So. Hmm. I just spent 10 minutes trying to think of an intro. I’ve been typing the same sentence five different ways, then deleting it everytime. I think it might have something to do with just finishing writing a freelance recipe/post, but my brain is farting all over this blog. Cute.
ANYWAYS. It’s Wednesday, which means I have the perfect excuse to take pictures of everything I eat and post them for the whole world to see. Let’s just ignore the fact that I basically do that every day 😉 .
Breakfast:
My sister is back from studying abroad in Ireland for a year and she whipped up a batch of Norwegian waffles for my dad. Luckily, there was one left for me to snag and I enjoyed it with a latte, some homemade strawberry jam, and sour cream. I know the sour cream sounds weird, but don’t judge it till you try it! I 100% prefer the Norsk combo of jam/sour cream to the heavy maple syrup we use in the US of A.
After eating breakfast, Kyle and I went to a local tennis court to play some, well, tennis. I usually try to intimidate him beforehand because that’ll obvi help me win. Today’s shit talking included me repeating 24839 times how I was going to school him and waving my racket menacingly in the air and stomping around like an angry troll. It didn’t work as well as I planned .
Lunch:
Lunch was a weird smorgasbord of yogurt/cottage cheese/granola, baked panko lemon shrimp, and lots of bites from my newest freelance recipe (I’ll link to it when it’s up!).
When dinner rolled around, I was absolutely craving something savory. A girl can only have so much sugar in one day and something healthy sounded right up my alley. Baked chicken, a mountain of steamed veggies, a little rice, and hummus filled up my plate.
And ever since dinner I’ve been alternating watching House on Netflix with catching up with blog and freelance work. Oh! And on the topic of bloggy-related things, I’d love to have your opinion on my post from earlier today.

I am going to rant about waffles for a bit here, if you don’t mind. 1) I LOVE WAFFLES!!!!!!!! I think they are by far one of my favorite breakfast foods ever! (This coming from a girl who literally HATES maple syrup!) I love coming up with all sorts of different crazy combinations for toppings. Fresh fruit and nut butters are always favorites! 2) Waffles just look so pretty, don’t they? Like almost too pretty to eat. alllllmost. Your post made me realize that I have NOT had a waffle in forever! Must change that soon!!!
P.S. I love how you try to intimidate Kyle. Too cute! If you’re anything like me, when I try to be intimidating, I end up making people laugh because it’s so unlike me in normal life 😀

Aaaah, you had me laughing at the stomping troll scenario. – so cute. All the tricks allowed to win, right?! How about going all witchy sirene-like next time and saying you were jinxing his racket next time? <- blame my performing arts teacher for that idea… Don't ask, haha.
It's been ages since I had waffles but like you I prefer the jam/ sour cream or cream over maple syrup [which we actually never had during my childhood]. Another non-sweet Norsk creation you just made me think of are blue cheese and crackers. I've had it at a Finnish friend's house years ago first thinking it was odd and then really enjoying it.

Oooh those waffles looks so heavenly!! I used to put greek yogurt on my waffles or pancakes, but sour cream is a new idea. I bet it does taste pretty good with jam! Stomping around like a troll is pretty intimidating. Kyle’s eyes look very fearful! Haha

I hear ya about totally NEEDING something savoury to balance out the sweet — I’ve ben finding myself in the same boat lately, especially with all the recent recipe testing. I’m thinking that I’m going to have to start whipping up more savoury recipes for Spoons because a girl can only handle subsiding off cake and quick bread for so many days before she starts going a little crazy…
