Healthy Cinnamon Roll Scones

There is probably nothing in life that I enjoy more than a warm baked good and coffee. I love the serenity and calmness that come with a sweet treat and a cup of Jo in the early hours of the morning when the world seems to still be asleep. I adore coffee shops and the small conversations that occur between strangers waiting in line, the friendly workers who always greet you with a cheery smile and kind remark, and even when they misspell my name on the coffee cup (is Christine really that hard?).  That being said, I definitely am not a fan of the nutrition on many of the items they have in that oh-so-tempting glass window. Which is why I set out to create a healthified recipe that combined two of my favorites: cinnamon rolls and scones! And seeing that these sizable bad boys have only 170 calories and 5 grams of protein, I can easily justify having one (or two!) every morning. DSC_1141

Trust me, you guys, this recipe is a total keeper. Being a healthy living blogger, I’ve had my fair share of womp womp womp recipes. Ones that I’ve tried to make as healthy as friggin’ possible by combining only low calorie and nonfat ingredients. And what do you know, you can’t mix things like kale and stevia and expect a magically delicious dessert to appear. I feel like when you do that, it beats the whole purpose of cooking something that you actually want to eat and would enjoy. If I wanted to eat kale and stevia, I would eat kale and stevia. If I want to eat a scone that doesn’t taste like poo, I shouldn’t put ingredients in that will disappoint me in the end. This recipe is all about balance and is relatively healthy (for a treat) and doesn’t lack in the flavor department!

DSC_1135Other than that, I have a few random musings to talk about.

  • I just recently got hired to blog about my college experiences! Not on Apple of My Eye directly, but I will be blogging about various topics such as healthy living while in school, time management tips, relationships, and really anything that I’d like to talk about! Getting paid to do something that I absolutely love? Sign me up!
  • A while ago, I discovered the underlying reason on why I have a major celeb crush on Zac Efron.

Plot twist: Kyle is actually a famous movie star who uses is downtime to lead a double life.

  • KYLE IS ZAC EFRONSpeaking of Kyle, I hope he knows that I’ve planned out our entire life together on Pinterest. Including, but not limited to, the breed of our first dog, our future kitchen decor, Christmas card poses, and how I will dress my kids. I promise I’m not crazy.
  • I have to decide if I want to add a French course to my first quarter schedule. I love languages and plan on minoring in French, but going down a medical route leaves me with a pretty hefty course load (almost the maximum number of units a student is allowed to take). While I know I would do well in the class and it would help my gpa, I have a tendency to overwork myself and drive myself to the ground. Since I’m required to take physics, biology, organic chemistry, and 3 labs (each ranging from 2-4 hours), I would really like to have a non-science related class, but am worried that it might result in me sacrificing time that I could spend concentrating on my other classes. Thoughts?

Anyways, that’s all I got for now! Question of the day: What is your favorite baked good? xoxo Christine

Okay first of all yum! I’m all About healthy foods but not if it contains weird ingredients nobody has heard of. These are great! Cinnamon rolls are my favorite and I can’t remember the last time I had one but I may have to tell my mom to make them when I get home. Secondly getting paid to blog? Whatttttt! Are you some kind of celeb now? How does that even happen? And lastly, my opinion as a chem major would be to be careful with overdoing it. I took of go physics and labs and my classmates took bio too and it’s intense. My school requires labs for languages so you’d be taking 4 intense classes which is rough. You want to make sure you’ll enjoy school! I’d personably take an easy class that I could ace without a pulse, but that’s just me. Good luck!

Right?! I like knowing what’s in my food! Hahah I’m about as famous as a rock ;). The stars just aligned and things worked out for me in regards to getting the job!

Thank you SO much for the advice! I think I’m leaning towards not taking it since my schedule is already packed :). I just need some rational people to help push me in the right direction haha!

Congrats on the new job! I have no doubt that you’ll do such a great job with it if its anything like this blog! I look forward to hearing how it all goes! And I will without a doubt be attempting this recipe, I am obsessed with cinnamon rolls, I (embarrassingly) forked out nearly $10 for a box of cinnamon toast crunch the other week from the USA food store here! Regarding the French class, I think you should assess how you are currently handling all your classes. When I took French, I had to devote alot of time to memorising verbs, pronunciation, talking etc and it added up, but then again time management was one of my faults.. opps.

Thanks, Arman! Hahah a foodie has to do what a foodie has to do! I hope you enjoyed the cinnamon toast crunch to its full extent ;). That stuff is like crack!

Thanks for the advice! French conjugations=death

  3. says

Oh my gosh! The first time I saw a photo of Kyle I totally thought he looked like Zac Effron but I didn’t say anything cause I didn’t want you to think I was weird or crazy! But now that you’ve said it . . .!!

I can’t believe you’ve been hired to blog about healthy living! What an amazing accomplishment! That is so awesome. Congrats!

  4. says

Oh boy, can I ever relate to coming up with some of the worst healthified recipes… It’s like, sure, they’re healthy enough so that you could eat 5 cookies without feeling guilty but… you wouldn’t even really -want- to eat 5 cookies because they don’t taste that great 😕 These scones on the other hand? Omigosh delicious. And congrats on the amazing blogging opportunity, girlie! Sounds like it would be such a great experience 😀

  5. says

Your boyfriend does have an uncanny resemblance to Mr. Efron 😉 You have good taste haha!
Okay I am going to Pin these scones asap because I love that you a) use REAL ingredients that aren’t impossible to find and b) they sound epic haha

  6. says

Oh I love planning my life on Pinterest :) I also love the sound of these scones! I love scones but they usually are over 500 cal and nothing but butter and sugar. These sound tasty and healthier than typical coffee shop ones. They look moist too, I think buttermilk makes things really soft and flavorful.

  7. says

I’ve had my fair share of recipe flops because I tried to make them as healthy as possible. Then, I would slather them in peanut butter to try and hide any remnants of the not-so-good taste. I realized I might as well just add good quality ingredients. And you are very lucky to have a Zac Efron look-a-like boyfriend lol!

  8. says

Your photo of your scone is gorgeous!! It looks delicious. I’ll be adding that to my “need to try” list. And congrats on getting paid to blog about being healthy in college! So cool! I know you really want to take a non-science class but it sounds like you’ll be very busy. I tend to overwork myself too and this next semester I’ll only be taking 15 credits compared to my normal 18 which weirds out. Anyways with your new blogging gig and just life I think it would be wise to wait on that other class. :)

    • says

Thanks! It got accepted to Foodgawker and Taste Spotting, so I feel like a proud mama right now hahah ;). Thanks so much for the advice! You’re right, I need to work on NOT overworking myself haha :)

  9. says

Okay, I seriously need one of those scones NOW!! Next time I get the baking itch, which is pretty much all the time, I know what I’m making! What an absolutely gorgeous picture as well. I kind of want to eat my screen.
As far as the French class, I definitely know what you mean about wanting a little break from science classes. But I also see the other side about not wanting to overwhelm yourself, especially since you already have three labs. I might wait until you have a slightly easier semester. But that’s just me! At least if you did it now, you would get it out of the way, so I can see a positive side both ways!

    • says

Hahah thanks, Alex! I’m glad that my photography is coming along :). I totally agree with you, I think I’m going to wait till my second quarter before attempting to take the class! Thanks for the advice girl :)

  10. says

    Scone. Want. Now.

I’m usually really cautious about saying “OMG I’M GOING TO MAKE THESE!” on recipes because let’s be real, 99% of the time, I don’t actually end up making them. But I’m definitely putting these on my list of things to make because they look and sound absolutely magical. I can almost taste them through my computer screen.

And also, random interrogation time–what year in school are you in? And when you say “medical,” do you mean pre-med as in, doctor? Just out of total curiosity. :)

As for your class dilemma, my advice is that if you think science day in and day out sucks and you’ll get bored and tired of it–take the French class. If you’re okay with science day in and day out, physics, bio, and orgo will be MORE than enough. Being pre-health (note I didn’t say pre-med…tee hee hee. Deets on the blog on Tuesday.) and a chem major, I’ve had my fair share of harsh semesters, which is how I ended up picking up psych as a double major–it’s a welcome break from all the science classes!

And now I will gracefully end the longest comment ever.

Hahah I’m definitely guilty about saying that I’ll make everything anyone has ever posted in existence. They are quite magical ;).

I’m on my second year of college, so sophomore! I like to think I have a mature soul, though. Obvi. I’m planning on becoming a Veterinarian (just so I can have Dr. in front of my name, of course), so my undergraduate classes are the same as anyone applying to med school!

WHAT?! Pre-health? That sounds so exciting! Are you thinking of becoming a registered dietician? I guess I’ll find out soon enough :D. I completely see your point. I’m just worried that I won’t have any time to have a social life or devote to my science classes. Also, you’re crazy for being a chem major! Chem=death. Can’t wait for orgo to kill all my hopes and dreams!

  11. says

Oh my…. those scones look delicious! I think I’ve only made scones once….. maybe I need to use your recipe and do some scone experimentation! 😉 That is way too crazy how much Kyle looks like Zac Efron!

  12. says

Um oh my gosh YUM! I’m totally with you on how you can’t do all super healthy ingredients. These look SO GOOD. Like seriously. And hey, congrats on the blog job!!

  13. Angela says

OMG he ACTUALLY looks like Zac Effron LOL.

Okay in terms of your course load, I would highly recommend not taking French .. I know that at the beginning of the year, we get all super excited to take some courses that we’re actually interested in in addition to the “required” courses! I too enrolled in all the sciences and I typically added an additional course about a subject I enjoyed learning about (e.g. sociology, english etc.) But I have to admit that I most of the time I regret it in the middle of the year! In my opinion you’ll be so busy trying to get a high GPA that you’ll lose enjoyment in the course and make you super stressed! If you love languages, there’s plenty of time to pursue French after you get settled into the medical route, but if you decide to take French right now and add an additional commitment in your schedule you might risk being so busy that it will have a negative impact on your GPA (which might risk your chances of going down the medical route which I presume is your major priority?) So basically from my experience it’s best to think of “GPA now, enjoyment later” .. I know this may not be the best approach for everyone but in my opinion I’d rather work specifically at taking care of my future first!

    • says

      DOESN’T HE?!

Thank you SO much for your wonderful advice! I’m planning on not taking the course so I don’t overwhelm myself- you’re right, there’s plenty of time to continue my studies with French!

      Love you girlie!

  14. says

Mmmm, I love how comforting cinnamon is, too. I’m adding these to my “must-bake” list for fall – we’re having Thanksgiving in the Rockies & I’m sure these will be a hit with everyone! :)

  15. says

Congratulations on the blog job!! The scones look delicious! Please send some to me and I will be your friend FOREVER! haha :-)

  16. says

Can you believe I’ve never had a scone before? I know I know, what’s wrong with me?!! I think I may just have to make these bad boys though. They look delicious!!!!

  17. says

I couldn’t agree more about the wonderful feelings that are associated with a nice cup of coffee and a freshly baked morning treat! I rarely allow this sort of pairing, but I think I could be okay with that recipe (though I know, for a fact, mine wouldn’t turn out as beautifully as yours haha!!).
CONGRATULATIONS on that blogging opportunity!! That’s a big deal – very awesome!! You’ll have to share how that goes!
Kyle is a cutie for sure, much cuter than Efron! :)

  18. says

Oh my deliciousness! That looks/sounds fantastic :)

Course load question- Not that I have much experience, but having too few classes is almost always better in my opinion. That way you can get the best grades possible. I know some people try to cram a lot of credits into less than four years but that doesn’t work for everyone and it’s better to just play it safe.

  19. says

Wow, I thought I already commented on this…I’m sooo on top of it…Anyways, I thought too about taking an extra “fun” class, but then decided, with that many units, how “fun” could it actually be? I’m sure you’ll make the best decision for you though!
    And those scones…droooool.

  20. says

So weird, I posted a comment and I don’t think it ended up getting posted!

I wanted to say that those scones look unbelievably good and I think I’ll need to make those the next time I whip up a batch of scones. I love cinnamon in anything baked because it’s yummy and makes the house smell amazing. This is one of the reasons I’m generous in seasoning my homemade granola.

Also – it’s insane how much Kyle looks like Zac Efron.

  21. says

Haha, how funny that Kyle actually looks like your celeb-crush 😉 too cute.

I just baked your scones and they turned out amazing!!! So addictive, though 😀 I have to share them with friends or family or they will all end up in my tummy in no time!

  22. Mumshadenough says

I have a batch of these baking right now. They smell delicious and I can’t wait to eat one. I love that they are lower fat and include fibre in the whole wheat flour. Will report back once they are polished off. Xx

      • Mumshadenough says

To be honest at first I thought they were a little dry straight out of the oven (I couldn’t wait for them to cool down). Then I drizzled over the icing and popped them in an airtight container to have with a coffee the next morning. Well all I can say is I should have waited to start with…….they were absolutely delicious!!!!!
I shall definitely be making them again!! Thank you for posting this!

  23. Rinn says

This morning I couldn’t decide whether I wanted cinnamon rolls or scones – Therefore, I am baking this recipe right now (albeit, with many alterations)!!
I have a question for you though: What makes this a “healthy” scone? White flour, white sugar, buttermilk, even whole wheat flour isn’t what I would call “healthy” by any means. I don’t think scones by definition can ever really be healthy, perhaps just made “healthier” than the typical scone recipe.
