I know, I know, this makes two pumpkin recipes in less than 3 days. If I keep it up, I’ll be turning bright orange and secreting pumpkin spice from my skin (I actually think the second symptom sounds a-okay).
But, YOU GUYS, there are some recipes you just can’t not share, like these Skinny Pumpkin Spice Muffins with Walnut Streusel. I mean, I just want to eat the name of the recipe itself.
These are everything you’d want a muffin to be: moist, dense, bursting with flavor, and topped with a tasty streusel and drizzle of sweetness. And guess what? All for under 150 calories a pop!
This may be a bold statement, but I think that these muffins, along with my Pumpkin Spice Apple Butter recipe, are two of my favorite pumpkin recipes of all time. For me, they both embody the comforts of Fall and I know that they will be making another appearance soon!
If my testimony isn’t enough, my friends are always glad to help. I’m lucky that I have plenty of willing taste testers around me, and none of them guessed that these little jewels were made with almost all whole wheat flour and only two tbsps of butter! The only comments I got on them involved “OMG these are so good” and even my non-pumpkin loving friend said that they were delicious!
As a matter of fact, the entire batch was eaten in one day.
Trust me, these look as good as they do in the pictures. Beauties!
Please pin this image if you’re pinning to Pinterst :)!
I’m also linking up to WIAW to share! Take a look at some other great eats:

If you secrete pumpkin spice from your skin…can I bottle it and sell it and make a small fortune please and thank you? 😉 (Although that’d kind of be like me selling your sweat for other people to drink, which is a little gross…ANYWAY.) These look so. Good. And even better that they’re on the lighter side, too! I’m still sad that we don’t have a kitchen (our dorm one is currently under renovation) or else I’d be making these right this second.
I think that is a fabulous idea! It will encourage me to workout more so that we can make bank ;). ANYWAYS… Hahah you always crack me up. Oh oh oh, I forgot to mention, Kyle was talking about the commentors on my blog and mentioned this girl from Mangoes and Miles, and I was like THAT’S BETH. So you’re basically famous. WOOT
I’d do anything to have you as my own personal baker! There has to be some sort of deal we can make? I pay for your ticket to Kuwait – take you shopping – anything you want.. you ask!
lol
I’d love to do that ;). Sounds like a fabulous deal for me haha!
Oh girl, theses pictures are so beautiful! The drizzle of powdered sugar makes them look spectacular! And I am sure that they taste just as amazing – gone in only one day? That’s what I all a proof!
Thanks girlie! I agree- it gives so much to the picture! Trust me, they were fab 😀
These look seriously good!
And now I really want one for breakfast … thanks a bunch 😉
I’d be your friend if it meant being able to taste test lots of goodies! Err… not that I wouldn’t be your friend without ’em, but the added perk is always nice 😉 These look great, girlie… I’m definitely in eat ALL the pumpkin mode, so finding new ways to get it in is always a bonus.
Hahah I base my friends on how well they feed me as well 😉 (jk, but it’s a good strategy LOL!). I agree- all the pumpkin!
Great pictures! Amazing recipe
Streusel and pumpkin just go so well together.
I have a pumpkin muffin streusel recipe at home that is beyond delicious and I bet these are too.
Thanks love! I agree- streusel on anything tastes fantastic (it’s always my favorite part of muffins ;)). Let me know if you ever share your recipe! I’m sure it’s fantastic!
could these be more perfect??? Well minus the whole gluten thing…but I can just sub in GF all purpose flour I think. Yup, these are happening!
Aww thanks Davida :D. Bummer about the gluten problem! I’ve never baked using gluten-free ingredients as substitutes. I’d love it if you wrote a post about it
Girl, you have done it again! Making me drool over your tasty recipes and beautifully photographed food! 😛

Anything with a streusel makes my mouth water. I love crumb cakes and little bits of streusel on the top! Little bits of sugary goodness 😀
Pinned! Loving the looks of these!!
You are killing me!!! These look amazing, but sadly no apple products allowed for me
