Living in California, I’ve had my fair share of delicious and fresh produce. In fact, California produces 83% of all the strawberries grown in the U.S (state pride, holla). So really, it was just a matter of time until I combined two of my favorite things for a quick and mouthwatering dessert. Enter: cheesecake stuffed strawberry bites!
Not only were these sweet little jewels delicious, they were outrageously easy and relatively good for you! While I do love me some decadent cheesecake once in a while, they always leave me feeling heavy and ready to take a nap. Before snapping these pictures, I probably annihilated about 10 of these healthy strawberry bites (to make sure they were perfect for you guys, of course, only the best) and felt fabulous and ready to seize the day!
These take a mere 15 minutes to whip up and, with only 35 calories per each delightful piece, you can feel free to compensate and eat 267 of them! Hallelujah! I love food!
Oh my goodness, girl, what a cute and delicious looking dessert! I don’t think i’ve ever seen anything quite like them before! I’ll have to make these for joe….strawberry cheesecake is one of his favs 😉
I will definitely be making these at some point. Omigosh I love cheesecake and I love strawberries – I could even make little cookie dough bits and make strawberry cookie dough cheesecake! 😀
Strawberries and cheesecake is the best combo!
I am not a cheesecake fan but these look REALLY good. I am pretty sure I would like them since the fruit to cheesecake ratio is about the same! These would be really cute for a dessert when guests come over!
Oh my goodness, I need to make these STAT!
yum yum yum!
Okay these look absolutely gorgeous! Like, aside from the fact that they sound AMAZING, they just look so lovely! What a fun recipe!!
Oh man! AMAZING! And so easy!
Gorgeous simple recipe! Yum!
You know how I told you I didn’t want to make you go down to LA while I was there for the Long Beach half?…I’ve changed my mind. Go down to LA/Long Beach and bring me LOTS of all of your food.
Kthxbye.
PS. I’m kidding. Sort of. But not really.
This is the most adorable idea I have ever seen! Come bring me some!?! And what truly gorgeous pictures. Seriously, I kind of want to eat my screen (actually, I DO want to eat my screen, but something tells me that I would end up being kind of disappointed 😉 ).
your photography is great, Christine! If it was strawberry season here, I would without a doubt give it a go, but at $7 a pint…. damn weather!
Though I might consider cheesecake my least favourite but these seem right up my alley. Too bad strawberry season is over around here. Send me some of those wonderful Californian ones so I can have Cheesecake bites in my life?
How devotional and selfless of you to make yourself eat a lot of these to ensure they’d be good enough for us ;). That’s what I’m calling dedication.
[And I haven’t forgotten about your mail but will reply soon!]
OMG these look like heaven. You are killing me with these dessert recipes! At least they are relatively healthy
This is such a great idea, Christine. They look so cute and yummy. I don’t blame you for munching a few before photographing them.
Is it okay to make these the day before you need them? I want to save time the day of my party but more importantly want to impress my guests with fresh, delicious, darling strawberry cheesecake bites!
I think these would taste better made the day of! You can try making the filling ahead of time, though, and refrigerating it until you stuff the berries :).
