THEM”. I gave the green light and they were promptly demolished with plenty of yums and happy filled stomach noises. Woo! Success!

These muffins are made without any butter (coconut oil and greek yogurt replace it), and have a combination of whole wheat flour and white flour to balance health and flavor. Each one comes out to just under 230 calories and are just plain delicious <3. These will be your morning coffee’s best friend and will satisfy any sweet tooth craving that hits!

Thinking Out Loud

Words are failing me as I try to write a clever and creative intro. Let’s just jump right into things! A big thanks to the lovely Amanda for hosting Thinking Out Loud!

1. Fall is coming! I think… Since it was a frigid 55 degrees yesterday morning, I wore one of my first sweater/boots outfits of the season. The boots are from Hautelook and are absolutely gorgeous, but I have to literally wrestle them to get the zipper up and over my muscular calves. They’re comfy and not overly tight when they’re on, but man, it’s like having an extra workout in the morning. The sweater is from Forever21 (like $15 bucks!) and is one comfy mofo.

2. Also, throwback to a few weeks ago when I got my hair colored. I’ve never done anything like it in a salon with it before, so I was a little immature when they put my head in this spaceship helmet thing. What does it even do 😯 ?!

3. This music video. Taylor Swift is crazy and I love her for it. Also, that guy… hubba hubba 😯 . His glance at 19-21 seconds… *pass out*. 

4. You know those recipes that are extra delicious because of the nostalgia you have over them? This lasagna fits right into that category! The recipe is from my Obachan (Japanese for grandma) and one that my mom grew up eating. It’s funny because it is the best “Italian” lasagna I’ve ever had, but it comes from a tiny asian woman and the secret ingredient is taco seasoning. Go figure.

5. Speaking of food, check out my new recipe on Savory Style! This one is for No-Bake Salted Caramel PopCorn, and it is to die for. My friend, Darinne, is making a huge batch of it sometime this week to hand out for some project she’s doing for our student health organization and you better believe I’m snagging 30 a handful 😉 .

Staying Healthy In College

College is, without a doubt, one of the most exciting times of your life.

New friends, new places, and new ways of thinking. You’re exposed to an entirely different way of life and it can be a bit overwhelming at first as you try to settle into your niche and start discovering who you are, all the while trying to keep up with school work and friends. Trust me, I’ve been there!

College is one of the biggest balancing acts you’ll ever go through and there are a bunch of different aspects that I could write pages and pages on, but today, I’m going to talk about health.

While we all are different, here are some of the things I’ve picked up during my time in college in terms of maintaining my own personal version of health:

1. Take a health/nutritional science class.

Most of us entering college are vulnerable when it comes to our self-confidence and knowledge of the world. I’d say the majority of the time we’re only exposed to one misleading face of health: thinness. It splatters the covers of magazines we see at the grocery store and subtly screams at us from actors in movies. We’re groomed and conditioned to associate a smaller body with health and fitness and beauty and being loved and sought after and NO.

Stop this way of thinking!

Open up your mind to the fact that health is so much more than your weight. You need to dissociate the two words of “skinny” and health from each other. Throw them from your mind and feel how liberating it is! Health classes give you a more holistic view of health and learning about things such as vitamins, cholesterol, bone density, mental well-being, and how the small things work together to bring about your definition of “health”. For me, taking a nutritional science class my freshman year helped keep me from falling into the trap of focusing on thinness as the main indicator of health and becoming obsessed with the pursuit of it,

2. Surround yourself with positive people who don’t judge or belittle you.

Don’t put up with people who don’t love you just the way you are. We all know those people who make you feel shitty about yourself, whether it be based on your body image, intelligence, religious views, etc. You don’t have time for them! Surround yourself with people who don’t put you down and who you genuinely like. College isn’t like high school. You aren’t trapped in a small bubble and friend group. When you get to college, you’re going to be surrounded by wonderful people who will become your best friends. My friend Kelty is a great example of this. She’s an absolute gem and I could go on and on about her fantastic qualities. Since I’m trying to keep it short, feel free to check out the guest post she did for me called “Never Merely Pretty”. 3. Find a workout body.

Working out doesn’t have to be a drag. Find a workout buddy and go explore new trails, play a sport, hit up the gym, etc. Have fun with it and start incorporating exercise with your daily life in an enjoyable way!

4. Don’t be intimidated to lift weights.

Friends. TRUST ME. No one cares if you’re sweaty and lifting heavy things.

I know a lot of girls get self-conscious when they’re in the weight room with big beefy guys who have muscles the size of friggin’ King Kong, but in all honestly, they probably don’t care if your hair is up in a messy ponytail or that you’re face is red from the badass cardio you just did. They’re too intent on their workout to notice you and don’t think anything of it. I’ve bench pressed/spotted with my enourmous 6’4 rowing friend, Ryan, before and no one even batted an eye, nor did he feel like it was weird. I repeat, NO ONE CARES.

Lifting weights in no way make you more “manly” or less feminine and it’s essential in helping you maintain a healthy bone density and improving your quality of life now and in the future. Go lift!

5. Fill up your dorm room/kitchen with healthy snacks!

Personally, I have a very out of sight, out of mind view when it comes to food. If I have healthy snack options surrounding me,  I automatically go for them instead of stuffing my face with potato chips every night while I study. Here are some of my favorite snack foods:

6. Finally, health isn’t an all-or-nothing thing. 

Yes, I exercise and eat right, but there are plenty of times where I don’t. Late night pizza with friends and eating straight out of pints of ice cream while watching Netflix occur regularly for me. I don’t workout when my body is tired and oftentimes, I skip the gym in favor of going out dancing and partying with my friends. It’s part of my college experience and I wouldn’t trade those times for the world. Your mental health and happiness is just as essential, if not more, than your physical health. Take care of yourself, but don’t restrict or confine yourself from living.

Delicious, healthy, and so easy! This vegetarian recipe for cheesy quinoa & veggie stuffed bell peppers is the perfect way to lighten up your meal without sacrificing flavor!

Howwwwdy ho party peeeeeps. How is this fine Monday treating ya? I’m feeling a bit blue since it’s back to a busy schedule and I have a full week ahead of me in terms of class and studying. The one positive note is that I only have one more midterm to get through before Thanksgiving break, which means just one more midterm until I’m free to cook/bake/craft/photograph to my heart’s content!

And by that I mean I’ll probably be just sit on the couch and veg out with my good pal Netflix. #realtalk #Netflix=bae. 

In the meantime, I’ve been spending most of my time in the garage, which we’ve converted into a study room of sorts. I’d take a picture to show ya’ll, but it’s a disaster and I’m a little embarrassed to show it off 😯 . We’ve managed to comfortably fit 6 full-sized desks among the piles of boxes, extra bikes, and suitcases in a make-shift office, and while it’s not all that pretty, it’s incredibly functional. We have grand plans to make it more home-y and happier by putting in a rug and twinkle lights, but amidst the 43584119 midterms that come with the quarter system, no one has had any time to decorate. One day!

Anyways, when I’m not studying in the garage, I’m at the kitchen table getting constant whifs of the scrumpditiliumptious creations my housemates have been cooking up, one of which is a tasty and fun baked bell pepper that Lana (our foreign exchange student from New Zealand) makes. While her version is made with ground meat, I chose to go down the veggie-filled route and made my own version that’s filled with herbed quinoa, black beans, onions, sweet corn, cheese, and plenty of other goodies to add extra fresh flavor and texture! I have to admit, I’m usually a pretty big meat girl (my Norwegian steak and potato side demands it), but this recipe totally satisfied me and didn’t leave me with any cravings! It’s satisfying without needing any meat, ridiculously filling due to all the fiber and protein from the quinoa, and is oh so easy to make!

You even get to package the filling in an edible container. Hot diggity dog!

While I chose to use these fillings, the world is your oyster. Feel free to add in ground turkey/chicken/beef/pork (just make sure to cook it first) and any veggies that tug at your heartstrings. #noveggiesleft behind #whyamIhashtaggingsomuch . For this particular combination, the nutrition comes out to just around 300 calories per pepper with a whopping 11g of fiber and 14g of protein.
