Skinny Dark Chocolate Strawberry Cheesecake Bars

There are two kinds of people in the world: those who like cheesecake and those who don’t.

If you’re of the latter breed, ya’ll can GET OUT. I’m just kidding. I want to invite you into my home and stuff with you with cheesecake until you come to your senses. All done in love, of course <3.

This recipe excites me. Well, all food kinda excites me (I’ve been known to squeal over a perfectly formed strawberry and get emotional over parmesan). But THIS. This involves a perfect graham cracker crust with plenty of chocolate chunks and mesmerizing swirls of strawberry goodness.

I might have just gotten goosebumps.

These photos mark the end of an era. Or more like the chapter to a new one! That sounds much better. Also, I’m making this sound really dramatic when in reality, I’m just reffering to the fabulously exciting fact (well, for me) that I HAVE A NEW LENS. Well, by the time you guys will read this it’ll officially be in my arms… cradled like a baby 😯 .

I know this doesn’t seem like a big deal, but I am SUPER excited about it. For the last year and a half in which I’ve been food blogging seriously, I’ve shot exclusively with my 50mm. I absolutely adore that lens, but I’m really looking forward to being able to step up my food photography lens with my new Nikon 105mm f/2.8. It’s a macro lens so it’s going to let me show you guys reeeeaaaaal close up photos of food. I’m going to put all sorts of melty cheese and chocolate and other noms right in your face. Like, almost RUDELY in your face. I’m going to be as obnoxious to my readers on my blog as I am in real life when I practically force my friends to try my food. They don’t complain and I hope you don’t either 😉 .

Skinny Dark Chocolate Strawberry Cheesecake Bars-8So cheers to my first posted recipe with my new lens! It has the perfect golden crust, creamy cheesecake middle, sweet strawberry jam swirled on top, and the perfect splattering of chocolate chips on top! Anddd all for only 165 calories a pop… BOOM!

    I’m not gonna lie…I don’t “love” cheesecake. I know, I’m a weirdo!

But, these look incredible and since they have a bigger crust to cheese ratio, I can tell I’d love to give these a try!

Confession: I fall into the latter camp. It’s not that I -hate- cheesecake, but I usually take normal cake over it. These bars, though? I’d definitely be picking one of these babies up… and it’s because the crust to cheese ratio is on POINT. And the fact that there’s chocolate and strawberries involved. Love, love.

WOW. These look ridiculous! I’m honestly not a fan of cheesecake but these could definitely be a game changer :)

Hi! I recently found your blog and I love everything about it! I am also a biology major over here in Florida and love cooking but I’m nowhere near as good as you are haha. Anyways my friend graduated this weekend and I made these for her party and all her family and friends loved them! So thank you! :)
