When the weather starts getting colder, I turn into a pumpkin addict. I mean, I basically consider the day when Starbucks brings back their pumpkin spice lattes a national holiday and start planning my pumpkin-themed Thanksgiving menu a month in advance.
Quick Note: I’ve started a Facebook page for Apple of My Eye! “Like” the page to get updates on recipes, workouts, and more on your newsfeed! (I’d really appreciate it!)
While I’m really a summer girl at heart, I love and idolize the things that come with Fall. Boots, scarves, layers, you name it, I love it. (Except for actually being cold, I’m a wimp when the weather drops below 60 degrees.) That’s why I think it’s about time to start baking and cooking up a whole army of pumpkin-themed recipes, starting with these ridiculously easy skinny pumpkin spice brownies!
These brownies have a texture that’s in-between a brownie and fudge and are SO moist and dense! You can bet your pretty little face that I’ll be enjoying a few of these babies with my morning coffee for the next couple of days.
And yes, the brownies in the picture are cut to portion size!
They have a yummy pumpkin flavor and I promise they aren’t just itty-bitty bites per serving. You get a sizable brownie!
I don’t know about you, but I love splurging with treats and could easily eat 4 of these and still be much lower in calories and fat than a grocery store brownie. Win! Keep in mind that these brownies have a different taste and texture thanks to the addition to pumpkin and lack of oil and butter- but in they’re own sweet-tooth satisfying way!
Another bonus? They only require one bowl and 6 ingredients, most of which you probably already have on hand.
*New format for pinning images on Pinterest! Nice and vertical :). I’d appreciate it if you pinned it!

“Great recipe!! Thank you for sharing! I’m a pumpkin fanatic and I also added milk chocolate and butterscotch chips to the top because I had them in my cabinet. They made the brownies look even more ‘fall festive’! I’ll definitely make these again!”- Mon “Love these brownies! Made them for my little family yesterday and half of them are gone! Even my hubby who isn’t the biggest pumpkin fan is sneaking these! I love the heavier-fudgy brownie texture. Thank you for the great recipe!”- Andra

These look so good! I love brownies as well as recipes with few ingredients. It’s so annoying when I get really psyched to bake something only to find that I’m missing a few ingredients that I can’t seem to find anywhere. 😛 Anyways, looking forward to fall too, can not wait for cooler weather. 😀

I totally agree! I love easy and simple recipes

I’m so like you; love the fall with scarves, boots and sweaters, but I really don’t like being cold. I just bought pumpkin this weekend….. I’m ready. Great recipe!!

Ooh these look good! I love the smaller ingredient list (I’m lazy). Fall is my favorite season for sure!
Christine Skari says
Hahah I love one-bowl recipes. Cleaning up after having to put together so many ingredients is the worst! Hooray for Fall!
Amanda @ .running with spoons. says
I am SO excited for all things fall. I’m trying to hold out until September before I break out the pumpkin, but this weekend? Hoooo you better believe there’ll be some serious pumpkin action happening in the kitchen! And speaking of pumpkin, I’m loving the sound of these brownies. I was always curious about adding pumpkin puree to storebought brownie mix, so it’s nice to see the result come out so well 😀
FitBritt@MyOwnBalance says
Oh I love this post!! Thank you so much!! Although, I might have to wait awhile before I make these! It’s still too hot!
Kim @ BusyBod says

Oh my gosh…these brownies sound amazing! I love anything pumpkin and of course, I love anything chocolate, so these brownies are a match made in heaven!
Lauren says
YES to national pumpkin time as soon as the PSL comes back to town! I cannot wait to dream up all things orange and delicious! Seriously, this time of the year is my FAVORITE. And these brownies look amazing especially if I would use the Ghirardelli mix! Mmm.
Jessica says
I’m all about pumpkin right now as well! I was just telling my friend that as soon as I go back to school it is fall in my mind! These brownies sound amazing and just the cure for my fall fever (white chocolate into the mix – genius)
P.S. I hear pumpkin spice lattes are coming back the sixth (!) – and APPARENTLY you can get them earlier by using the “code word” PSL when you order them…But I am too afraid to try to verify the claims haha.
Christine Skari says
Glad someone’s on board the pumpkin train with me hahah!
WHAT! No way! I know what you mean when you say you’re too chicken to try it hahah ;). I’ll let you know if I try it!!
Ksenija @ Health Ninja says
Now I know what I need to get on my next grocery trip: a huge pumpkin to make puree out of it (you don’t get them in cans in Germany, buuuuh!). Thank you so much for this amazing recipe – I might substitute the chocolate chips with walnuts though, since I totally adore the combination of fudgy and crunchy.
Brittany @ Dulce Vie says
Um.. YUM!!! I can’t wait to try these I love subbing pumpkin in for oils
Jamie @ Sometimes Healthy Living Blog says
I LOVE that you are kickstarting the fall. I am actually more of a fall girl myself. Just love those cool, crisp temperatures and the changing leaves.
But, another reason I too love fall is pumpkin. I have a similar recipe but I think the addition of those white chocolate chips and the spice would really kick these up a notch. Love it!
PS – what app do you use for your recipe cards??
Christine Skari says
The white chocolate chips add a really nice extra bit of sweetness! I think adding some nuts on top would be excellent too :D.
Are you self-hosted? If you are, they’re plugins that you can download! The older one that I used to use is called “Recipe Card”, but I just recently switched to another one called EasyRecipe, which lets a picture of my food come up next to my website when someone googles me!

I’m going grocery shopping tomorrow. Guess who’s buying all of these ingredients? This person. Guess who’s going to make them? This person. I’ve never had a pumpkin brownie before, but pumpkin + excessive chocolate = always a good thing, right?
Liz @ The Girl on Fire Now says
Wow that was mean. Now my snack of fruit snacks does nothing for my sweet tooth … 😉
Sky @ The Blonde In Black says
Omg these look amazing!! The texture is really appealing too. Today the desire for pumpkin flavors hit me and now I’m ready your pumpkin brownies post! I’m adding these to my to-make list
Ashlee@HisnHers says
Oh YUM! I’ve had pumpkin+cake mix = cookies, but these take that to a whole new level! Good idea girl
Denise Browning@From Brazil To You says

These look so good!! What’s not to love about pumpkin AND brownies?! Yummy!!
Jess says
Do you recommend that these be refrigerated after making?
Christine Skari says
They can be if you don’t eat them within a few days
Sara says
How did you calculate 125 calories when the brownie mix itself is 170 calories for 1/20th? Every calculation I get with your recipe is about 200 calories for 1/20th.
Christine Skari says
Hi there! The mix I used was “Betty Crocker Fudge Brownies”. I think you may be calculating the recipe when it’s made according to the instructions on the box, which has you adding tons of oil to the recipe.
Here’s the nutritional stats of my brownie mix, which I found in the baking section of my grocery store:
http://www.quitehealthy.com/nutrition-facts/food-labels/labelL354031.gif
For my recipe, you don’t add oil, so the only additional calories come from the egg and the canned pumpkin.
Natalie says
What is the size of the can of pumpkin that you use?
Thanks
Christine Skari says
Hi there! I use the 15 oz cans I believe. The normal sized ones- not giant!
Mon says
Great recipe!! Thank you for sharing! I’m a pumpkin fanatic and I also added milk chocolate and butterscotch chips to the top because I had them in my cabinet. They made the brownies look even more ‘fall festive’! I’ll definitely make these again!

Ohh that sounds fantastic! Love it!! 😀

Love these brownies! Made them for my little family yesterday and half of them are gone! Even my hubby who isn’t the biggest pumpkin fan is sneaking these! I love the heavier-fudgy brownie texture. Thank you for the great recipe!
Christine Skari says
So glad you liked them! I agree- the fudgy texture is to die for and makes the brownies seem so much more indulgent :). Thank you for commenting- it made my day :)!
Kari says
I just made these, oh my gosh they are yummy!! I used ghirardelli dark choc brownie mix and it baked much longer than 18 mins and I’m thinking it’s more calories, but so worth it!! I will be making these again for sure!!
Christine Skari says
That sounds excellent!! The calories depend on the type of box mix you use, but I’m sure it turned out relatively close to the nutrition I calculated :). Thanks so much for commenting- this made my day!
Rachel says
I made these yesterday, and had to cook them longer because the batter was not done at all. The texture is really strange, I’m not sure that I will make these again. The taste is great, but can’t get past the weird texture
Heather says
I made these last night….. They were supposed to be a follow up to homemade chicken and dumplings, but the dumpling recipe I used was awful and everything ended up burning and being ruined. So I wasn’t feeling really confident with new recipes, even ones with so few ingredients…. but I was beyond pleasantly surprised at how these brownies turned out! I followed your recipe verbatim, and they were fudgy, rich, and had an awesome flavor. I came out to 136 calories per brownie (different mix… I used Duncan Hines), but come on…. 136 calories for something so delicious? Heck yeah!!!! Your brownies saved my cooking night, lol… Now, if you could just post a fool-proof dumpling recipe, I’d be good to go! 😉
Christine Skari says
Aww I’m so sorry your dumpling recipe didn’t go as planned! I’m ecstatic that these worked out for you! I agree- HECK YEAH! Guilt-free brownies are the best! This comment made my day, thanks so much for stopping by and taking the time to leave it!
I’ll work on that haha ;)!
Leandra says
