Hello hello, friends!

Wow, has this week been a doozy or what. And doozy is a cute name for it. My stress levels have been through the roof and I’ve been surviving on 4-5 good hours of sleep a night. But I’m almost done! Just a stats quiz on Friday and my hell week will be over. Hooray! I bring this up because a.) I’m a complainer and need to vent and b.) I have a fun giveaway for a product that helped me get through my midterms!

They’ve been a godsend in terms of convenience and helping me get in the nutrition to fuel me through my week. When I’m stressed, I tend to lose a significant amount of weight by forgetting to eat from being to busy and because food makes me nauseous. It’s weird, I know, since most people stress eat, but I work the opposite way and my appetite is completely shot. Regardless, it’s definitely no bueno and I find it hard to keep up my energy levels. That’s why these bars are perfect for me! Not only are the absolutely delicious (the Dark Chocolate Sea Salt is one of the new loves of my life [emoji black heart suit], sorry Kyle), but they’re made from all natural ingredients that you can actually pronounce. I was sent the Healthy Indulgence Cube which not only has the coolest box design ever, but allowed me to sample eight different fantastic flavors. Out of the eight, there wasn’t a single bar that I didn’t love and I would definitely recommend them to anyone who is looking for a snack that is all natural non GMO, gluten free, low glycemic, high in protein and fiber, and low in sodium! Whew, that’s a lot of good packed into one delicious package! Here’s my thoughts on my top three flavors:

Dark Chocolate Nuts and Sea Salt
Okay, okay. I know this is the third time I’m bringing them up in this post, but I can’t help it. These are just downright amazing and have the perfect sweet and salty blend of flavors that make them one of my favorite bars of all time! This bar contains three different types of nuts and is gloriously drizzled with lots of dark chocolate. What more could you want?

Peanut Butter Dark Chocolate
Continuing with the dark chocolate trend, this flavor comes in at a close second. You can’t really go wrong with the classic pairing of PB and chocolate, so I knew it was going to be a winner the second I saw it!

Blueberry Pecan
I love this bar as a refreshing change from my dark chocolate obsession! It’s perfectly sweetened and reminiscent of blueberry pie.

Thinking Out Loud: Blog Gainz and Random Thoughts

Here we goooo!

 1. I’ve been making some pretty cool blogging gainz lately. Here are some of the fun things happening on Apple of My Eye at the moment!

  • I put up a new subscription bar at the top of my site and am trying to be good about sending out my mailing letter when I create a new recipe. Speaking of my mailing letter, I use Mailchimp and design each one of them personally. *Ahem self-promotion alert* you should sign up to get updates ;).

  • I updated my recipe page! Instead of just seeing boring text, now you can just click on an image that seems appealing and be taken to the recipe. The plugin I’m using is incredibly useful and updates my pages automatically for me when I post a new recipe. Love it!

  • I got hired for another freelance recipe job! I have to admit, it’s pretty cool for a college student like me to be offered jobs. Building up that resume! I am a little worried about the time commitment, though. I work for another health site as well and want to keep Apple of My Eye running too. My future seems like it’s going to be extremely food filled!

If anyone is interested in a tutorial post about how I got these new bloggy things to happen, just let me know :)! 

 2. Latest food obsession? Kefir (a probiotic yogurt smoothie), cottage cheese, and granola. It’s packed with a ton of protein to help keep me full and it’s just so tasty and refreshing.

3. Active dates=the best. It’s been awfully windy around here, but Kyle and I still managed to get in a walk near the beach to stretch our legs and chat a bit. There’s nothing I love more than spending time with my best friend!

Dark Chocolate Brownies with Peanut Butter Frosting

Can we just take a look at these for a second, please?

Actually maybe we should take a few minutes. Or hours. I could stare at these babies 4eva. 

Gooey. Stuffed with big chunks of dark chocolate. Topped with the most delicious peanut butter frosting you’ve ever had! Seriously, I could swim in that frosting and probably ate a good quarter of it straight out of the bowl before topping the brownies.

It’s a frosting-casualty that I’m willing to sacrifice.

You know, me and brownie go waaaaaay back. They probably come in second as my favorite dessert (apple pie will always hold the gold medal in my heart), and I ain’t no brownie snob either. Give me a pre-made box of brownie mix and I’m as happy as a clam. A clam with brownie batter smothered all over its shell. What am I talking about again? 

Oh yeah, these.

They’re made entirely from scratch, but come together ridiculously quickly. I can probably have the batter done in less than 10 minutes, and that’s with me stealing bites every 4 seconds. Yes, that’s right. 4 seconds to be exact. The base layer of these gorgeous little love bites comes from Something Swanky. I found her recipe off Pinterest (also you should follow me so you can see all 9 million recipes I’ve pinned) a few months ago, and don’t think I’ll ever use another brownie recipe again. Thick, fudgy, and with big ol’ chunks of chocolate. What more could you possibly want? 

And now I really need to get back to talking about this frosting. I want to spend all of my waking hours combining butter and powdered sugar and peanut butter and happiness and then eat it out of the mixer with a spoon the size of my face while watching Game of Thrones on the couch. Very specific, I know, but that’s my dream in life.

It’s just so light and fluffy and perfectly sweet that I can’t even handle it. I just want to nosh all over it SO HARD. And you will too, once you try it.

A Bit of Profoundness and a Lot of Apple Pie

Ahhhhh vacation. Such a beautiful word, no?

I’m currently reveling in all the free time I have and am completely thrilled to have a week left before it’s back to the grind. My top concerns right now include making sure that I get in my Netflix fix and that I spend plenty of time on the couch with my kitty. Priorities, people. Get them straight. 

Today was just one of those lovely days that make you truly appreciate life. I’m not even sure what seemed so different about it (other than not having my face buried inside a textbook), but I found myself sitting back throughout the day and just feeling a sense of immense gratitude. Gratitude towards my family. Gratitude to the friends I’ve made through blogging. Gratitude to the quiet stillness of the morning. The list goes on and on. It’s strange how some seemingly normal days can give you that profound sense of peace and recognition of how wonderful life is. 

Anyways, enough with all the deepness. Ain’t nobody got time for that much reflectiveness on a Monday. If I keep this up, I’ll probably turn into Ghandi or Aristotle by the end of the week. Sheesh. 

So here’s a quick recap of my Monday!

It’s pretty bizarre for me to wake up past 7 most days, so the fact that I’ve been sleeping in till around 8-8:30 is pretty cray cray for me. It may not seem like a huge jump, but I swear I have an internal clock that gets me up within 30 minutes every day without an alarm. I’m assuming my tiredness comes from a combination of post-exams exhaustion, being sick, and having sore muscles from weightlifting. I’ll take all the extra rest I can get, though! 

After waking up, I pitter-pattered around the house for a while before settling down on the couch to watch a documentary and eat a batch of my Brown Sugar Banana Oats. I’m sure I’m boring  you guys to death with this meal on repeat, but it’s just so darn good. Also, fun fact! While Kyle doesn’t really swear often, when we first started dating, his go-to curse was “gosh darnnit”. I still don’t know if I think it’s cute or if I want to throw up rainbows and unicorns. Guess I’m somewhere in between. (Just kiddin’, babesical. Love ya <3).

The rest of the morning was spent relaxing and napping, before heading out to Home Goods to grab some pretty dishes to use for my recipe photography. I guess I know I’m getting older by how excited I get over shopping over kitchen supplies haha! I also picked up an adorable soft pink and tan makeup bag as an impulse buy. One of the highlights of my day was thinking I only had a few bucks left on my gift card, but having it completely cover my purchases. SCORE! 

By the time I got back, it was a bit dark to get good photos of my haul, but I’ll get some pics up soon!

After my shopping adventure, I headed over to Kyle’s house to spend some time with him and his family.

We caught up with everyone, then ate a delicious home-cooked dinner that a family friend brought over before starting last Sunday’s episode of The Walking Dead (anyone else obsessed with that show?).

We paused our show time to quickly run over to the store to pick up the ingredients to make…. APPLE PIE!!!! If you guys don’t remember, I have an obsession  deep love for apple pie and, well, was a bit excited if you can’t tell.

Get in mah bellehh. SO GOOD. If anyone is interested in having a flavor explosion of deliciousness in your mouth that brings forth every happy memory you’ve ever had, I’d recommend Grandma Ople’s Apple Pie recipe. By far one of my all-time favorites and the only adjustment I ever make is to add a dash of salt to make a salted caramel version. 

After the pie had cooled, we cut up a piece for each of his family members before serving ourselves and finishing our show. Talk about a perfect evening, right?

And that’s about all I got for you guys for the moment! Tomorrow’s plans include possibly taking a class at the gym, cooking up some new recipes, some freelance work, and planning an upcoming BBQ. The good life :).

I’m Alive!

Hi there, friends! I’m alive and survived a hellish set of finals. All of them were tough, but I’ve been pacing myself throughout the quarter (hello 4-6 hours in the library at least four days a week), so most of them were manageable! I’m hoping for mostly As, especially in organic chemistry since it’s been sucking the life out of me… slowly and painfully. GIVE ME MY A!!!!!!

Okay, enough sleep-deprived ranting. Here’s what I’ve been up to!

After my last final (ochem) on Thursday, I came back to my apartment and tried to sleep a bit. A few days ago, I started to get sick and I wasn’t able to get too much shut-eye since I had trouble breathing with my stuffy noes. It was fabulous having no guilt over taking a break, though, and I cleaned a bit, then watched a past episode of The Walking Dead with Kyle after he finished his Physics exam. After, we went on a walk around our neighborhood. Isn’t the Santa Barbara area gorgeous?

 image image-3We also stumbled on to our campus labyrinth and spend a good chunk of time wandering towards the middle of it and just chatting. 

image-1Not wanting to get stuck in that horrible LA traffic, we left around 7:30 at night after grabbing some Starbucks. I got a caramel frappuccino with extra caramel and it was the perfect post-finals treat! 

Andddd ever since I’ve been home, I’ve either been sleeping through my cold thanks to the magic of Nyquil or parked on the couch watching Netflix. Life is good!

My posts will be much more regular now, so thanks for stickin’ with me through my finals week :).
