My name is Christine and I’m currently a senior in college majoring in biology at the University of California at Santa Barbara.  I started this blog as an outlet where I can express myself and blabber on about the small happenings that make up my life as a student, post my recipes for family and friends, and incorporate my love for photography into an online diary of sorts.

While my initial intentions were just to keep the blog small and for a select group of friends and family, it has grown into something I had never imagined it would and I am blessed to be able to call Apple of My Eye a small business!

Here, you can find tons of (mostly) healthy recipes to help fuel your day without lacking in flavor. My take on health is all about balanced and I find joy in living one filled with laughter, good food, fitness, and family and friends! I love the feeling of a strong body and mind and seek to be my personal best and find my definition of a balanced lifestyle. I started lifting weight a couple of years ago, and have never looked back. I’ve taken several college classes on the principles of health promotion, nutritional health, and exercise and sports studies, but am no where near as learned as where’d I’d like to eventually be! Apple of My Eye is a way to chronicle my educational pursuits and to share my findings with anyone who cares to read.

DSC_0852Some of my passions include cooking and baking, photography, giraffes (how could you not love them?), and spending time with my wonderful boyfriend of almost 5 years, Kyle. He’s the most kind, supporting, and loving guy I have ever met, and I plan to stay in his life for quite some time.
