Let me just start by saying BEST MUFFINS EVER. Glad I got that off my chest, whew.
I’m a chocolate-girl down to my bones. Take me to a bakery and I’ll always pick a chocolate croissant or fudgy brownie over anything else. Fruity flavors have always been the side show. Kinda like the previews before the movie actually starts. You eat them and are like okay… this is tasty, but where’s the real stuff? Bring me the real stuff!
That’s why I’m completely shocked myself that this recipe is perhaps one of my favorites ever. Bold claim, no?
Oh, and funny story about this next picture. It turns out getting the perfect action shot of drizzle is a lot harder than it looks. Initially I had Kyle on spoon duty, but the boy just cannot drizzle for the life of him. The first round of pictures came out looking like a bird had decided to take a huge dump on my fluffy muffins… yeah, not too appetizing. After a few more unsuccessful poo- photos, I handed my DLSR camera to Kyle and took matters into my own hands. It turns out that he can handle a fancy camera on manual settings, but can’t put glaze on a muffin. But you know what? Everyone has flaws and I guess I can maybe still like him. Maybe. After all, isn’t that what love is? Accepting each other regardless of their baked-good topping prowess?
I’m a cheater. A lot of people think that having a food blog translates to me being a food snob, but the exact opposite is true. Feed me all the packaged Kraft mac and cheese and you know what? Turkey and stuffing microwavable dinners might actually be one of my favorite things ever. When recipes tell me to sift in the flour (ain’t nobody got time for that) or let butter comes to room temp over night (nahh, it’s going in the microwave 3 seconds before I use it), I scoff.
While I love Ina Garten, the idea of having to make my own chicken broth by scratch to use for gravy is just a romanticized idea of cooking for me 😯 . That’s why, I’m a cheater. These muffins are the product of a cooking lie. They’re made with *gasp* the help of a baking mix.
But YOU GUYS. They’re SO GOOD!!!!
Big, fat berries in every bite and the most delicious glaze you’ve ever tasted. You can even throw in a handful of nuts for some extra goodness. The glaze tastes like sunshine and is bright and lemon-y and perfect. Along with being my shmookie pookie poo, Kyle is my guinea pig when it comes to my recipes. After these came out of the oven, I asked him if he wanted to try some sunshine. Luckily, the boy doesn’t question me anymore and just opens his mouth. In goes the sunshine and out comes the oohhs and ahhs. His response? “Sunshine is the perfect name for this!”
Also, let’s pretend I didn’t just refer to him as my schmookie pookie poo. Let’s also disregard that I googled “the most disgustingly cute names to call boyfriend” to find it. Go big or go home.
Also! No butter! No oil! Just greek yogurt and eggs to help bind everything together into one amazing batter that is mixed together in just one bowl. My apartment has the smallest kitchen the world has ever seen and dishes add up reeeaal fast in our sink. Things get out of hand and it seems like the minute I start cooking or baking my kitchen turns into a place of chaos and dish-anarchy. One bowl recipes are my saving grace. Especially when one bowl leads to this.
Be still, my heart.

The fact that these having baking mix in them makes me like them even more! I love muffins. They’re my breakfast guilty pleasure. Also, that drizzle look delish!
Kelly @ Kelly Runs for Food says
You are totally speaking my language right now! I am the LAZIEST cook, so mixes are my favorite. I’m usually always on the chocolate train, but these look amazing! Totally pinning them…
Liz @ Carpe Diem and Run says
I am never on the chocolate train – these look perfect! Now if only I had Greek Yogurt now …
Hilary says
My goodness that glaze and those berries! These sound perfect for a brunch event! Totally gave me the idea to throw one, now to talk my parents into haha
Kim @ Hungry Healthy Girl says
I’m such a muffin fan, so I’ve got to try these!!! They look so pretty too!
Kaylin @ Enticing Healthy Eating says
As a self-proclaimed nutrition nerd, I love that these are semi-homemade (easy baking, heck yeah!) and healthier!! Way to go, girl. And I thought your bashing of Kyle’s glazing skills was hilarious. Sounds exactly how it would go in the kitchen with myself and my boyfriend. Ha!
Sky @ The Blonde In Black says
Girl I’m also with you on the chocolate bandwagon, so maybe these muffins will take me over to the dark side of fruity treats. And ain’t nobody got time to sift flour. That’s a ridiculous thing to ask of people. I love Bisquick and used to make pancakes from it! Can’t wait to try these out. Kyle deserves a high five for his camera skills too!
Erin @ The Almond Eater says
Omg lol so funny you said that… I’ve only done a “drizzle” pic once and the same thing happened so Miguel had to take the pic while I held the food hahah loooove it.
cait @pieceofcait says
i am deff one to gear towards chocolate too! A brownie is always where my eye goes too when looking in the bakery window. but these sound fantastic, fruit is second in my heart 😉
Arman @ thebigmansworld says
Yum! Absolutely no shame is using packaged goods- hey the muffins are homemade 😉
Emma @ Life's A Runner says
Yeah, so the drizzle pictures won me over in about o.1 seconds. You definitely know what you’re doing. 😉 I can’t wait to give these a try, they look AMAZING!
Amanda @ .running with spoons. says
If you think having to deal with someone else’s lack of drizzle skills is annoying, try doing it all yourself! I only did it once for a pancake shoot, and I swear all the maple syrup almost ended up on the floor. It was basically one of those “cross my fingers and hope for the best” moments 😆
Nikki @ The Road to Less Cake says
Although I’m a self confessed chocoholic my favourite muffins are actually blueberry ones and these ones look faaaaab! But in a restaurant you know I’m going to demolish the chocolate fudge cake.
You and Kyle remind me of James and myself. He’s totally my recipe guinea pig. As long as there aren’t too many green veggies in the mix (unless I had them – which I’m very good at now!) he’s happy to try out my recipes, one, two, three or however many times it takes to get them right.
Like Kyle, James can’t drizzle for…erm..poo! I’ve asked him to drizzle maple syrup and honey before while I shoot, but nope he does it too fast or his hand is all in the way of my shot, so I’ve handed him the camera, set up in his hands where I want the photo and just said keeping pressing click until I say stop.
Nikki @ The Road to Less Cake says
hide not had! Oops!

The idea of putting yogurt in muffins to make them all moist and healthier is so cool to me! These muffins look delicious. And ‘sunshine glaze’ makes me feel like this is a summery recipe!
Diana @sosmallsostrong says
You know exactly how I feel about this flavor combo!! Sign me up sista!
Melissa @ Nourish By Melissa says
Yum yum yum! Love the “sunshine glaze”! 😀
dina says
they look great!
Leigha @ Minougirl says
Finally someone who doesn’t believe in totally from scratch! The other night I ate a Lean Cuisine and it was dang tasty. And if it doesn’t have a ton of preservatives, what’s the big deal?! Rant over lol. These look so amazingly delish! That is too funny about Kyle not being able to drizzle. When I try to have Mom help me… not good. Not good.
Autumn Wieland says
You were right. These are YUMMY! yumyumyum! and I agree with you too I am usually a total chocolate/pb dessert kinda person, but aw these are so sweet and bright
Christine Skari says
Hooray! Glad you liked them as well. The glaze is what gets me with the recipe <3. So yummy!
And yessss to chocolate on a normal day! It's nice to switch things up once in a while, though!
