And you know I’m alllll about leftovers. Kyle makes a killer breakfast hash out of these the next morning where he adds in eggs, cheese, onions, and some sort of meat (more bacon, please <3). Also, is it just me or does food taste a bajillion times better when someone else makes it for you? Hint hint… cough couch… FEED ME MORE KYLE.

    This is one of my family’s favorite things to cook in the summer! We use zucchini and squash from my mom’s garden with some potatoes. Very simple but so delicious and filling! I like the idea of using leftovers for breakfast so I’ll have to remember that next time :)

      Ohh that sounds SO good! I wish I had access to more fresh veggies, but usually it’s just the grocery store variety for me. Definitely try it! They taste delicioussss with scrambled eggs :)

    I’ve honestly never thought to bake summer squash, but I’m loving the idea of pairing it with some regular old potatoes! And it’s definitely not you — food DOES taste better when it’s made by someone else… which is why I’m constantly trying to mooch leftovers from my family 😉

    Yum, yum, yum! I can’t wait to chop up the zucchini and potatoes I have and make this for a side dish for our fourth of july celebration !
