These past few weeks I’ve been on a big pancake kick.
I tend to cycle through my breakfasts and lately it’s been oatmeal—>eggs—>PANCAKES. There’s just something about a fluffy stack with golden maple syrup dripping down. I mean, just look at that picture above. Isn’t maple syrup a thing of beauty? So shiny 😯 .
The one drawback of pancakes is that they usually require a sit-down meal at a table and 15-20 minutes to make in the morning. While I love a lazy Sunday morning brunch, on the weekdays I’m usually in a rush and don’t have much time to spend hovering over a frying pan. And then it hit me… the answer to all of my (pancake) problems: pancake muffins! I loved the idea of putting pancakes in an easy-to-grab form so I could eat them on the run. While I’ve been enjoying these with maple syrup, they would be awesome with a smidge of peanut butter!
To ensure that I could eat pancakes on a daily basis without feeling weighed-down from all the sugar and hungry 30 minutes later, I pimped these bad boys out with whole wheat flour and only one tablespoon of butter in the entire batch. Hooray! Each pancake muffin comes out to only 70 calories and a bit of fiber and protein to help fuel you through your day. It’s a great alternative to sugar-filled cereal and will make even the most fussy eaters happy!
Um…where have these been all my life?! Portable pancakes in muffin form? Shall we call them Panfins? Or muffcakes?
I love it!
Mmmm these look delicious!! I love the healthy twist you put on these muffins. I always prefer pancakes for breakfast, but don’t have time to make them during the week day. This is a great option for some make-ahead breakfasts!
What a great idea! These look very cute and it would be easy to prep a batch at the weekend for the next few mornings.
These look delicious!
I love the idea of a chocolate chip pancake muffin for those mornings when we need something on the go!! Pinned and gorgeous photos!
You. are. a. genius. !!!! yuuuum!!
Well, well… this does solve everyone’s pancake problems doesn’t it? YAYYYY. The only time I make pancakes is on the weekends (and even then I sometimes don’t feel like hovering over a pan), so these are genius!
These are so sinkin’ cute!! I’ll take any excuse to eat chocolate for breakfast 😉
These are so cute! I’m with you in I love to sit down to breakfast, it’s my quiet time. Sometimes there’s just not enough hours in the day so portable options are phenomenal!!
xoxo
Pancake muffins?!?!?! Yum! What a fabulous idea. I actually thought about taking my kodiak cake mix and making muffins with them, but no time to do it so far. Love, love, love these. When I get my muffin truck, I’m snagging your recipe.
What a great idea! and 72 calories? that’s like the same as ermmm… an apple! (google search). I know what I’d rather have! amazing!!
Loving the idea of a pancake muffin! These look delicious.. craving a bite of one right now!
That drizzle shot though >>>> 😉 these look amazing! I love pancakes so much, always will. Now that summer’s over I can only have them on the weekends!
These are my idea of pancake perfection. I actually never eat pancakes for breakfast just because I’m not in the mood to stand at the oven first thing in the morning, but this? This I can definitely do! Especially because they have chocolate 😀
Pancakes and muffins and syrup , oh my! And under 10o calories! Fabulous!

P.s wonderful ‘pour’ picture!!!!
I love it how these only have 70 calories! Shared on my facebook.
Holy pancakes! Oh I love this. What a great idea and yes you definitely needs more substance than white flour and sugar to start your day! Whole wheat is a wonderful addition. I’ll be trying these because I love pancakes at work when it gets cold but they are often a hassle to make. Thus would be perfect! Thanks for sharing!
Ummm I love this idea & am super impressed with the innovation as usual. And YAY for pimping these bad boys out with healthy little substitutes so they can be enjoyed all the time.
I would so slather some peanut butter on top. Totally love!
Just tried these! They turned out delicious! Will have to make a double batch next time.
Awesome! I’m so glad they turned out well!
You should wine a Nobel Peace Prize for this epic idea. Problem- solved.
Sooo, lets see. I made these saturday, and it is now monday. There are only 2 muffins left. hmmmmmm.
Yummy!!
WOO! That’s always a good sign when they only last a few day ;). So glad you liked them <3!
