Friends! Look what I did! I took summer and put it into breakfast just for youuu.
Light, delicate crepes that are stuffed with sweetened strawberries and topped with a cheesecake drizzle. Heart eyes.
This recipe wasn’t a spur of the moment thing. I’ve had my mind made up on making crepes for probably half a year. The thing with food blogging is that a million different recipe ideas that pop into my head every day and most of them end up being pushed to the back of my mind until something brings them back to the surface.
That something for me is the overwhelming amount of fresh strawberries at my local Farmer’s Market and grocery stores. Cheap and plump and perfectly shaped. And now I’m laughing at my laptop because that comes off as a pretty explicit description but YUM.
So anyways, these beautiful strawberries put crepes back on my mind and I was considering just doing the plain ol’ chocolate crepe, but then decided I wanted to put some excitement in my life and do something a little more riveting by putting a cheesecake spin on the recipe. And I know what you must be thinking: how does Christine handle all of this craziness?
Man, I don’t even know. It must be my adventurous soul 😉 .
These crepes make for an amazing breakfast/brunch/snack/dessert/just because meal! I usually cook around 2-3 p.m so the food will be done in time to photograph it in good natural light (unless I’m using my artificial lighting system), so these were happily consumed as a late lunch for me. I ended up saving some of the batter to make for dessert after a dinner of baked lemon chicken and it was the perfect sweet note to end the night! I’ve been trying to eat a little healthier overall, so I chose to lighten up this recipe by exchanging most of the white flour with whole wheat, using low fat cream cheese, and reducing the overall amount of sugar and relying mostly on the natural sugars in the strawberry. Make little changes that are sustainable for you and you will be able to find that balance of health and mental happiness!

These look INCREDIBLE! I’ve had crepes once or twice before in a restaurant but I’m sure they’re even so much better homemade, like most things

I feel like crepes are something I could never make in my own kitchen..the guy with the giant spatula doing it from a cart outside always makes it look like hard work! But this recipe is super simple – may have to give it a try

Ahh. This recipe is perfection! I had a nutella banana crepe in Paris last summer and I think I died and went to heaven. IT WAS SO GOOD. I’ve actually never made them before, but this recipe looks great, pinning now!
